【上客扱いされたければ『良い客』を演じろ】
「人」の一番の魅力って、やっぱり「めちゃくちゃムラがある」というところだと思います。
たとえば、お仕事を頼む時ひとつとっても、頼み方次第で、仕事のパフォーマンスが変わってくる。
道理・理屈よりも、「感情」の方がパフォーマンスに大きく影響してくるので、こちら側も、「頼み方」を工夫しようと思える。
ムラがなかったら、「高いお金を払えば、いいものができる」という世界になるので、なかなか退屈です。
そして、これはお仕事に限った話ではなく、全てにおいてそうで、『ずっとカリカリしている人』っているじゃないですか?
そういう人を見ると、「他の人よりも、質の悪いサービスを受けているんだろうなぁ」と思うんです。
たとえば、マクドナルドでハンバーガーを注文した時も、他の人に比べて、店員さんのスマイルの量が少ない。
たとえば、タクシーに乗った時も、タクシー運転手さんの態度が少し悪かったりする。
その原因は外側にあるんじゃなくて、自分にあって、結論を言うと、「上客扱いされたければ『良い客』を演じろ」という話です。
サービス提供者は「人」で、ムラの塊ですから、当たり前ですが、「いいリアクション」をしてくれる人に、「より良いサービスを提供しよう」と思ってしまう。
「美味しそうに食べてくれる人」に、より美味しい料理を作ろうと思うし、
素直に話を聞いてくれる生徒に、より頑張って教えようと思う。
同じ料金を払っていても、自分のリアクション次第で、受けられるサービスが変わってくる。
同じ世界に生きていても、自分のリアクション次第で、世界の優しさが変わってくる。
ずっとカリカリしている人の人生の幸福度を下げている一番の要因は、「リアクターとしての努力をサボっている」という点で、そりゃ、その人が住む世界はシビアなものになります。
これは自慢になるんですが、僕、受け身が超得意なんです。
国内屈指のリアクション芸人なんです。
なので、習い事をする時って、「なるほど!」とか「そうか、わかった!」と相槌を打ち、あとはシンプルに先生から言われたことを、そのまんま一生懸命やるんですけど……そうすると、先生がメチャクチャ頑張ってくださる。
レッスン料金が1時間3000円だったとしても、「西野さん、もうちょっとやりましょう」と言ってくださって、同じ3000円で1時間半とか教えてくださる。
これなんてメチャクチャ分かりやすい例で、リアクションひとつで、世界の物価が安くなっている。
その一方で、「俺は金を払っているお客様だぞ」とフンゾリ返っている人にはそれがない。
誰もそんな人に、オマケのサービスをしようと思わないので、その人は住む世界の物価は高くなる一方で、不満度は上がる一方。
素直に話が聞ける人のところに、より良い情報が入って来るし、
よく笑う人のところに、面白いものが集まってくる。
無愛想な人に、エピソードトークをぶつけようと思わないじゃないですか。
スベる可能性が極めて高いので。わざわざ、そんなリスクを背負いたくない。
繰り返しになりますが、上客扱いされたければ「良い客」を演じるというのが超大事です。

@リンネル チャンネル リンネル 11月号増刊 特別付録のオサムグッズのシリコーンケーキ型を使ってスノースキン月餅を作ってみました。見た目はスノースキン感は弱いですが、月餅🥮の型がなくても、シリコン型で作れたのがポイント。伸びのよい柔らかな餅皮とホワイトチョコのミルキー感がとっても合います。包みやすい餅皮なので同量の餡でも包みやすいです。型離れのポイントは打ち粉。片栗粉を型や餅皮の側面に多めに振ってください。くっつかずに作業できます。型に餅が貼り付き、1回、失敗してしまいました。
昔から大好きだったオサムグッズ。付録でシリコン型が手に入るなんていい時代なんだ。
*レシピ*(およそ64mlの型 6個分)
ホワイトチョコ餡を作ります
1.ホワイトチョコ 42gを溶かす。
2.白あん 150gを入れ混ぜる。
3.6等分にする。
4.お好みにパウダーで着色する。
今回、かぼちゃパウダー・紫芋パウダー・いちごパウダー 各2g、バタフライピーパウダー・抹茶 各1gで着色しています。もちろんそのままでもOKです。
5.ラップで丸く包み、冷蔵庫または冷凍庫で冷やしておく。
餅皮を作ります。
6.耐熱ボウルに白玉粉 24g、水 96gを入れ粒がなくなるまで混ぜる。
7.加糖練乳 24g、サラダオイル 24gと上新粉 24g、薄力粉 8g、上白糖 24gをあわせてフルイ入れ、泡立て器で混ぜる。
8.ふんわりラップをして、600wの電子レンジで50秒加熱し泡立て器で混ぜる。
9.その後、20秒加熱を3回繰り返し、その都度、泡立て器で混ぜる。
10.更に20秒加熱を3回繰り返し、その都度、今度はゴムベラで混ぜる。
11.更に今度はラップをしないで、1分30秒加熱し混ぜないでそのまま粗熱を取る。
12.片栗粉を広げたバットなどに(11)を6等分する。
13.ラップの間に(12)を伸ばす。
14.(5)を包む。
15.シリコン型に押し込む。
16.冷蔵庫で冷やす。
17.型から取り出す。
18.でけた。かわいいうまい。オサムグッズかわいい。永遠だな。
I made snow skin mooncakes using the silicone cake mold of OSAMU GOODS. It doesn't look like snow skin, but the key is that it can be made with a silicone mold even if you don't have a mooncake 🥮 mold.The milky texture of the white chocolate goes well with the soft and stretchy rice cake skin. Since it is a rice cake skin that is easy to wrap, it is easy to wrap even the same amount of bean paste. The key to mold release is flour. Sprinkle more potato starch on the sides of the mold and the rice cake skin. You can work without sticking. Mochi stuck to the mold and I failed once. I've always loved OSAMU GOODS. * Recipe * (for 6 molds of about 64 ml)
Make white chocolate bean paste.
1.Melt 42g of white chocolate.
2.Mix in 150g of white bean paste.
3.Divide into 6 equal parts.
4.Color with powder as desired. This time, I used 2g each of pumpkin powder, purple sweet potato powder, and strawberry powder, and 1g each of butterfly pea powder and matcha. Of course, you can leave them as they are.
5.Wrap in plastic wrap and chill in the refrigerator or freezer.
Make mochi skin.
6.Put 24g of Shiratamako and 96g of water in a heat-resistant bowl and mix until there are no grains.
7.Add 24g of sweetened condensed milk, 24g of salad oil, 24g of Joshinko, 8g of cake flour, and 24g of white sugar, and mix with a whisk.
8.Wrap it gently, heat it in a 600w microwave oven for 50 seconds, and mix it with a whisk.
9.Repeat heating for 20 seconds 3 times, mixing with a whisk each time.
10.Repeat heating for another 20 seconds three times, each time mixing with a rubber spatula.
11.Furthermore, without wrapping this time, heat for 1 minute and 30 seconds and remove the heat as it is without mixing.
12.Divide (11) into 6 equal parts on a tray with potato starch spread.
13.Spread (12) between sheets of plastic wrap.
14.Wrap (5).
15.Press into the silicon mold.
16.Chill in the refrigerator.
17.Remove from the mold.
18.It's done. Cute and delicious. OSAMU GOODS are eternal.

