(Makes ~30 oz head cheese)
2 pork ears
1 pork tongue
30g woodear mushrooms
1½ tbsp chopped garlic
1½ tbsp chopped shallot
½ tbsp whole black peppercorn
½ tsp freshly ground black pepper
Fish sauce to taste
Salt
Oil
5 green onions, white part
2 slices of fresh ginger
Baking soda (about 1 tbsp)
White distilled vinegar (about 1 tbsp)
