Beef Noodle Soup Is Taipei's Own Fast Food
🍜Lots of places in China have their own beloved version of beef noodle soup. There's the onion-and-cumin-tinged version from Lanzhou in Gansu province, for example, and Kunming's guoqiao mixian, or cross-the-bridge noodles, with their accent of sesame oil. But one place is taking its affinity for the dish to a new level with a bid to become the world capital of beef noodle soup: Taipei.
中國多處都有各自喜愛的牛肉麵口味，像是甘肅省蘭州的洋葱孜然味，還有昆明帶麻油味的過橋米線。但有另一個地方，將對此佳餚的熱愛提升到全新境界，甚而爭取成為全球牛肉麵之都：台北。
🐮Taipei boasts two main types of beef noodle soup. The most popular is the dark hong shao variety, where the meat is braised in soy sauce and the soup is made red and spicy by a generous amount of chillies or -- in tamer, Southern Taiwanese versions -- tomatoes. Some chefs add special ingredients, such as a touch of tangerine peel or star anise, garlic, scallions or vegetables.
台北著名的牛肉湯麵主要有兩種：最受歡迎的是深色的紅燒牛肉麵，牛肉用醬油滷過，紅色的辣湯則加入了大量辣椒，或是改加番茄的溫和南台灣口味。有些主廚會添加獨家配方，例如加點陳皮、八角、蒜頭、蔥花或蔬菜。
