冬蔭功可謂是泰國的代表菜式,泰文「冬蔭」是煲煮混合香料的意思,而「功」代表蝦,煮這個湯不加蝦,換成其它海鮮、雞肉或豬肉亦可。泰國冬蔭湯有多種煮法,但材料離不開南薑、香茅、檸檬葉、指天椒及青檸,這款湯煮起來香氣撲鼻,味道醒胃,從中醫角度來看,南薑性熱,能散寒止痛、溫中止嘔;香茅性溫,有疏風解表、祛瘀通絡的功效;檸檬葉性溫,能理氣開胃、止咳化痰;指天椒性熱,能溫中散寒、開胃進食;而青檸亦有開胃消食、生津止渴的作用,所以適合體質偏寒、食慾不振人士食用,冬天時喝一碗真的通體溫暖呢。
冬蔭功湯
材料:大蝦6隻、泰式茄子5隻、番茄2個、草菇10粒、南薑1塊、香茅2條、檸檬葉6片、指天椒2隻、秋葵6條、青檸1隻、冬蔭湯醬料1包、魚露2湯匙、適量黃糖、水1000毫升
做法:
1. 所有材料洗淨,大蝦剝開蝦頭及去腸;茄子及番茄切件、草菇切半;香茅斜切片;檸檬葉撕碎備用。
2. 燒熱油鍋,加入蝦頭、南薑爆香,加入冬蔭湯醬料略炒,加入水,大火煮滾後調小火煮5分鐘。
3. 加入茄子、番茄、草菇、秋葵、香茅、檸檬葉及指天椒,大火煮至滾後,轉小火煮10分鐘。
4. 加入蝦煮至熟透,熄火,擠入青檸汁、魚露,再按自己口味加入適量黃糖拌勻即成。

Appetizing Tom Yum soup can dispel cold
Tom Yum Kung is said to be the ultimate representative of Thai cuisine. ‘Tom Yum” means hotpot with mixed spices, whereas ‘Kung’ means prawns. The prawns in the soup can be replaced with other seafood, chicken or pork.
There are many methods of cooking the Thai-style Tom Yum soup, but most of the commonly used ingredients are galangal, lemongrass, lemon leaves, cayenne pepper and lime. This soup would release a strong fragrance that can stimulate the stomach.
From the perspective of Chinese Medicine, galangal is warm in nature, can dispel cold and relieve pain, as well as warm the Meridians and control nausea; Lemongrass is warm in nature, can eliminate wind from the body, clear stasis and improve the circulation of the Meridians.
Lemon leaves are warm in nature, can improve the circulation of the qi and increase one’s appetite, as well as relieve cough and clear phlegm; cayenne pepper is hot in nature, can warm the Meridians and dispel cold, as well as increase one’s appetite; Lime on the other hand can improve the appetite of a person, quench one’s thirst and promote salivation.
Therefore, Tom Yum soup is suitable for individuals with a cold body condition as well those with appetite loss. Drinking a bowl of Tom Yum soup during the winter is especially beneficial in keeping the body warm!
Tom Yum Gung
Ingredients: 6 prawns, 5 Thai eggplants, 2 tomatoes, 10 button mushrooms, 1 galangal, 2 sticks of lemongrass, 6 kaffir lime leaves, 2 chills, 6 okras, 1 lime, 1 sachet of tom yum paste, 2 tablespoons of fish sauce, cane sugar and 1000ml water
Preparation:
1. Rinse the ingredients. Remove prawn head and the intestines, set the heads aside. Cut eggplants, tomatoes and button mushrooms. Cut lemongrass and tear kaffir lime leaves.
2. Heat the pan with oil, add prawn heads, galangal and tom yum paste to stir fry. Add water, boil with high heat, turn to low heat and cook for 5 minutes.
3. Add eggplants, tomatoes, button mushrooms, okra, lemongrass, kaffir lime leaves and chilis, cook with high heat and turn to low heat, cook for 10 minutes.
4. Add prawns and cook until they are cooked. Turn off the heat and add lime juice, fish sauce and cane sugar to taste.

