Wondering what these violet-colored cupcakes are? 🍮🧁🍠💜💜💜They are actually known as the Ube Leche Flan Cupcakes, all made with love by the talented baker behind @sweetbakes_bytrixie. Trixie has successfully recreated her version of @cafe_86’s ( a Filipino Cafe in Pasadena, California) famous Ube Flan cupcakes and they taste as good as it looks! If you have a sweet tooth, this may be the perfect treat for you. Personally think that this could be a little too sweet for my liking but the winning combination of the flan & cupcake kept me wanting more, so I guess it’s still a YAY for me? 💜🤣The texture of flan was smooth & creamy, not forgetting the cupcakes that were moist & soft too :) You’ve nailed this for sure!
To further elaborate, it’s like eating two desserts at once because you get to taste both the flan & ube cupcakes at the same time. Also if you are wondering, the Leche Flan is actually a well-known Filipino dessert made with only egg yolks, milk, sugar and vanilla extract - and it’s basically the Filipino version of creme caramel. They are very similar & look exactly the same. When you put together both ube and leche flan, you will be able to witness the formation of a mouthwatering marriage lol 🤩
It’s my first time seeing and tasting this cupcake because ube desserts are certainly not common in Malaysia. In fact we rarely see the feature of this bright purple bestie across the grids of our feed, so kudos to Trixie for introducing us to this wonderful creation. Thanks for making it happen!
Ohhh, for those that are still reading and if you’ve lost me in the beginning, just so you know the gorgeous hue you see from the cupcake actually comes from this magical tuberous vegetable called ‘Ube’ (it’s pronounced as Ooh-Beh/Bae). And what they usually do with Ube is to make Ube Halaya/ Halayang Ube (Boiled & Mashed purple yam which serves as the main base for ube-flavoured pastries or even ice cream).
Ube sounds similar to how we pronounce Potato in Bahasa (“Ubi) actually but do take note they don’t taste the same, haha!

睡眠是正常生理需求,成年人每日需要睡約六至八小時,時間長短因人而異,有些人可以秒速入睡,有些人卻輾轉反側難以入眠,原來和身體狀況有關,從中醫角度來看,經常性不易入睡、易醒、醒後不易再度入睡均屬於「不寐」範疇,常見成因包括精神壓力大,情志不暢,導致肝火過盛,心神被打擾而不得入眠等,陰虛及血虛體質人士特別容易有睡眠問題。陰虛體質的人水液不足,陽氣偏盛,體內容易有虛熱,容易感覺心煩而不能入睡,睡覺時容易出汗,宜適量進食滋陰食物如百合、沙參、雪耳、花旗參等滋陰清熱。血虛體質人士因為氣血不足,多出現疲倦乏力、頭暈、心悸、健忘等症狀,容易多夢而醒,治本之道為補氣養血,適量進食紅豆、龍眼肉、紅腰豆、靈芝、黨參等補氣血食物,有助改善失眠情況。

陰虛失眠 — 雪梨麥冬雪耳糖水 功效:滋陰清熱,紓緩虛熱以致失眠等症狀。
材料:雪梨1個、麥冬10克、雪耳1個、冰糖適量
做法:
1. 洗淨材料,雪耳泡水至發大,剪去蒂並撕成小塊;雪梨去皮去芯切塊備用。
2. 雪耳、麥冬及雪耳放入鍋中,加水至蓋過所有材料,武火煮至水滾,改文火加蓋煮30-40分鐘,加入適量冰糖調味煮至溶化即可。
血虛失眠 —龍眼百合棗仁茶
功效:寧心安神,紓緩難以入眠的症狀。
材料:新鮮百合1個、龍眼肉10克、南棗4-6枚、核桃2枚
做法:
1. 所有材料洗淨,新鮮百合剝開清洗乾淨。
2. 鍋內加入約800毫升水,放入所有材料,以武火煮至水滾,調文火煮約40分鐘即可。

