Bratkartoffeln is a popular dish in every German household. Yes, it is very difficult to pronounce (brat-kah-toff-len) translates as "fried potatoes" and it's indeed pan-fried potatoes, bacon, onions, and seasoning. I don't eat bacon, so I did it without most of the time. It will taste as great still. Another dish which will make you fall in love forever. Trust me, if it isn't making u love again, please ask me to buy u a drink! :P
Trust me, it is so easy to prepare and cook. JUST time consuming. Normally it takes me 1 hour to cook the potatoes. Slow cooking is the best!
Ingredients :
. MANY potatoes. I used 4kgs of Potatoes.
. A lot of FAT aka BUTTER. 1 to 1.5 blocks of unsalted butter
. 2 whole finely chopped onions
. Salt to taste
. Black pepper
You may also add some marjoram & chopped bacons.
Some nice tips:
- Potatoes can be cooked several hours ahead. You must boiled whole potatoes for 20 mins and not less. In fact, this dish is often made with leftover potatoes.
- In Germany, these potatoes are traditionally served with fried sunly side up eggs, pickles, and green salad.
- If you're using a nonstick pan, the potatoes will need a lot of butter to brown properly.
- Cook the potatoes on medium low fire after the onion turn golden. Turn/flip the potatoes slices gentlely and not as often but watch out, don't let them burn.
- If you are a vegan, use oil instead of butter.
- The potato slices will turn brownish and crispy on the edges. It means they are ready!
I learnt this dish from Oma- German Grandma of my kids. She is such a good cook. Eventhough I dont't speak German, I still managed to learn from her. Glad I did, my kids love this dish and miss their Deutsch homeland too.

我與湘玲是大學的同學、朋友,也是(良性)競爭對手。
她唸的是動畫組,我是創新媒體設計組,大四的時候我想要做雜誌(freeeze magazine),於是自己當採訪、編輯與設計,找了一位攝影師,與她約了時間與拍攝地點,晃晃蕩蕩到了那,
雖然是朋友,但也是第一次去她家,看到她與伴侶精心佈置的家,就會回想起我那時候雜亂不堪自己的房間,不只是各種有品味的物件,也有三隻貓咪,簡直是我理想中的居住環境。
太多的第一次,也包括第一次的採訪,那時候我一邊看著自己準備的訪綱,一邊閒聊,一邊注意手機錄音,
問到最後有太多次變得像是閒聊,但我才發覺,閒聊反而更能激發出潛藏在我們淺意識中的珊瑚與寶物們。
記得那時,她幾乎翻出了家裡所有的稿子,從草稿、隨筆、到各式各樣媒材的繪畫,
每一幅的水準都很高,也相當精緻,繪畫出了我從未見過的柔軟筆觸,
就像是貼服著嬰兒一般的表面,溫暖而充滿彈性,
那時候我明確感知到,那是我所缺乏的,關於軟的能量。
我特別喜歡她所繪製的鉛筆照,反覆塗、堆疊、刮痕,這些在紙上都變成了精美裝飾,最後誕生出一幅暖軟溫的畫作,
或許我們人都會特別注意我們自身所欠缺的,
那時候我才意識到原來縱使媒材不同,也仍能帶有相同的氛圍在,想然,這就是藝術家本身自己的能量與個性。
畫作總能展現出一個人的個性,我想這是一定的,
處在什麼樣的狀況之下就會誕生出怎樣的畫作,
她是追求完美的人,不到狀態與水準之內,她就不會輕易拿出,
這一次她辦了人生的第一次個展,展出了好幾年以來的作品,
我想對她而言,肯定是一個非常大的挑戰與目標。
但她做到了,妳真的好棒!

「過敏」 - 身體的保護機制, 免疫系統面對一些外來因素的過度反應。
反芻著各種對於「人」生的過敏反應,
是成長、是蛻變、是刺激、是停留;是喘息、是掙扎、是依戀、是安全,
這些過敏反應累積下來的畫作猶如黏膩的唾液、分泌物般緩慢堆砌出 「我」 這個人。
於是有了這第一次的展覽, 作為一個與外界連結的私密起點。
"Allergy"- the body's coping mechanism. It is how our immune system reacts to the outside world.
Growth, Transformation, Stimulation, Pause, Respite, Struggle, Attachment, Security.
These are the emotions that I have experienced from allergic reactions then turned into paintings.
Such as sticky saliva and secretions, they piled up and reincarnated to who I am.
This is how this first solo exhibition was born, an intimate story that connects me to the outside world.