In Thai language, tom means the boiling process, and yam means “mixed” or “salad”. The essential ingredients of tom yum are herbs such as lemongrass, galangal, kaffir lime leaves, these 3 main herbs give the soup flavor, they are absolutely necessary. Tom Yum Soup Recipe
☞ Yield: Serve 2~3
✎ Ingredients
shrimp 4, medium size
oyster mushrooms 80g
lemongrass 2 stalks
galangal 2 inch chunk
kaffir lime leaves 5
shallots 4
chilli Q.S
cilantro roots 2
Thai chilli paste 30g (1.5tbs)
fish sauce 35g (2.5tbs)
lime juice 20g (1.5tbs)
chicken stock 500ml
sugar 7g (1/2 tbs)
* If the chicken stock is unsalted, you can add 1/4 tbsp salt
*Most store-bought chicken stocks are salted, so don't need to add salt, you can mix 250ml stock with 250ml of water.
✎ Instructions
1. Use a scissor to cut the sharp point of the shrimp (telson and rostrum), but keep the head-on, also cut the antennas and legs. Then open the shell along the back of the shrimp and remove the shell and vein. Spoon the shrimp yellow in the head, it’s full of flavor, set aside.
2. Slice the galangal. Unlike ginger, galangal is too hard to cut through, so be carefully. Crush the lemongrass with the back of the knife, and cut into small chunks. Remove the thick vein from the lemon leaves, then tear into small pieces. Remove the leaves from cilantro, but keep the roots.
3. Pour oil into the skillet, add “shrimp yellow” and sauté over medium heat, add Thai chili paste, and cook until well combined.
4. Pour 500ml stock into the soup pot, bring to a boil, add cilantro roots, galango, lemongrass, shallots and lemon leaves, turn to the low heat, cook for 3 minutes.
5. Add shrimp yellow chili paste, stir slightly until well combined. Add mushrooms, cook until soft.
6. Add fish sauce, sugar and lemon juice.
7. Add shrimp and cook until they are all cooked through. Taste and add more seasoning if needed.
8. Turn off the heat and add chiles, but this is optional.

嗨!大家好,我是 Cassandre, 今天的『食不相瞞』要跟大家分享一道我們非常喜歡的泰式著名湯品:冬蔭功湯 (Tom Yum Goong, ต้มยำกุ้ง, 酸辣蝦湯)。
泰式冬蔭功湯也叫作酸辣蝦湯,它是一道既迷人又充滿性格的好喝湯品。湯頭融合了高良薑(南薑)、香茅、檸檬葉、香菜根的草本清香,再加上魚露、檸檬汁跟辣椒膏的調味,再佐以蝦子的鮮甜,重點是完美的酸辣比例,喝一口就會讓你的味蕾整個被喚醒。
冬蔭功湯的泰文名字是 ต้มยำกุ้ง,英文為 Tom Yum Goong, 其中 Tom(ต้ม)是煮沸的意思(在料理中指的就是湯), Yum/Yam 是沙拉,Goong/kung 是蝦子,三個讀音加起來有點像酸酸辣辣的沙拉蝦湯。這道湯其實有兩種口味,曾去過泰國旅行或曾在泰式餐廳品味過這道湯的人,應該都知道它有清湯原味版跟加了淡奶的濃郁口味版,兩種都非常好喝,各有特色。
冬蔭功稱為酸辣湯,酸跟辣是必不可少,對於喜歡吃辣的泰國人而言,加入大量切碎的朝天椒是基本,但對不吃辣的人來說,即使不加辣也完全不影響它的美味,所以在做這道湯品時,辣度其實是可以依照個人口味來調整。

