Today is World Environment Day. One way we can help protect the environment is by conserving water.

At the recent Global Water Awards 2021, the international water community recognised PUB, Singapore's National Water Agency as the “Resilient Water Agency of the Year”. The Keppel Marina East Desalination Plant, officially opened in February, was named the Desalination Plant of the Year.

PUB has been working hard to ensure water security for Singapore. Its efforts have won awards yearly since 2018, a testament to their commitment to innovation and technology, especially amid the pandemic and climate change. Congratulations PUB for this latest well-deserved accolade!

Last month, China’s Liaoning aircraft carrier and several escort vessels headed south to the seas off Taiwan for a drill, via the waters between Okinawa and Miyako, two of the Nansei Islands, where Japan could plug up completely with its submarines’ capabilities and defensive mining, said Jeffrey Hornung, a political scientist at the RAND Corporation.

Have you seen the film Dark Waters?

The film is based on the 2016 New York Times Magazine article "The Lawyer Who Became DuPont's Worst Nightmare," which describes Robert Bilott's case against the chemical manufacturing corporation DuPont after they contaminated a town with unregulated chemicals.

這部電影改編自紐約時報2016年的文章《成為杜邦最糟糕的噩夢的律師》，講述律師羅伯‧比洛特對抗化學製造廠「杜邦」的故事，該廠以未被規範的化學物質污染了一個小鎮。

According to one analyst, the film’s potential to raise awareness about these issues could have a serious effect on some chemical companies’ bottom lines. But for the real Rob Bilott, the work of taking the industry to court is far from over. In October 2018, the lawyer filed a new lawsuit against several companies, including 3M, Arkema, and Chemours, a manufacturer spun off from DuPont in 2015. That ongoing case is seeking class action status, and was initially brought on behalf of Kevin Hardwick, a firefighting veteran of 40 years who used fire-suppression foams and firefighting equipment containing a class of chemicals known as PFAS, or polyfluoroalkyl substances (PFOA is one type of PFAS chemical).

PFAS chemicals are used in products ranging from waterproof jackets to shaving cream, and they can leach into water supplies in areas where they are disposed of or used in fire suppression (in particular on military bases, where they have been used for years). According to Bilott’s complaint, studies currently suggest that PFAS is present in the blood of around 99% of Americans. The class of chemicals has broadly been linked to immune system disruption, while PFOA specifically has been found to be associated with cancers and other diseases. Bilott’s newest lawsuit, as with his prior cases, alleges that these companies knew for decades that PFAS chemicals, specifically PFOA, could be linked to serious health problems, and that they still assured the Environmental Protection Agency (EPA) and other U.S. government regulators that PFAS exposures were harmless.

　グラニュー糖　　　　60g
　薄力粉　　　　　　　50g
　無糖ココアパウダー　10g
　牛乳　　　　　　大さじ1
(シロップ)
　熱湯　　　　　　　50ml
　グラニュー糖　　　20g
　ラム酒　　　　小さじ1
(チョコクリーム)
　スイートチョコ　　　100g
　生クリーム　　　　200ml
　グラニュー糖　　　　15g
(グラサージュ)
　コーティング用チョコ　160g
　植物油　　　　　　　32ml

【作り方】
準備・・・シロップを作ります。
　熱湯にグラニュー糖を加えてよく混ぜて、ラム酒を加えて冷ましておきます。

①卵をボールに割り入れて、グラニュー糖を加えて湯せんにかけながら約40℃まで温めてハンドミキサーで白っぽくもったりとするまで泡立てます。

②薄力粉、無糖ココアパウダーをふるいにかけて加えて粉っぽさがなくなるまで混ぜます。

③牛乳を加えて切るように混ぜて、生地にツヤが出てきたらOKです。

④15㎝丸型にロールペーパーを敷いて生地を流しいれて、180℃に予熱したオーブンで20-25分焼きます(家庭のオーブンによって時間が変わります。)

⑤焼けたらすぐに型から出してケーキクーラーに乗せて、完全に冷ましてルーラー(ステンレス製のケーキを均一に切るもの)で3枚に切ります。

⑥チョコレートを細かく刻んで、沸騰直前まで温めた生クリームを加えて完全に溶かしてグラニュー糖を加えて氷水にあてながらハンドミキサーで8分立てにします。

⑦3枚に切ったスポンジに、あらかじめ作っておいたシロップを塗り、チョコクリームを塗って重ねて最終的に全体をチョコクリームで覆って冷蔵庫で一晩冷やします。

⑧コーティング用チョコを湯せんで溶かして、そこへ植物油を加えて良く混ぜて、冷やしておいたケーキにかけて冷蔵庫で約1時間冷やします。

⑨チョコレートをくり抜きスプーンを使って削ってケーキの上にチョコチップとともに乗せます。

※ケーキをナイフで切るときはお湯で40℃くらいに温めてから切ります。
