This is an introduction to Eclair, which is a stylish looking product made by squeezing plenty of bitter chocolate cream onto chocolate puff pastry. How about a snack today? Eclair has a difficult image, but if you get the hang of it, you can make it at home. I put pistachio dice this time, but it's also delicious if you put fruit between it if you like. Please try making this opportunity.

10 pieces
----- Eclair fabric -----
Salted butter 50g
Water 100ml
Soft flour 50g
Cocoa powder 10g
Beaten egg (M size) for 2 pieces

----- Chocolate cream -----
Fresh cream 200ml
Bitter chocolate 100g
Iced water suitable amount

----- Toppings -----
Coated chocolate 100g
Hot water (for hot water), appropriate amount

【procedure】
1. Put salted butter and water in a pan and bring to a boil over medium heat. When salted butter melts, remove from the heat.

2. Sift soft flour and cocoa powder and mix quickly with a wooden spatula.

3. Heat over medium heat again, mix thoroughly for 1 minute 30 seconds to 2 minutes so that the dough does not burn, and when the dough becomes a lump and a thin film forms on the bottom of the pan, remove from heat and place in a bowl. I will move it.

4. Add beaten egg little by little and mix each time. Adjust the amount of beaten egg while observing the dough until it becomes firm enough to slowly drop when you lift the wooden plate.

5. Put it in a squeezing bag containing a round mouthpiece, and squeeze it out to a length of about 12 cm while leaving a space on the top plate lined with cooking sheets.

6. Sprinkle water on the back of the fork to shape it and bake in an oven at 200 ° C for 8 minutes. Without opening the door, lower the oven temperature to 180 ℃ and bake for 15 minutes. When it's cooked firmly, take the heat of coarse heat.

7. Put fresh cream in a small pan, heat over medium heat until just before boiling, put in a heat-resistant bowl with bitter chocolate, mix, and melt the chocolate well.

8. Whisk the ice water for 8 minutes with a whisk and put in a squeeze bag with a star base.

9. Make chocolate for coating. Put the coated chocolate in a heat-resistant bowl and melt it with hot water.

10. Make a notch on the top of 6, apply 9, apply diaspistatio, and squeeze 8 when the chocolate for coating dries to complete.

[Cooking Tips]
Add soft flour, knead well, and continue mixing thoroughly for about 1 minute 30 seconds. It's done when the film begins to form on the bottom of the pan.

Be sure to preheat the oven before baking.
If the oven does not have a preheating function, set the temperature, heat for 10 minutes, and then start baking.
There may be an error in the heating power depending on the model of the oven you are using and the years of use. Be sure to adjust the baking time as a guide.
This time I am using a heat resistant rubber bellows. Depending on the rubber spatula used, it may melt, so please use a heat resistant one.

Winter Is Coming. The weather is getting colder and colder. What is it about a hot drink in the winter can make you smile? Well, the answer is obviously, a cup of steaming hot chocolate is the best warm winter drink. It truly warms you up on a cold day.

French hot chocolate is rich, creamy, smooth as velvet, it’s for true chocolate lovers. It’s not made by cocoa powder and hot water or milk. French hot chocolate is made by unsweetened chocolate and heavy cream or whole milk. It tastes luxurious and smooth, just image you’re drinking a cup of molten hot chocolate. In this video, we are going to share to you our homemade Parisian style hot chocolate recipe, but you’ll find some creative ideas to enjoy it. Hope you like it. :)

French Hot Chocolate Recipe

✎ Ingredients
whole milk 300ml
sugar 10g
70% bittersweet chocolate 70g
few drops of vanilla extract
cinnamon 1
cocoa powder 5g
a small amount of salt
mashmellow 2~3

✎ Instructions
1. Chop the 70g chocolate finely or as chunky as you desire. Set aside.
2. Use a knife or vegetable peeler to shave the rest of chocolate to flat, thin shavings.
3. Preheat the oven to 230°C, and bake marshmallows for 3 minutes until the top are slightly golden brown.
4. Add the cinnamon, few drops of vanilla extract and milk In a small saucepan over low heat until you can smell the flavor of cinnamon. It takes about 8 minutes.
5. Remove the cinnamon, add the cocoa powder, sugar and just a little bit of salt, stir constantly until all are dissolved.
6. Add chopped chocolate and until melted completely. Keep cooking for minutes until it’s thick as you like.
7. Pour into a cup and enjoy.

When it comes to having a style, I’d say my style is “Athleisure” as I’m in activewear most of the time. Haha! You will almost always find me in my black tights whether I'm at the gym or not. So Soo Hua is going to help me create 6 different looks that go well with black tights but lets me still feel comfortable.

LOOK 1: Office & Work Meetings
This first look is suitable for the office and even meetings. The design of this white top is structured and fitting to my body. It is not too body hugging or too loose. And the black and white combination portrays a professional image. Pair it with simple black heels and a structured handbag to complete this smart & sophisticated look.

LOOK 2: Lunch / Coffee Appointment with Work Associates
This look is great for lunch or coffee appointments with work associates. It’s not something I’d normally wear as I don't usually go for loose fitting attire. Soo Hua however convinced me that wearing loose fitting clothes can create a more relaxed vibe and atmosphere when meeting with people and building work relationships.

I love the red heels, which add more excitement to my overall look. This certainly does fit with my lively outlook without being too serious. And a simple clutch compliments this casual and relaxed look.

LOOK 3: Brunch / Hi-Tea with Friends
The third outfit is something I’d put on over the weekend to meet with friends over brunch or hi-tea. This simple blue striped top with its minimal detail suits my casual style. Soo Hua has me pairing it with slippers for a more laid back vibe. I’m accessorizing it with the same clutch from the previous look.

LOOK 4: Casual Office Attire
Somedays I want to just lay low, especially when I have lots going on, having to run about or when I have to work long hours in the office. This simple pairing of a loose fitting black long top against the black tights and black heels are really comfortable and just right. For a slightly more sophisticated look, we’re going with my brown leather bag.

LOOK 5: Dinner / Night Outings
If I have a dinner appointment, all I have to do is change the heels and handbag and voila, I’m ready for a good night out! I love the choice of the red heels as it lifts my mood and a nice simple clutch is all I need to keep my necessities.

LOOK 6: Party
I’ve always loved cropped tops, so for my upcoming birthday party, Soo Hua has chosen this lovely piece. The cut is fun and fits my personality making me feel great and confident.

The ruffles and drop shoulders gives emphasis on my neckline, which is one of my favourite parts of my body. Plus this material is so easy to manage. I complete the look with these heels, simple cause it’s my special day and the red heels are a killer.