材料:炒酸棗仁、甘蕎麥、龍眼

Are you part of the insomnia gang?
Sleep is important as it is a biological need. An adult typically requires six to eight hours of sleep daily, and the length varies for each individual. Some would fall asleep at lightning speed, and others have a very hard time. This may be affected by our body condition.
From Chinese medicine’s perspective, individuals with trouble sleeping, often awakened easily, or those with difficulty to sleep again once they are awake, these groups of people belong to the sleep deprivation category known as “Bu Mei” in Mandarin. High level of stress and emotional instability are among the common causes, which in turn lead to the accumulation of excessive heat on the liver, hence disrupting our sleep.
Individuals with yin deficiency and blood astehnia are especially prone to insomnia. Those with yin deficiency usually do not have sufficient body fluids and have excessive yang energy, these lead to asthenic heat in the body and disrupts sleep. due to them not having enough body fluid at the same time retaining excessive Yang energy. All these lead them to develop deficiency-related heat in the body. It would be beneficial for individuals to consume foods that will replenish the “Yin” energy, such as lily, ladybell root, snow fungus and American ginseng.
Those with blood asthenia have insufficient blood and qi, which is usually accompanied by fatigue, dizziness, heart palpitations, forgetfulness and may wake up easily due to dreams. They need to replenish qi and blood, appropriately consume ingredients such as red bean, longan, red kidney beans, lingzhi (Ganoderma lucidum) and dangshen (Codonopsis pilosula). This will help alleviate problems with sleep deprivation.
Stay home safely and make these DIY desserts which can soothe insomnia accordingly!
Yin deficiency insomnia –Snow fungus and radix ophiopogonis sweet soup with pear
Effects: nourishes yin and clears heat, alleviates asthenic heat insomnia.
Ingredients: 1 pear, 10g radix ophiopogonis, 1 snow fungus, rock sugar to taste
Preparation:
Rinse all the ingredients thoroughly. Soak snow fungus until soft. Rinse and cut open the lily bulb. Peel and core pear, cut into pieces.
2. Combine all ingredients with water to cover, cook on high heat until boiling.Turn to low heat and simmer for 30-40 minutes, add rock sugar to taste.
Blood asthenia insomnia – Dried longan and lily bulb sweet soup with Chinese date
Effects: nourishes the heart and calms the mind. Relieves difficulty falling asleep.
Ingredients: 1 fresh lily bulb, 10g dried longan, 4-6 Chinese dates, 2 walnuts
Preparation:
1. Rinse all the ingredients thoroughly. Rinse and cut open the lily bulb.
2. Combine the ingredients with 800ml water and cook on high heat until boiling. Turn to low heat for 40 minutes.
✔Healing Tea Recommendation: Poor Sleep
Effects: Calms the heart and mind. Suitable for over-thinking and difficulty falling asleep.
Ingredients: Fried Spine Date Seed, Buckwheat, Dried Longan
✔ Rice Water Recommendation: Red Bean Rice Water
Effects: Achieves rosy complexion, calms the mind and improve sleep, replenishes blood and nourish the stomach

材料:老黃瓜1根、白背木耳1-2塊、海帶約60克、花生30克、乾瑤柱3-4枚、鰹魚片20克、黃豆30克、蜜棗2枚
做法:
1. 所有材料洗淨,老黃瓜連皮切塊;海帶泡水30分鐘;鰹魚片放入湯袋備用。
2. 鍋中加入2000毫升水,放入全部材料,海帶連水加入鍋中,武火煮至水滾,可隨喜好把海帶取出,調文火煮1小時,最後下鹽調味即可。
備註:脾胃虛弱容易腹瀉者不宜飲用。

