Lai Yee's Kitchen - Nutella Bars
Another Spoil-Your-Kids-Day kind of dessert for Friday movie night. They were craving for Nutella and so I am making Nutella bars for them. It is so easy to prepare and no baking is needed. Let's do it!
Ingredients for 8-9" square tray/bowl :
- 1 pack of Digestive biscuits, pounded
- 1 cup of dark chocolate chips or any baking chocolate
- 1/2 cup maple syrup or sugar. I like them less sweet, so I had reduced to 1/4 cup
- 1/2 cup butter, melted
- 5 tbsp Nutella
- 2 tbsp peanut butter (optional)
Add-ons: you can always add hazelnuts, coconut powder or almond flour into the crust for more nutty flavour. Have fun!
I did not show u where I have added the peanut butter in the video. But you may add between the crust base and the chocolate layer. I left them in the freezer for about 1hour. It was delicious. So nice with a cup of coffee or tea.

Our country is very "panas" this week. I do not like to turn on air-cond during the day. Wah I could feel the heat. So I couldn't cook today.
I was craving for some cold jelly but so lazy to make and wait for it to cool down. So I tried my luck by whatsapping my favourite coconut jelly girl Eve. YES YES .. she does delivery during this time. Yahooooo! I love coconut jelly and this @evelyntns jelly is super yumm. I have bought few times and I am glad they do deliveries during MCO too.
Today is dessert Thursday! I have this special date night with my girls every Thursday since 2 years back. We will pick a dessert restaurant to eat dessert and skip dinner. So this comes in the right timing. #ThursdaydessertNight #LuebbertLooiGirlsdessertnight

I called this a fashionable dish. It has a nice checked design and super yummy. Again I did not get the big eggplants. Imagine this to be a long and bigger eggplants. Wow, the effect will be glamour.
Ingredients :
. Eggplants
. Shredded Carrots
. Diced Spring Onions
. Chopped basil (optional, you can put coriander)
. Chopped Garlic and Onions
. Diced Shiitake Mushrooms (soak the mushrooms till soft before cutting)
. Soya sauce
. Salt (for eggplants before filling)
. Oyster sauce
. Oil for deep frying
. White or black pepper
. Ginger Juice
. Seasame Oil
For add-on : Get some Wanton skins to use the same seasoned minced meat as filling.
For sauce or a gravy : Cook up some tomato puree with chili flakes and saute the eggplants together. Or just eat with spicy sauce or ketchup. Enjoy any ways u preferred.
Warning: It can be quite a messy process! But for sure FUN!

I am a 100% Cantonese. Both late Grandfathers came from China Guangdong Province. Growing up with my late Grandma aka Poh Poh was one of the best things since I was born. She inspired me a lot in many ways. She was quite a cook too. Being a Cantonese, soup is a must in our daily meal. She cooked the best soup ever. She used charcoal to cook soup in a clay pot. OMG, I really do miss my late Poh Poh's sweet dessert soup aka Tong Shui too!! So I really want to share her recipes slowly but surely with u all. This is one of the easiest tong shui she cooked for us. Let me show u how.
Ingredients for 6 small bowl servings:
. 18 water chestnuts, peeled and chopped
. 2 eggs
. rock sugar
. 1.5 litres of water
. pandan leaves
You can serve it warm or cold.
