This aspiring little chef has always wanted to cook a meal for us on her own. While she is adept at tasks like chopping garlic, mincing meat and stir frying, she has yet to fulfill that wish.
Thanks to this DIY pasta kit from which consists of @pastamaniasingapore newly launched Ready-To-Eat Beef Meatballs, she finally whipped up a yummy lunch for us, woohoo!
It was good for a start and we love how delicious, fuss-free and easy this was to prepare. Hopefully this gives her the confidence she needs to keep going and be more adventurous in the kitchen as she grows up. Thank you for the effort, dear Ariel!

【LA life day 12: The Tonkotsu Ramen that connects the past, present and future】

Tonkotsu Ramen always reminds me of middle school– there’s a nice little ramen place near my school and I went there after the summer classes with my classmates almost every day. The Tonkotsu Ramen there was so creamy, rich, and flavorful– it was definitely the highlight in the dull middle school years.

I have never had Tonkotsu Ramen after I turned vegan. The essence of the Tonkotsu Ramen lies in the broth– bones are cooked at a rolling boil for a long period of time until the collagen dissolves into gelatin that adds richness to the broth. My landlord's happy face when describing the taste of her Tonkotsu Ramen inspired me to search for vegan Tonkotsu Ramen recipes– and I had a fruitful discovery! I found that kombu and shitake mushroom boiled in vegetable stock makes perfect soup base– it adds umami and extra depth to the broth. To create the richness and creaminess, we use oat milk and mix it with sesame paste– this creates a subtle sweetness and savoring nuttiness to the soup!

On a chill Saturday afternoon, I invited my friend to try out this Tonkotsu Ramen recipe with me. We weren't able to get kombu and shitake mushrooms in the grocery stores here in LA, but we found a secret ingredient that works wonders– the fermented bean paste. The fermentation process adds depth to the umami and blends harmoniously with the oat milk, creating a savoring sensation when you sip the noodles.

We drizzled hot chili oil on top of the ramen for seasoning. The moment the chili oil diffuses into the soup, suddenly I was back in the little ramen place again– it is strange how your sense of smell roots deep inside your memory lane once you allow your mind to return into the grooves which lead back.

School starts tomorrow and I can literally feel the butterflies in my stomach, yet it's exciting to be able to talk to my professors and classmates face to face after COVID has distanced us for so long. Walking around the campus, the back to school vibe energizes me and I think I am ready for a brand new start!

Quick one today! One of my favourite film stocks is actually Kodak Gold. It might not be the fanciest or the most hype but its the film stock I shoot with the most. It's affordable and gives me a look that I enjoy.
I've always wondered the results of pushing this film. Part of me really wanted this to be a hack where I can get an 800 speed film for cheap and.. I was wrong. Results were pretty horrible :(. Should have shot this on a brighter day. This is one of a few videos I plan to do to see how far I can make the most of my favourite film stock!

After getting its Michelin star back in January, The Chairman claimed the top spot for Asia’s 50 Best Restaurants 2021 – a first for a Hong Kong restaurant – just two months later. Tucked away in a small side road at the back of the bustling Central district, the modern classic Cantonese eatery is owned by Danny Yip, a low-key veteran restaurateur who has managed to stay out of the limelight until recent years. “Food is always our centre of attention. Because whenever we struggle to take care of everything else, we always consider: how much time can we actually spend in the kitchen during the year? We want to put all our energy on our food, especially during the first few years,” Yip says.
Little Meg, a top food influencer with over 159,000 followers on Instagram and one of the Tokyo guides featured in Netflix’s foodie docuseries “Ugly Delicious”, is one of the most frequent regulars of The Chairman. She has dined at the small restaurant at least 37 times within nine months since June last year. “Chinese cuisine used to lack certain finesse, but The Chairman has successfully filled the gaps over the past decade. For instance, Chinese dishes were often cooked with stock or a lot of sauces, but The Chairman decided not to go down the same route. They establish their own flavors with their own techniques,” Little Meg says.

We also have Eurasians as well as other non-Singapore citizens in Singapore. Given our racial proportion, one would have imagined that our coffeeshops or foodcourts only have Chinese, Malay or Indian food but no matter what, there will always be one stall selling what we term affectionately as Western food. In case you're wondering how a Western food stall looks like in Singapore, just google it and there are plenty of images out there. Interestingly, the Western food we get at coffeeshops or foodcourts are usually marinated in Chinese style. :)) We grow up eating this type of Western food and we love it! My favourite order at a Western food stall is always chicken chop. Roland's favourite is mixed grill because he likes variety. What's yours?