泰式冬蔭功湯 怎麼作呢?
下面是這道 泰式酸辣蝦湯 的做法與食譜:
✎ 材料 / Ingredients
蝦子 中型尺寸 4 隻
秀珍菇 80g (草菇最正統,亦可改用杏鮑菇、鴻禧菇)
香芧 2根
南薑 20g
檸檬葉 3克(約 5 片)
紅蔥 4個
香菜根 2束
朝天椒 適量, 拍打後切碎
辣椒醬 30g (1.5大匙)
魚露 35g (2.5大匙)
檸檬汁 20g (1.5大匙)
糖 7克 (1/2大匙)
雞高湯 500ml
* 市售高湯已經有鹹味不用額外加鹽,高湯如果過鹹,可以用250ml高湯兌上250ml的清水
* 若使用清水自製高湯,可以將剝下來的蝦殼放入一起熬煮增添風味,另外加上 1/4 小匙鹽調味
✎ 做法 / Instructions
1. 南薑切片 (南薑非常硬,切的時候要特別小心)。切香芧前先以刀背拍打,再切斜成小段。檸檬葉去粗莖撕成小片。紅蔥去膜,縱切成片。香菜去葉保留莖與根部
2. 去除蝦子的額角和尾巴的尖刺,並剪去鬚跟腳,沿著蝦背向後剪開到蝦尾,剝去蝦殼,去除腸泥,最後在蝦頭下方(下巴處)剪開,用湯匙挖出蝦膏備用
3. 平底鍋裡加一點油,以中火加熱,倒入蝦膏炒到冒泡泡,再加入泰式辣椒醬,拌炒至香味飄出即可關火,倒在小碗裡備用
4. 鍋裡加入高湯500ml,煮沸後,依序加入南薑、香芧、檸檬葉、紅蔥、香菜根,轉小火加蓋煮5分鐘
5. 加入炒好的蝦膏辣椒醬,攪拌至溶解,再加入秀珍菇煮至熟
6. 接著加入魚露、糖跟檸檬汁來調味
7. 加入蝦子,蝦子很快熟,蝦肉變白煮熟後,可以嚐一下味道看是否需要調整
7. 關火,加入切好的適量朝天椒,辣椒關火加比較不會太辣,不吃辣的人可以省略

泰國冬陰功湯:
材料:
發瘋柑果葉2塊
香茅3支
南薑1舊
乾蔥頭3粒
青辣椒12粒
青檸3個
蕃茄2個
草菇6粒
蝦3隻
魷魚3隻
處理:
1. 香茅,切,大約3吋1段,拍鬆。
2. 乾蔥頭,去皮,拍鬆。
3. 蝦,剪去沙囊,去腸。
4. 魷魚,去皮及內臟,用粗鹽乸一乸,清水洗乾淨。
5. 草菇,1開4,洗乾淨。
6. 蕃茄,1開4,洗乾淨。
7. 南薑,切厚片,拍鬆。
8. 發瘋柑葉,搣細塊。
9. 魷魚,切細塊。
烹調:
1. 在煲中煲滾1升水。
2. 放南薑、乾蔥頭及香茅入煲內。
3. 加入魚露1茶匙,大火煲滾。
4. 青辣椒,洗乾淨,切碎,拍鬆。
5. 水已煲滾,放蕃茄及草菇,再加入蝦及魷魚。
6. 青辣椒,加入青檸汁及魚露各1湯匙。青檸汁及魚露的比例1:1。
7. 加入酸木子(又名羅網子),洗乾淨,切去根部,做成醬汁,加入酸木子汁約4湯匙,熄火,試一試味,看看是否需要增加或減少青辣椒及青檸汁份量,辣椒亦都是一樣。蝦及魷魚先夾起,以免過熟。
8. 完成,可享用。

Ingredients:
Citrus hystrix 2 Nos.
Lemongrass 3 Nos.
Galangal 1 No.
Shallots 3 Nos.
Green pepper 12 Nos.
Lime 3 Nos.
Tomatoes 2 Nos.
Straw mushrooms 6 Nos.
Shrimps 3 Nos.
Cuttlefish 3 Nos.
Preparation:
1. Lemongrass, cut in lengths with 3" per each. Beat well.
2. Shallots, remove its skin, and beat well.
3. Shrimps, cut the gizzard, remove the intestines.
4. Cuttlefish, remove its skin and intestines. Season with cooking salt. Rinse thoroughly.
5. Straw mushrooms, one mushroom divides into 4 shares. Rinse thoroughly.
6. Tomatoes, one tomato divides into 4 shares. Rinse.
7. Galangal, cut in slices. Beat well.
8. Citrus hysterix, cut into small pieces.
9. Cuttlefish, cut into small pieces.
Steps:
1. Heat up water 1L at high flame in pot.
2. Put galangal, shallots and lemongrass into pot.
3. Put fish sauce 1 tsp into pot and heat up at high flame.
4. Green pepper, rinse, chop and beat well.
5. Water has been boiled up. Put tomatoes and straw mushrooms. Put shrimps and cuttlefish as well.
6. Green pepper, mix well with lime juice 1 tbsp and fish sauce 1 tbsp. Ratio, lime juice and fish sauce, 1:1.
7. Add san kigo, rinse and cut off root, blend it into sauce. Put the sauce 4 tbsp into soup. Turn off fire. Taste it, adjust the volume of green pepper and lime. Do the same to the chili. Pick up the shrimps and cuttlefish first to avoid overcooking.
8. Complete. Serve.