Summer soup to burn fat and dispel dampness
Midsummer has arrived and our appetite may have reduced due to the hot weather, yet somehow our weight loss plan does not seem to have any significant improvement. Individuals with the phlegm-dampness body constitution who consume raw and uncooked food and sweet desserts on a regular basis will cause the spleen and stomach to function ineffectively.
The dampness retained in the body will lead to the discharge of phlegm, which in turn will cause the individual to appear overweight. Common symptoms are loose muscles, edema, body feeling heavy, and fats accumulated in the lower half of the body. Besides monitoring their diet, individuals with the phlegm-dampness body constitution should also workout regularly, seek treatment to improve the body condition, and get rid of the dampness. These steps will help increase the success of their weight loss regime.
Tips for soup to strengthen spleen and dispel dampness:
Appropriately add in ingredients such as Chinese yam, hyacinth bean, rice bean, fox nut etc.
White-back fungus soup with old cucumber and seaweed
Effects: Cools blood and burns fat. Alleviates symptoms of excessive weight, loss of appetite, prone to indigestion and abdominal discomfort.
Ingredients: 1 old cucumber, 1-2 white-back fungus, 60g seaweed, 30g peanut, 3-4 dried scallops, 20g bonito flakes, 30g soy bean, 2 candied dates
Preparation:
1. Rinse all ingredients thoroughly. Peel old cucumber and cut into pieces. Soak seaweed for 30 minutes. Put bonito flakes into soup bag.
2. Combine all ingredients with 2000ml of water in a pot, add in the soaking water with seaweed and cook on high heat until boiling. Turn to low heat and simmer for 1 hour. Add salt to taste.
Remarks: Not suitable for those with asthenic spleen and stomach.

How to make blueberry pancakes
☞ Servings : 2 glasses, each 250ml
📍 Ingredients
☞ For the hot fudge sauce
heavy cream 40g
whole milk 83g
granulated sugar 10g
70% bittersweet chocolate 65g
unsalted butter 15g
☞ For the chocolate milkshake
fudge sauce 125g
whole milk 140g
vanilla ice cream 250g
☞ For the Oreo milkshake (1 glass, about 240ml)
oreo cookie 3
whole milk 80g
vanilla ice cream 125g
📍 Instructions
☞ For the hot fudge sauce
1. Add milk and heavy cream and sugar into the saucepan over medium-low heat, bring it to a simmer, then add butter to mix until melted. Remove the pan from heat.
2. Add the bittersweet chocolate into the saucepan and stir often, the chocolate is melting into the cream and butter.
3. Then pour into a pot or a container to let it cool down.
☞ For the chocolate milkshake
1. Throw the vanilla ice cream, milk and fudge sauce into a blender and purée until smooth.
2. Serve with straws in a tall glass. Top with heavy cream and shave a little chocolate Cheers.
☞ For the Oreo milkshake
1. Throw the Oreo cookies, ice cream and milk into a blender and purée until smooth.
2. Serve with straws in a tall glass.

Hello friends! Today we're going to share with you how to make the super fluffy but light in the texture American style pancakes.
The pancake's shape and structure varies worldwide. But fluffy American pancakes are on my A-list. Everybody loves pancakes because they're so easy to make, but NOT THAT EASY. I mean if you want to make the most delicious one.
So we did some research to find the recipe. New York Magazine has voted Clinton St. Bakery Co’s pancakes are the best in New York city twice, so no doubt, we tried their recipe. And we love it. They are rich in flavor but light in texture. Super Yummy. Their pancakes are famous for a reason.
In this video, we’ll share the secret of these pancakes step by step, and how to make the fluffy texture (almost like a cake). They are great for a weekend brunch, and we strongly recommend topping with maple butter and blueberries compote. Of course you can also add some crisp fried bacon with it, they are a classic American breakfast dream team forever :). Wow~so enjoyable. Every day should start like this.

