💡DETAILS: The world-renowned luxury group is embarking on a new adventure in China, more precisely near the legendary city of Shangri-La, in the foothills of the Himalayas. Ao Yun is the name of this wine, meaning "flying above the clouds" in the local language, born in 2013 and coming from several vineyards located at altitudes between 2,200 and 2,600 meters! Produced in very limited quantities, this is a rare wine that may become a pioneer among high-end Chinese wines. Blending 90% Cabernet Sauvignon and 10% Cabernet Franc, Ao Yun 2014 has a dense, deep and dark colour. On the nose it is a complex wine, revealing red fruits, spices (cinnamon, liquorice), hummus... On the palate the wine is balanced, with a refined tannic structure. It is a full-bodied wine, expressing aromas of red fruits, flowers and mineral notes that bring plenty of complexity. The beautiful length of this Ao Yun 2014 offers freshness and elegance, made possible by an incredible terroir! 近日參加了星薈的香檳配對晚宴,試了8道菜配6款Sanger香檳。香檳其實配中菜好夾,我亦很喜愛Sanger Peres d'Origines Millesime Grand Cru 2008年配上湯焗龍蝦,這香檳帶烤烘、士多啤梨、紅苺、白花、牛油麵包等,十分有層次,將龍蝦的鮮甜無限釋放!所有香檳是香檳學校的學生釀造的,當香檳有著這承傳的使命,喝起來多了份薪火相傳的窩心,是其他香檳沒有的,而賣酒得來的利潤會全數捐給學校,份外支持。

I joined a champagne pairing dinner hosted at Starry Terrace lately and tried 8-course menu with 6 Sanger champagnes. Chinese cuisine and champagne is a great match! I really enjoyed the pairing of Sanger Peres d'Origines Millesime Grand Cru 2008 with lobster! The champagne has elevated the sweetness of the lobster and the palate is complex with toasty, strawberries, white flowers and brioche notes. All Sanger champagnes are produced by the students of champagne school and the profit all goes to the school! What a lovely champagne to drink with double meaning!

Yusheng is an unique Chinese New Year dish that is very Malaysian and Singaporean. It's a must-have dish to be served, heralding the arrival of Chinese New Year. Each component of the dish has an auspicious meaning. Tossing it high up, joyously shouting auspicious words is such a celebration!
For a twist, we did beetroot citrus cured salmon. The beetroot dyes the salmon a rich ruby hue that screams Chinese New Year. The subtle taste of juniper and citrus of gin with the citrus zests gives it a zing to tease the palate. To follow up with this taste profile, our Yusheng sauce has orange and lime juice in it to lift up and lighten the dish, to cut through the sweetness of the plum sauce. Lo Hei everyone!
