從前不敢生吃的食物 / 真的可以生吃嗎?
幼稚園生都知道:食物要煮熟才能吃。但人越大,眼界越開闊,小時候煮熟才吃的東西,長大了發現原來都可以生吃!以下食物你覺得生吃還是熟吃美味呢?
🌽 白粟米
粟米煮法多樣,但北海道白粟米可以當水果般生食,號稱是世界上最甜的粟米。
🐟 魚
刺身是日本的經典料理,將新鮮魚類、貝類切片,配以山葵、醬油食用,不少人對刺身為之瘋狂,不過大量進食要當心吃下寄生蟲。
🥚 雞蛋
日本人喜歡用生雞蛋拌飯吃,然而並非所有雞蛋都可以生吃,日本產雞蛋由下蛋日開始計算,21天內可以生吃,蛋盒上印的最佳食用期限就是可以生吃的期限。
🐮 牛肉/雞肉
法國菜的經典前菜Steak tartare韃靼牛肉,將生牛肉剁碎,混合香料及生雞蛋製成,除了牛肉亦有韃靼雞肉,日本亦有餐廳供應雞肉刺身,你敢試嗎?
🦀 蟹
醬油蟹是著名的韓國菜,將生蟹放在醬油中醃製而成,江蘇、上海等地亦有生醉蟹的做法,用酒將生蟹醃製而成。要注意吃生蟹有機會感染肺吸蟲病、霍亂等疾病。
🐙 活章魚
活章魚是韓國的傳統菜式,將仍然鮮蹦活跳的章魚直接放進嘴裡,章魚觸鬚吸盤有機會吸住人的嘴巴、舌頭甚至食道,有機會導致窒息,可說是玩命的飲食體驗。
中醫理論認為生冷食物有違養生原則,「生」是指未煮過的食物,「冷」是指低於室溫的食物,進食生冷食物容易損傷陽氣及脾胃,令體內產生濕、痰等。而且未經煮熟的食物容易附有細菌及寄生蟲,任何調味料例如醋、酒、蒜頭、辣椒等均不能將之消滅,吃後輕則消化不良,重則食物中毒,大家進食前要三思。

Can we eat them raw?
Even kindergarteners know that cooked foods are safe to eat. As we grow older and are exposed to new knowledge, we realize there are some foods that can actually be eaten raw!
Do you enjoy eating the following foods raw or cooked?
🌽 White corn
There are many ways to cook white corn, but the Hokkaido white corn, known to be the sweetest corn in the world, can be eaten raw.
🐟 Fish
Sashimi is a classic dish in Japanese cuisine. We can slice fresh raw fish and shellfish and eat them with wasabi and soy sauce. Many people enjoy sashimi, but do beware of the parasites that might enter the body if we consume them excessively.
🥚 Egg
Japanese enjoy mixing raw eggs into their rice, but not all eggs can be eaten raw. Eggs that are produced in Japan can be eaten raw within the first 21 days. Do watch out for the expiry date for raw consumption on the packaging.
🐮 Beef/chicken
Steak tartare is a classic French dish, and it is made of mixed minced raw beef, spices, and raw eggs. Besides steak tartare, there is also chicken tartare. In some Japanese restaurants, they serve chicken sashimi too. Would you be willing to give that a shot?
🦀 Crab
Soy sauce marinated crab is famous in Korean cuisine, and the crabs used in the dish are uncooked. Likewise, in Jiangsu and Shanghai, there are also people who marinate raw crabs with wine. Do note that eating raw crabs can increase the risks of getting the Paragonimus infection (lung infection caused by parasites called paragonimus) and cholera.
🐙 Live octopus
In traditional Korean cuisine, raw octopus is served. While diners would consume live octopuses as they are, the mollusks’ arms might cling onto the mouth, tongue, and even esophagus, suffocating the diners.
The Chinese Medicine theories believe that eating raw and cold food is not good for the wellbeing of the body. ‘Raw’ refers to uncooked foods, whereas ‘cold’ refers to foods that are below room temperature. Eating raw and cold foods can damage the yang energy, the spleen, and the stomach, and it would cause the body to accumulate phlegm and dampness.
Uncooked foods may also become a growing site for bacteria and parasites. Seasonings like vinegar, wine, garlic, and chili are not effective in wiping out the bacteria and parasites. Some might experience a mild indigestion after consuming uncooked foods, but in more severe cases, individuals might experience food poisoning. Hence, we need to be more cautious.

