I’ve been snacking a lot more since I’m always home due to the Covid19 situation, and yogurt is one of my favourite things to snack on 😬 I’ve been incorporating yogurt into my diet to increase my protein intake, and @bullafamilydairy’s NEW Australian Style Yoghurt is superbly creamy, smooth + thick!!! For this episode, we destroyed a DIY 5KG Yoghurt Fruit Parfait! After many requests for a sweet challenge, I decided to do one but with an eye on being healthy. Taking a standard American parfait as inspiration, we upsized ours to a massive 5KG version in our giant cup, filled with a multitude of fruits and fresh yoghurt. We picked the most natural and preservative-free yoghurt we could find, Bulla’s yoghurts, which are made from fresh Australian milk and Australian-grown fruits.
We used Vanilla, Plain, Mango and Strawberry Bulla yoghurts together with sliced strawberries, blueberries, raspberries, kiwi and bananas, layering them delicately with oatmeal, forming a massive 5KG Yoghurt Fruit Parfait. The result was a beautiful rainbow spectacle.
I thought the Vanilla flavour was the best, just very slightly sweet with a good note of vanilla - easily enjoyable on its own. The plain yoghurt was rather difficult to eat solo as it was on the sour side (as all plain yoghurts are), but it would work great as a base for you to tweak the flavour to your own liking. The fruit flavours were as expected, if you like strawberry or mango, you would like those flavours. All the yoghurts were creamy and smooth, and thicker than expected for non-Greek yoghurts. The addition of the fruits and oatmeal really brought the parfait together, adding a good contrast in texture and bursts of sweetness with every bite and layer.
If I could make this with my poor Chef skills, you easily could too! It is simply prepared and the fruits can be found at any supermarket but you should feel free to tweak the recipe to your own liking. In this episode, we went back to Neo’s Kitchen to cook up a respectable Abalone platter. You guys always ask what I eat on a normal day so I hope this video gives you some insight into my off-days. New Moon kindly sent over many different types of Abalone, Organic SuperRice and Bird’s Nest for me to make a meal with. I consumed the following:
1. Thai Mango Salad with Australian Wild Caught Abalone
2. Chinese stir-fry with Premium New Zealand Abalone
3. Sambal Petai with Mexican Abalone
4. Olive Fried Rice made with Organic SuperRice and South African Abalone
5. Abalone Sashimi using Individually Quick Frozen (IQF) Australian Abalone
6. Bird’s Nest with White Fungus Rock Sugar
All the abalone required minimum preparation except for the IQF ones, which need to be washed and cleaned thoroughly before consumption. The Organic SuperRice comes with 4 different types of rice and is easily cooked with no soaking needed. Abalone is high in protein with almost no fat and carbohydrates, making it very good for those who want to lose weight and build muscle. For someone who works out regularly, it is an excellent source of protein while being low in calories.
This meal is basically what I eat on a normal day, in between challenges. 嗨!大家好,我是 Cassandre, 今天的『食不相瞞』,我們要來做超級適合炎熱夏天的一道空氣感十足輕盈又好吃的甜點:帕芙洛娃蛋糕 (Mango Kiwi Pavlova/百露華蛋糕)。
Pavlova 帕芙洛娃,這名字取的真優雅,這款蛋糕的名字是來自於俄羅斯最著名且最受歡迎的古典芭蕾舞者 Anna Pavlova,在 1920年代,紐澳為了歡迎她的來訪,特別以她的名字創作了這款蛋糕 ,之後便成了廣受歡迎的一道甜點,雖名為蛋糕,但完全沒有用到一點麵粉,所以也是無麩質糕點。
Pavlova 帕芙洛娃它特別之處在於,長時間低溫烘烤的蛋白霜(meringue)蛋糕基座,外表酥脆,內裡卻是棉花糖般的柔軟,堆上打發好的馬斯卡邦鮮奶油與當季的好吃水果後,因鮮奶油跟水果的水份向下滲入,蛋糕中間因為潮濕和淋面的重量而會瞬間下塌,非常有趣,千萬別以為是烤壞了,而下陷的餡料與內部的棉花糖質感蛋白霜,恰好形成一個質地相似,口感相異的層次,用叉子一勺挖下,你會同時吃到爽甜的蛋白霜外殼與棉花糖口感,以及淡雅香濃的馬斯卡邦鮮奶油與超甜的愛文芒果與微酸的奇異果(可用任何你喜歡的水果),不騙你,香汗淋漓的大熱天有這道輕盈又美味的甜點,一切都值了。希望大家會喜歡這支影片!Enjoy.~:-)

帕芙洛娃水果蛋糕怎麼作呢?
