The Gelinaz grand shuffle happens once a year, where chefs swap kitchens for one day only. This year was a little different due to the pandemic, and chefs swapped recipes instead. In Hong Kong, seven chefs teamed up to recreate eight recipes from a restaurant that was kept anonymous so that chefs could reinterpret the recipes to their own liking and guests would have fun guessing. 🧐
At the end of the evening, it was revealed that the recipes belong to a chef in Ghana named Selassie Atadika of Midunu, a nomadic dining concept featuring what Selassie calls New African Cuisine.
To bring this meal to life, the chefs involved worked with the @africacenterhk as cultural and culinary advisors.

👉 West African Spice — The Blázquez pork in this dish featured a West African spice blend consisting of prekese, grains of paradise, Selim pepper, cubeb, and African nutmeg aged for 60 days, and served with udon and collard greens.
👉 Goat Cheese Cassava Katsu with osmanthus infused honey — This dish touches on ingredients from the Sahelian regions of West Africa such as Fulani cheese, cassava, and the drought-tolerant wild hibiscus.
👉 Pineapple — At Midunu, this pineapple dessert was served warm, and cut tableside. It was made with ginger, star anise, and orange. Here we have a deconstructed version.
👉 Hong Kong Made Chocolate — Last but not least, Chef Ricardo highlighted hibiscus and chocolate, using his locally made chocolate and pairing it with hibiscus sorbet and smoked chipotle chili.

Growing up, I didn't have any dolls but I remember playing with Hot Wheels and I loved putting my cars in the fridge to see how they would change colour. So it wasn't a surprise to see how my kids, including the girls, were excited to build their first Hot Wheels track, woohoo!
Well, we are right in the midst of Prelims and exams but it's good to relax and play rather than fret at the last minute, right? So we spent a couple of hours building and rebuilding using our Hot Wheels Track Builder Stunt and Crash Box and had lots of fun.
Our favourite was the one where you need to launch the car to fly up a slope and land into a crash cup, which is much easier said than done! So the kids decided to make it a team effort and helped each other out. Watch till the end to hear their squeals of delight and see their victory dance. Haha.
For those who have what it takes, join in the annual Hot Wheels Challenge Accepted Championship (SEA) which calls for fans to submit their creative videos of a unique Hot Wheels track that incorporates at least one household item and meets the requirement of the first drop, one loop and a suspension bridge. We made it to the summit of Bukit Timah Hill, woohoo!
This was our first time scaling to the top as we explored the nature reserve over the weekend. I have to say it was really exhausting walking up the long and steep slope, not to mention that we still had a baby, umbrellas and diaper bag to carry, haha.
We had a choice of climbing the stairs or walking along the main road to get to the summit and I was surprised that the kids chose the stairs in unison. All right, let's do it then!
I had to stop a few times to catch my breath because very 喘 but I was glad we didn't give up and managed to perserve till the end. I was hoping to get a good view at the summit but other than this rock and a pavilion to rest, there was really nothing much there.
We couldn't get a good view of the quarry too because it was blocked by the vegetation but at least we saw some monkeys and bugs. The highlight was seeing a giant forest ant and debating about whether a bird we saw high up in the tree was a red crowned barbet or common flameback woodpecker.
It was fun making our way down the hill after and the kids said they wished they could roll down instead because that would be so fun! Hoping to explore more parks soon even though it is the busy exam period for the kids. We all need to take a breather from time to time, this definitely did me a lot of good and made me happy.

昨年2020年、各音楽フェスは軒並み中止に。2021年に大きな期待を寄せて迎えてはみたものの、明るい兆しが一向に見えてこなかった今年の春頃。友人の訓ちゃん(野村訓市)とこんな話になった。
「なんだかまた鬱屈した夏が来そうだね。せめて聴いている間は気持ちが晴れて、どこまでも駆けていけそうな、踊り続けられるような夏のアンセムを作ろうよ。この夏の眩惑を一曲に閉じこめよう。」
そこからこのSUMMER DAZEは出発しました。
夏が近づくにつれアレンジも徐々に決まっていき、友人たちに聴かせると皆一様に喜んで踊り出すのでした。そして映像を作ろうと盛り上がり、一人、また一人と参加したいと言ってくれるクリエイターが増え、学生の自主制作のようにワイワイと映像制作も進んでいきました。皆がそれぞれの仕事を終えた夜中に打ち合わせやロケハンを繰り返し、撮影をしていきました。音源作り、Tシャツ作り、ムービー制作、ジャケット撮影のすべてを自分たちだけで行ったのは初めてのことでした。
この音源と映像は僕たちから、共に2021年夏を生きるすべての同士たちへのプレゼントです。無料でSoundCloud、YouTubeにアップします。この夏の好きなシーンで聴いてもらえると嬉しいです。
忙しい合間を縫ってやりたいと賛同し参加してくれたYOSHIROTTEN、カメラマンの川上くん、映像まわりを寝ずにやってくれた笠井くん、夜中の街を全速力で走ってくれたNANAMI、そして訓ちゃん、改めてありがとう。