☘️ Hot and Sour Soup
💚 Veggie Super Chef Contest (1st Season) Voting Results - Thank you so much for everyone’s support, I am really pleased to tell you that my recipe was selected as one of the Top 6!
Here, I would like to share this super easy, yet absolutely delicious recipe with you. I hope you’ll have a go at making it.
The main ingredients for this soup are tofu, bamboo shoots, dried shiitake mushrooms, dried wood ear mushrooms, carrots, mung bean vermicelli (glass noodles), chilli bean paste, vinegar etc; cooked in a clear soup. The dish is characterised by it's sour, spicy, fresh, salty and fragrant flavours.
This soup is rich in nutrients such as protein, calcium, iron, dietary fiber, minerals, and vitamins. It is an indispensable and appetising healthy food which will helps to relieve heat in the hot summer.
Since dried shiitake mushrooms and dried wood ear mushrooms may not be something that people in the UK are familiar with, I have used fresh shiitake mushrooms in this recipe instead, and omitted the dried wood ear mushrooms. However, the traditional ingredients can be found in any Chinese supermarket, Amazon, and Sous Chef.
Shiitake mushrooms are one of the most popular mushrooms worldwide. They are prized for their rich, savory taste and diverse health benefits. Compounds in shiitake may help fight cancer, boost immunity, and support heart health.
You’ll only need 4-5 dried shiitake mushrooms (乾香菇) and 1 piece of dried wood ear mushrooms (木耳). The cooking method for these two ingredients are different to the fresh alternatives, if you have managed to find them and want to use them, let me know and I’ll be happy to explain.
I have found all the suppliers for the above ingredients and have attached the images in the comments below if you do want to give them a go.
You can get the fresh shiitake mushrooms, bamboo shoots and mung bean vermicelli from Tesco, just make sure you search online to ensure they stock them in the branch that you visit.

✳️ Ingredients:
(serves 4)
200g medium firm tofu
250g fresh shiitake mushrooms
1/2 medium carrot
60g tinned bamboo shoots
50g mung bean vermicelli
4 slices ginger
1 tbsp sunflower oil
coriander- washed and chopped to garnish
✳️ Seasonings:
* 1 tsp salt
* 1 tbsp light soy sauce
* 1/2 tsp ground white pepper
* 2 tsp sugar
* 2 tsp sesame oil
* 3 tbsp dark balsamic vinegar
* 2 tbsp white balsamic vinegar
* 1 tbsp chilli bean paste (豆瓣醬 Doubanjiang - you can add more if you can handle the heat)
* 2000ml water
* 1 tbsp vegan oyster sauce / vegan stir-fry sauce
* 3 tbsp corn flour
* 3 tbsp water
✳️ Method:
1. Soak the mung bean vermicelli in warm water until soft, then use scissors to cut into sections.
2. Gently wash and pat dry the tofu and fresh shiitake mushrooms and cut both into thick strips.
3. Peel the carrot, and cut into thin strips. Drain the bamboo shoots, rinse and cut into thin strips.
4. Cut the ginger slices into thin strips then finely dice into small cubes.
5. Mix the corn flour and water together to make a slurry and leave to one side.
6. Heat a large saucepan over medium heat, add oil, then add ginger and fry until slightly brown, stirring gently. Next, add the bamboo shoots and carrots, stir-fry together for a while, add salt, soy sauce, pepper, sugar and sesame oil, and fry until soft.
7. Pour in the black vinegar, white vinegar, vegan oyster sauce and chilli bean sauce. Then, add water and bring to a boil. Turn to low heat and continue to cook for 5 minutes.
8. Put the tofu and shiitake mushrooms in, gently move around with chopsticks or wooden spoon, and add the vermicelli, stirring everything around. Turn to medium-high heat and bring to a boil.
9. Whisk the corn flour water into the soup, a little bit at a time until you reach the desired consistency. If you like it thicker, add a bit more, or if you prefer thinner, add a bit less. After the soup is boiled, taste it and adjust the seasoning, then garnish with coriander.

DONGZHI冬至= WINTER SOLSTICE
Winter Solstice is one of the important celebrations in Chinese culture. Traditionally, the Dongzhi Festival is also a time for the family to get together. One activity that occurs during these get-togethers (especially in the southern parts of China is the making and eating of tangyuan (湯圓) or glutinous rice balls, which symbolize reunion. Tangyuan are usually in bright colours. They are cooked in a sweet soup. It is also often served with a mildly alcoholic unfiltered rice wine containing whole grains of glutinous rice (and often also Sweet Osmanthus flowers), called jiuniang. It is going to be on 21st December this year. There is a saying if you eat the tang yuan means u are a year older. Hahaha we refused to be older but still eat them anyway as they are so chewy and yummy. I had great memories of my Poh Poh making them every year. Maya loves making them herself, so we have never failed to follow the tradition and make them every year on dongzhi. In fact, Maya was the one who will remind me about tang yuan every year since her school does tell them about the celebration.
They are so easy to prepare and cook. Within 20 mins you can actually have a nice bowl of them if you dont cook with sweet potatoes.
Ingredients for glutinous rice balls :
2 cups glutinous rice, sticky rice flour
200 ml water
food colouring (or make natural colouring from pandan, dragon fruit and so on)
*this is the usual measurements. If you are making a lot. Just add on accordingly.
Ingredients for the soup (I have a 5 litres pot) :
200 g or more ginger slices (pound), best to use Bentong Ginger if you like it spicy. If I wasnt cooking for kids, I will add double the amount
6 pandan leaves
4.5 litres of water
3 cups sweet potatoe cubes (this is an add-on)
1 pack of rock sugar (depending on sweetness)
You may also add palm sugar, peanut paste, seasame paste, red bean paste inside the tang yuan. We have tried chocolate before. They are not bad, just not traditional enough. Do try molding them into cute characters. Kids will enjoy them even more.
