我不太喜歡外出拍片,絕大多數影片我都希望在室內拍攝,香港有很多餐廳侍應也不講英語,就算他們是講英語的,也需要一些功夫才能得到他們同意,讓我們拍片。

This 'edible art exhibition' will simply blow your mind away!
Meet the 5-course dinner that will re-define the new meaning of "eating" 🍽
How cool would it be if having a pleasant meal is not just about scooping each bite and putting it in your mouth, but to transport you to the other world? The world that food becomes alive and tells you an interesting story along the journey. How does that sound like to you?
This is not an airy idea, but was made real at "THE INCONVENIENCE STORE", the latest project which is featured as a part of the upcoming Bangkok Design Week 2020. The project was spearheaded by a group of Thai designers, "Ling Kee Suer” (Monkey Riding Tiger), incorporating the art of gastronomy, graphic visual, sound design and gastronomy all together in order to create a whole-new-world experience of modern chef’s table.
Throughout the 5-course meal, you’ll walk through each chapter which narrates the food scene of people in the society. It stresses the idea of how things are so convenient–counting those microwavable fast food and instant to-go noodles–but we have no idea what is entering our bodies along with each bite we take.
The course is carried out in company with the projection mapping by Another Day Another Render, creating a more intense 5-sensory experience. You sit in the chair, and let everything around walk you through the story. Definitely, it will become one of the meals that you'll never forget!

「廚師的腦袋」
今天雖然休假,一整天卻也挺充實
跑去醫院探望外婆,跟堂弟打球,晚上跟家人吃飯聚餐,試著在創業期間擠出點時間陪家人之外
我滿~~腦子,還是想著接下來要在菜單上做的改變
而由於思考習慣的關係,我常常以英文去做各種思考
我想這受益於我上個專業 - 英文 的關係
最近由於健忘,所以習慣把自己自言自語般的思考過程記錄下來
紀錄完成後覺得這件事有點ㄎㄧㄤ
所以決定拿出來博君一笑,滿腦子想著食物的人到底是怎麼思考的

OYAKODON, a dish that known to every Japanese
and of course its popularity around the world shows the value and power within few ingredients
under the pressure of putting more items on the menu
This sensationally simple yet delicious dish came to my mind
But, how to make it a restaurant worthy dish, instead of most people can recreate in their house
IS a everyday issue to most chefs lol
So after couple of hours doing researchs online
A method sounds pretty sexy to me
Pre-poach your seared, still raw chix thigh in wings stock and flavor it with spring onion juice, while it set in the fridge, the gelatin from the cooking of wings seal all the fragrance and flavor
then all you have to do is to scoop out your chix and jelly while you get order, heat it up with some sweetened soy, finish it with free range egg
viola, Oyakodon that is perfect both for service side and flavor side,,,,amazing
and also i was thinking about rearranging the sequence that i do my tofu burger,,,
i used to simply smash the tofu with the mince, season it, shape it and cook it just above 65 degrees
finally, bagging it up with some teriyaki sauce and chill
while in service all i have to do is to take it out from 62 degrees water bath and heat it up with all the veggies
but you know, after smashing tofu with everything, you only get the soft texture from the end result - the whole patty
But
you dont get the soft texture from the tofu
so while i was brainstorming about this, sitting on the toilet in my house ( unfortunately im sorry
i was like, well
in order to get the texture from the tofu, i must not break it too much, but in the meanwhile i gotta try to combine it with the mince well enough to form a patty
So,,,
Instead of breaking the tofu with the mince
I can sear it first to get a bit of the water content out of it, then smash it gently with pork skin jelly ( sth that you boil the shit out of pork rind and you'll get gelatin like skin stock, then you dice it into cubes,,,)
then combine it gently with skin jelly, and just like making a scotch egg, you shape your patty into an one inch flat layer, then on the other hand you shape a ball of tofu/skin jelly mixture
then wrap it up and press it just like any other patty
so while you sear it in the pan, the jelly inside the patty will slowly melt and your burger will be fucking sexy and juicy
and to prevent from any juice leaking out in the cooking process
i might dust the patty with a bit flour before cooking
wishing that the flour will create a crust to encase all the juice inside,,,

crazy but interesting
i cant wait to try it
And ladies and gentlemen
thats passion right here, for no reason at all to think of food and cooking all the time
thats how I loveee cooking lol
and funny things is that though my first language is Mandarin
But while i was thinking of food, most of the time it is English version lol

First order of business, I wanted to go see Chiang Kai-shek’s Memorial. Walking past the National Theatre, there were people practicing Tai Chi in the morning. What an unforgettable sight that was – to be immersed in such tradition – to finally see the things I always see in the movies in real life. To finally stand before Chiang Kai-shek’s statue himself and in front of the guards themselves made me feel really surreal. I don’t normally feel that way about many places, but I seldom have a connection such as this one.
You see, in university, I studied contemporary China a lot. I focused and paid attention to WWII and the results. Chiang Kai-shek was definitely a prominent figure in my studies. And being there just brought back so many memories of university and how far and long it’s been. I can’t believe it’s been almost four years since I graduated. I felt extremely old standing there.
Next up, I went over to the Sun Yat-sen Memorial as well. It looked a little bit older and less grand compared to the space of the Chiang Kai-shek’s memorial grounds, but this one featured the changing of the guards. This kind of brought me back to my Washington DC trip in middle school when I witnessed the changing of the guards at the Tomb of the Unknown Soldier. It’s funny how in life, we have moments and memories that remain with us for a long time. Even though those feelings have faded, the memories still hold value from within. Moments on the road and moments traveling have made my life much deeper and refined. Staring at Sun Yat-sen’s statue gave me goosebumps. I was in Taiwan. Zomg.
The weather in Taipei was actually pretty comfortable during this time of the year. Sure, the sun was bright, but the heat was tolerable- especially in the evening. I wasn’t really sure what to eat that afternoon because I was still pretty sick from a case of food poisoning the days prior, I just opted to eat some Subway to be safe- simply because it was there and I was starving. To think about it, food in Taipei wasn’t easy to find as I thought. There were certain areas where you could get food and it wasn’t available in the streets in the afternoon or early in the morning. I had a hard time locating random restaurants near these sights. Even if there was a restaurant, a lot of the menus didn’t have a lick of English or pictures.
Another thing that many people do in Taipei is to visit the Maokong area via the Maokong Gondola or Maokong Cable Cars. The lines were line. I had to stand in the sun for quite a bit until the line progressed. People have a chance to either use a basic cabin or a crystal bottom one where the bottom of the cabin is made out of another sheet of glass so you can look down. That was pretty scary. The ride was beautiful, but I’ve been in so many cable cars that they don’t really impress me anymore. When I reached the top, there wasn’t much to do. There was some street food, including calabash candy, which was another thing I saw on TV in real life. That was pretty awesome, but gave me severe tooth pains because of how sweet it was. Trust me, I’ve never bitten into anything so sweet and sour like calabash tomatoes. Most people were walking towards a temple or something. I didn’t feel like visiting a crowded temple, so I opted to find some food. I stumbled upon a random restaurant. Pointed at some pictures. Nobody spoke English. And ate some really weird cold chicken leg thing. My waitress suddenly started speaking Vietnamese to another person, and I almost fell over. I started laughing insanely loud because we had so much trouble communicating my order. She was speaking Chinese and I was speaking Engrish. In the end, we spoke Vietnamese to each other and laughed at our situation. She married a Taiwanese man over 18 years ago and has been living in Taiwan and working there at her mother-in-law’s restaurant for that many years.