Hello friends! Today we're going to share with you how to make the super fluffy but light in the texture American style pancakes.
The pancake's shape and structure varies worldwide. But fluffy American pancakes are on my A-list. Everybody loves pancakes because they're so easy to make, but NOT THAT EASY. I mean if you want to make the most delicious one.
So we did some research to find the recipe. New York Magazine has voted Clinton St. Bakery Co’s pancakes are the best in New York city twice, so no doubt, we tried their recipe. And we love it. They are rich in flavor but light in texture. Super Yummy. Their pancakes are famous for a reason.
In this video, we’ll share the secret of these pancakes step by step, and how to make the fluffy texture (almost like a cake). They are great for a weekend brunch, and we strongly recommend topping with maple butter and blueberries compote. Of course you can also add some crisp fried bacon with it, they are a classic American breakfast dream team forever :). Wow~so enjoyable. Every day should start like this.

How to make blueberry pancakes
☞ Yield: 8~10 servings, using ¼ cup to scoop the batter
✎ Ingredients
📍 pancake
all purpose flour 160g
milk 220g
baking powder 6g
granulated sugar 70g
salt 2g
unsalted butter 58g, melted
egg 2, M~L size
vanilla extract 2g
📍 maple butter
maple syrup 160g (about 1/2 cup)
cold unsalted butter 110g, cubed (about 1/2 cup)
📍 blueberry compote
fresh or frozen blueberries 178g (1 cup)
granulated sugar 22g (2 tbsp)
lemon juice 5g (1tsp)
✎ Instructions
📍 pancake
1. Sift flour and baking powder together into a large mixing bowl. Then add sugar and salt and mix well.
2. Separate egg yolks from egg whites. Add vanilla extract, milk and melted butter into yolks bowl, and whisk until combined.
3. Beat the egg whites by electric mixer or by hand with a whisk until foamy, then add sugar in 3 batches and continue whisking until they reach medium soft peaks.
4. Pour the egg yolk and milk mixture into the dry mixture, just mix until the flour is dissolved, the batter will be slightly lumpy. Don't over mix it.
5. Next, gently mix half of the whipped whites into the batter, using the whisk to mix from the bottom, then add the rest of the whipped whites and keep folding it in, but no need to fully incorporate.
6. Heat the griddle until hot about 190°C. Drop half cup of pancake batter on the griddle to test the temperature and let set. Once bubbles form and pop, flip it. If the color is nice, the heat is enough. (A common mistake many people make is they don't heat the griddle enough, which is why we need to test the first one.) BTW, if you prefer the crispy on the edge, you can grease the hot surface with a little oil or butter.
7. Add 1/4 cup pancake batter, as the pancake cooks, you will see bubbles start to form on top, once the bubbles pop and become holes, it's time to flip. (3~3.5 mins per side)
8. Repeat the process with remaining batter, you can add some blueberries on top to create fruit flavor. Cooking several pancakes at a time. Transfer cooked pancake to a plate and garnish with confectioners’ sugar on top. Serve warm with maple butter and blueberry compote. Enjoy! To keep the pancakes warm while you make more, you can preheat the oven to 50°C and transfer cooked pancakes in to keep warm.
📍 maple butter
1. Heat maple syrup in a small saucepan over medium heat.
2. Add cold butter to warm syrup (never bring to a boil), whisking until sauce is smooth and all of the butter is incorporated. Maple Butter can also be kept refrigerated for up to two months. Reheat before using.
📍 blueberry compote
1. Simply combine blueberries, sugar and lemon juice in a small pot over medium-low heat, stirring continuously.
2. Once cooked, simmer for 4-5 minutes, keep stirring until a thick mixture has formed.