下面是這款 Mango Kiwi Pavlova Cake 的作法與食譜:
☞ 蛋糕尺寸約為直徑 13-15公分,約四人份

☀︎ 片中使用的大理石高腳轉台(JEMarble 鎮一大理石)直徑是30公分的,這款蛋糕的製作過程中,有一個轉檯會比較好操作,如果沒有適當的蛋糕轉台的話,在塑形和抹面時,就要多花一點功伕,但還是可以的。
☀︎ 另外鎮一大理石是台灣花蓮本土的在地廠商,有興趣的朋友可以搜尋他們家的這項工具喔:大理石轉台(高腳款)。
✎ 材料 / Ingredients
☞ 蛋白霜
蛋白 2個 (約68-69g), 室溫
細砂糖 110g
玉米粉 3g
新鮮檸檬汁 2g, 也可用白醋, 塔塔粉取代
香草精 2g
☞ 馬斯卡邦鮮奶油與水果配料
鮮奶油 200ml, 冰的
馬斯卡邦起士 50g, 軟化
芒果 適量,切小塊
奇異果 適量,切小塊
✎ 做法 / Instructions
☞ 製作蛋白霜蛋糕
1. 烤箱預熱 170°C
2. 將兩顆蛋的蛋白與蛋黃分離,將蛋白倒入料理盆中
3. 加檸檬汁,用手持攪拌器以中速攪打 1 分鐘,接著分 3 次加糖,每加一次,攪打 30 秒,直到全部的糖都加完為止
4. 糖都加完之後,改以中高速攪打約 5 分鐘,然後用手指捏取一點點的蛋白霜,如果還摸得到糖顆粒,要繼續打到糖完全溶解、摸不出顆粒為止(因為如果蛋白霜裡還有糖的顆粒,那麼烤的時候會糖融化流下來就會造成蛋糕體的崩塌)
5. 加入香草精與玉米粉,繼續以中高速攪打到硬性發泡(stiff peak)
6. 用矽膠鏟將蛋白霜挖到不沾的矽膠墊上,塑成一個圓形蛋糕的模樣,直徑約在13-15公分,中間略低於邊緣,形成有點像火山口的形狀,蛋白霜蛋糕沒有固定造形,大家可以自由發揮創意,使用方便取用的湯匙、抹刀或叉子等道具,塑成喜歡的樣子
7. 一旦蛋白霜塑形完成,儘快放入預熱好的烤箱,然後改以 110°C,烘烤65~75分鐘,期間不要打開烤箱
8. 一旦完成,把烤箱開個小縫,讓蛋白霜蛋糕在烤箱裡完全放涼
☞ 製作淋面配料
1. 打發盆裡倒入很冰的鮮奶油與有點軟化的馬斯卡邦起士,以中低速攪打,一旦鮮奶油從液體變成紋路明顯的澎鬆狀,便立刻停手,打過頭的話,鮮奶油表面會變得很粗糙
2. 將切好的芒果與奇異果混拌均勻
☞ 組合
在蛋白霜蛋糕上塗抹一層厚約一吋左右的馬斯卡邦鮮奶油,上面再堆滿新鮮水果,堆的過程中蛋糕頂部會被重量與濕度壓垮坍塌,這是正常的,由於鮮奶油與水果的水份會令蛋白霜蛋糕變軟,因為請儘快享用,最好是要吃之前再來組合