How to make blueberry pancakes
☞ Yield: 8~10 servings, using ¼ cup to scoop the batter
✎ Ingredients
📍 pancake
all purpose flour 160g
milk 220g
baking powder 6g
granulated sugar 70g
salt 2g
unsalted butter 58g, melted
egg 2, M~L size
vanilla extract 2g
📍 maple butter
maple syrup 160g (about 1/2 cup)
cold unsalted butter 110g, cubed (about 1/2 cup)
📍 blueberry compote
fresh or frozen blueberries 178g (1 cup)
granulated sugar 22g (2 tbsp)
lemon juice 5g (1tsp)
✎ Instructions
📍 pancake
1. Sift flour and baking powder together into a large mixing bowl. Then add sugar and salt and mix well.
2. Separate egg yolks from egg whites. Add vanilla extract, milk and melted butter into yolks bowl, and whisk until combined.
3. Beat the egg whites by electric mixer or by hand with a whisk until foamy, then add sugar in 3 batches and continue whisking until they reach medium soft peaks.
4. Pour the egg yolk and milk mixture into the dry mixture, just mix until the flour is dissolved, the batter will be slightly lumpy. Don't over mix it.
5. Next, gently mix half of the whipped whites into the batter, using the whisk to mix from the bottom, then add the rest of the whipped whites and keep folding it in, but no need to fully incorporate.
6. Heat the griddle until hot about 190°C. Drop half cup of pancake batter on the griddle to test the temperature and let set. Once bubbles form and pop, flip it. If the color is nice, the heat is enough. (A common mistake many people make is they don't heat the griddle enough, which is why we need to test the first one.) BTW, if you prefer the crispy on the edge, you can grease the hot surface with a little oil or butter.
7. Add 1/4 cup pancake batter, as the pancake cooks, you will see bubbles start to form on top, once the bubbles pop and become holes, it's time to flip. (3~3.5 mins per side)
8. Repeat the process with remaining batter, you can add some blueberries on top to create fruit flavor. Cooking several pancakes at a time. Transfer cooked pancake to a plate and garnish with confectioners’ sugar on top. Serve warm with maple butter and blueberry compote. Enjoy! To keep the pancakes warm while you make more, you can preheat the oven to 50°C and transfer cooked pancakes in to keep warm.
📍 maple butter
1. Heat maple syrup in a small saucepan over medium heat.
2. Add cold butter to warm syrup (never bring to a boil), whisking until sauce is smooth and all of the butter is incorporated. Maple Butter can also be kept refrigerated for up to two months. Reheat before using.
📍 blueberry compote
1. Simply combine blueberries, sugar and lemon juice in a small pot over medium-low heat, stirring continuously.
2. Once cooked, simmer for 4-5 minutes, keep stirring until a thick mixture has formed.

Hello everyone, today we're going to show you how to make 2 types of Japanese pickled ginger: Gari (ガリ/新生姜の甘酢漬け) and red pickled ginger (紅しょうが).
Gari and red pickled ginger are two types of tsukemono. Gari is marinated by sugar and vinegar, so it tastes sweet and sour, and is often served with sushi and sashimi, so it's called sushi ginger, too. Red pickled ginger is julienned young ginger pickled in red plum vinegar, so the red color is from the vinegar. Red pickled ginger is often served with donburi such as gyūdon and katsudon. They both are most common pickles can be found in Japan.
As we know, ginger is very useful in improving stomach performance and digestion. It’s why most Asian people prefer ginger in the fresh form. It increase the flavor of their dishes. Sushi ginger and red ginger are so easy to make, you can make it a little as you need to stay in the refrigerator in summer times. Hope you like this video. Enjoy. :-)

Sushi Ginger And Red Pickled Ginger Recipes
✎ Ingredients
☞ Sushi Ginger / Gari (ガリ/新生姜の甘酢漬け)
fresh young ginger root 150g
rice vinegar 120ml
granulated sugar 60g
salt 2g
☞ Pickled Red Ginger (紅しょうが)
fresh young ginger root 150g
plum vinegar 60ml
salt 5g
✎ Instructions
☞ Sushi Ginger / Gari (ガリ)
1. Wash the root of gingers, then use a spoon to gently scrape away the brown spots.
2. Cut along the lines of the pattern, slice the ginger thinly.
3. Pour water in a small saucepan over medium high heat and bring to a boil, when it's boiling, add ginger slices into the pan, while boiling again, keep cooking for 1~2 minutes.
4. Drain the ginger slices over a sieve and let cool for 10 minutes.
5. In a small pot, add rice vinegar and sugar and salt over medium heat, stirring to dissolve the sugar and salt. Remove from heat, ,let cool.
6. Squeeze the water out of ginger with your clean hands, then put them in a clean jar.
7. Add rice vinegar mixture into the jar, close the lid and place in refrigerator overnight.
☞ Pickled Red Ginger (紅しょうが)
1. You can wash the ginger whatever the way easy for you, then use a spoon to scrape the ginger skin off.
2. Cut ginger as a slice, and then cut into into 0.3cm width julienne.
3. Add salt and mix well to get covered all over. Now rest for 30 minutes.
4. Squeeze the water out of ginger with your clean hands, then put them in a clean sterilized jar, and put ginger julienne into it.
5. Pour 60ml plum vinegar, this red color came from red plum, so it's naturally color. Close the lid and place in refrigerator overnight.