曾湘玲 Hsianglin Tseng , 筆名 Hltoo
1992年生,現職 插畫藝術家 / 視覺設計師。
對自己的名字有強烈的認同障礙,被稱呼名字時會冷不防地從腳底竄起一股尷尬但只有自己知道,而Hltoo就是一段名字縮寫並連自己也唸不出的名字。
常被誤認為外向的個性,骨子裡其實非常的認生矛盾,並常常在夜裡認真地煩惱起來。
不設限自己的風格,作品中充滿細緻卻焦躁的質地,擅長用畫面來捕捉空間中最細微的情感流動,安靜卻附有力量,以筆與紙的溫度,嘗試和世界對話。
Hsianglin Tseng / Hltoo.
Born in 1992, an Illustration artist, and visual designer.
Hltoo has a hard time identifying her name, who gets chills down her spine when being called by her real name (That only she knows).Ironically, “HItoo” is an abbreviated name that she couldn't even pronounce it herself.
People often misjudge Hltoo as an extrovert, truth to be told, she has an extremely contradicting mind that would make her wake up in the middle of the night and start spiraling. Hltoo doesn’t limit her art style, her work is dedicated to restless textures and catching strings of emotions from the space that she then turns into images.
Quiet yet powerful, she tries to use the warmth from pen and paper to communicate to the world.

🍭 NEW TAIPEI CITY, Taiwan — As dusk falls at Lehua Night Market, the fluorescent lights flicker on and the hungry customers start trickling in, anxious for a taste of the local delicacies that give this island its reputation as one of Asia’s finest culinary capitals. Neatly arranged pyramids of plump fish balls. Bowls brimming with tapioca balls bathed in lightly sweetened syrup. Sizzling oyster omelets, hot off the griddle. Deep-fried sweet potato puffs, still dripping with oil.

🍡 Take a bite of any of these dishes and you’ll discover a unique texture. But how exactly do you describe that perfectly calibrated “mouth feel” so sought after by local cooks and eaters alike?
Slippery? Chewy? Globby? Not exactly the most flattering adjectives in the culinary world.
Luckily, the Taiwanese have a word for this texture. Well, actually, it’s not a word, it’s a letter — one that even non-Chinese speakers can pronounce.
It’s “Q.”
隨便嘗一口這些小吃,你都會發現它們別具風味。但你該如何形容那種經過精心調配,令當地廚師和食客們趨之若鶩的「口感」呢?
滑溜?有嚼勁?黏稠?這些可算不上是美食界最好聽的形容。
幸運的是,台灣人有一個詞來形容這種口感。其實,這稱不上是個詞語,而是一個字母——就連不講中文的人也能說出它。
那就是「Q」。
-texture: 口感、質地、韻味
-calibrate: 校準、調整、調配
-be sought after: 趨之若鶩
-chewy: 有嚼勁的
🥤 “It’s difficult to explain what Q means exactly,” said Liu Yen-ling, a manager at Chun Shui Tang, a popular teahouse chain that claims to have invented tapioca milk tea in Taiwan. “Basically it means springy, soft, elastic.”
Q texture is to Taiwanese what umami is to Japanese and al dente is to Italians — that is, cherished and essential. Around Taiwan, the letter Q can often be glimpsed amid a jumble of Chinese characters on shop signs and food packages and in convenience stores and advertisements.
「很難解釋Q到底是什麼意思,」人氣連鎖茶飲品牌、號稱台灣珍珠奶茶發明者的春水堂的經理劉葉玲說。「基本上,它是彈牙、軟糯的意思。」
「Q」的口感之於台灣人,就等於「umami」(鮮)之於日本人,「al dente」(有嚼勁)之於義大利人——備受珍視,也必不可少。在台灣各地,可以在店鋪招牌和便利店、廣告的食物包裝中的一堆中文字裡瞥見「Q」這個字母。

A question I get asked often - what steps to take when just starting with a language?

1. Start with the alphabet if the language has a new writing system. It’s extremely important to get the pronunciation right from the beginning so you don’t have to rely on often inaccurate English renditions of how to pronounce words. Once you have the writing system down, write as much as you can in the language without relying on English or another language to help too much.
2. After the alphabet, learn basic greetings and vocabulary. This is an important step and helps motivate you to keep going. I listen to the radio or to music from that language a lot, and if I learn the 100 most used words in the language, I’ll most likely hear that word in a song and get super excited about it.
3. Grammar. Learn a grammar structure, look at example sentences (either on apps like Duolingo, or textbooks, or sites that give example sentences like conjugator) and then replace words in the sentences with other words you know.
4. Practice. Getting a language partner is important. You should find someone who is open to correcting your mistakes, and someone who is patient to talk to you despite you being a beginner. I also practice by doing everything I normally do, in another language. My diary/schedule/shopping list/music playlist all transforms into my target language for a period of time.
5. Keep track of your progress. A diary, studygram or Youtube channel is a good way to see how you’ve progressed.