In 2020, various music festivals got cancelled. I welcomed 2021 with hope but even around Spring time, there was no good news. That’s when my friend Kun-chan (Kunichi Nomura) and I had this conversation.
“I feel like this summer is going to be another depressing one. So let’s write a summer anthem that we can clear our minds and feel like we can keep running and dancing forever at least while we listen to that song. Let’s capture all the dazzlement of Summer in this song!”
That is how SUMMER DAZE started.
As Summer approached, arrangement came into shape and when I played it to my friends, they all started dancing with joy. When we decided to create a video to accompany the song, more and more creators wanted to take part and we ended up working on it like a bunch of students having fun making a homemade video together. We gathered late at night after work to hold meetings, go location hunting and shoot the video. It was the first time for me to write music, make T-shirt, shoot a video and cover photos all on our own.
This song and the video are a gift from us to all our comrades living their lives in the Summer of 2021. We will post them on SoundCloud and YouTube free of charge. I hope you will enjoy the song at your favorite time and place this summer.
Special thanks to YOSHIROTTEN, Kawakami-kun for all the awesome photos, Kasai-kun for your sleepless nights working on the video, NANAMI who ran around the midnight city in full-speed and last but not least, Kun-chan. 夏休み真っ只中。おうちで遊びながら おやつも食べられちゃう よくばりな釣りゲームを作ってみました。材料は100均で揃えることができるのでお財布にやさしい!夏祭り中止の所も多い昨今、お家でお祭り気分も味わってください。
*レシピ*(お魚 70ぴき分)
1.室温に戻した 無塩バター 20gを混ぜる。
2.砂糖 35gを入れ混ぜる。
3.卵黄1個分も入れ混ぜる。
4.バニラエッセンスも入れ混ぜる。
5.薄力粉 90g、コーンスターチ 10g、アーモンドパウダー 20gを合わせてフルイ入れます。
6.ひとまとまりにし(まとまりにくい時は牛乳 5gを加える)ラップをし冷蔵庫で30分以上休ませる。
7.(6)を3ミリの厚さに伸ばし、お好みの型で抜く。(小さなお魚型は『クラシエ おえかきグミランド』の型、他の型も以前、100均で購入したものです。)
8.180度に予熱したオーブンで10分焼く。13分焼いたら焼きすぎました。
9.でけた。
これ意外と楽しい。竿とマグネット付きお魚は100円ショップ キャンドゥで買いました。
We are in the middle of summer vacation.
I made a fishing game that allows you to have a snack while playing at home. The materials can be found in 100-yen stores, so it's easy on the wallet! This is a great way to enjoy the summer festival at home, as many festivals have been cancelled.
* Recipe * (70 fish)
1.Mix 20g of room temperature unsalted butter.
2.Mix in 35g of sugar.
3.Mix in 1 egg yolk.
4.Mix in the vanilla extract.
5.Combine 90g of cake flour, 10g of cornstarch and 20g of almond powder and sift in.
6.Put the dough together (add 5g of milk if it is difficult to put together), wrap it and let it rest in the refrigerator for at least 30 minutes.
7.Roll out (6) to a thickness of 3 mm and cut out with your favorite mold. ( The small fish mold is from "Kracie Oekaki Gummi Land", and the other molds were purchased at a 100-yen store. )
8.Bake in an oven preheated to 180 ℃ for 10 minutes. After baking for 13 minutes, it was overcooked.
9.It's done.
This is surprisingly fun. I bought a fish with a rod and a magnet at the 100-yen shop Can Do.

For this episode, we headed down to Chuan Seng Claypot Kway Chap to hit a new Kway Chap Eating Record! Kway Chap is a Teochew dish that consists of “Kway”, which is flat rice sheets in a light soy broth, and sides that usually include the traditionally unwanted parts of a pig like intestines and trotters, braised in a rich dark stock. While it may look straightforward, the preparation of the intestines is labour-intensive and they are cleaned by hand to ensure that they are thoroughly disinfected.
Chuan Seng Claypot Kway Chap, located at Jalan Besar, differentiates itself by serving their Kway Chap in claypot bowls that helps to retain heat and flavour. It is family-run, with the original founder present there as the Head Chef with his son-in-law managing the restaurant.
The Chef masterfully plated almost their entire menu of sides onto the giant plate, forming a Giant Braised Intestines Platter. There were at least 3 different types of intestines, trotter, knuckle, eggs and actual wild boar meat, all doused in the rich and herbal braising liquid. I then proceeded to consume 12 bowls of Kway together with the Braised Intestines Platter. The Kway were delicious, with the thin strips of rice noodles giving a very slight bite and paired with a fragrant and flavourful soy broth. They were good enough to be eaten on their own. This restaurant offers a chilli sauce with a strong vinegar kick that perfectly matches the fatty and chewy pig’s innards. The pig’s parts were generally tender and while some were necessarily chewy, they were pleasantly so.
It was a fun challenge for me as this Kway Chup was very well done. Do not be perturbed by the initial appearance, the “icky” factor and the fact that you probably will not know which exact part of the pig you are eating once you dig in for this dish. Try each side, preferably with chilli sauce and with copious amounts of Kway, and you will be left extremely satisfied. Do check out this family-owned Kway Chap restaurant with their unique claypot concept and excellent food!
