If asked to choose an adjective to describe Hong Kong, I will certainly choose “hybridity” ── Since Hong Kong has been declared a free port, people of different ethnicity have stayed together in this great city contributing to the blending of different culture and thus the global-ness of Hong Kong. Prof. Selina Chan has just published a research article in “China Information” examining how “caa caan teng” in Hong Kong has operated as a place where different food culture from Chinese mainlanders and British colonialists have been blended together. This gives rise to a distinctive culture helping to construct the subjectivity of Honkongers and the unique Hong Kong identity. This article is an important contribution to the construction of “Hong Kong subject-consciousness” and a must-read for every Hongkonger.
