Matcha Diamond Cookies
A special cookie in French meaning "Diamond". Plain, chocolate, tea and a wide range of arrangements can also be enjoyed.
グラニュー糖がキラキラと光ってダイアモンドみたいに見えることからこの名前がついたディアマンクッキー。
以前はチョコで作りましたが、今度は抹茶で作りました。
まぶしたグラニュー糖と抹茶の色味がとても綺麗です^^
私は、2cm厚さで焼くのが好き! ザクザクの食感もたまりません。

【Ingredients】14 servings
60g unsalted butter 無塩バター 60g
40g Powdered sugar 粉糖 40g
1egg yolk 卵黄1個
●90g cake flour 薄力粉 90g
●20g Almond flour アーモンドプードル 20g
●5g Matcha 抹茶 5g
*Egg whites
*Granulated sugar
【Directions】
①Mix butter (room temperature) with a spatula, add powdered sugar and mix well.
②Add the egg yolk, and mix.
③Add all the dry ingredients. Don't forget to sift them.
④make it stick-shaped (2cm in diameter,) then wrap it and cool it in the freezer 30 mins.
⑤Brush the dough with egg whites.
⑥Coat the dough's surface with generous amount of the sugar.
⑦ Slice the dough into 2cm thick.
⑧Put them on the pan lined with parchment paper.
⑨Bake it in the preheated oven (170℃) for 17 minutes.
【材料】14ディアマンクッキー
無塩バター 60g
粉糖 40g
卵黄1個
●薄力粉 90g
●アーモンドプードル 20g
●抹茶 5g
:卵白
*グラニュー糖
【作り方】
①バターをゴムベラでよく混ぜ、粉糖を加えてさらによく混ぜる。
②卵黄を加えてよく混ぜる。
③●をふるって加える。
④直径2cmの棒状にしてクッキングシートにくるんだら、冷凍庫で30分ほど冷やす。
⑤生地の表面に卵白を刷毛で塗る。
⑥生地にグラニュー糖をまぶす。
⑦生地を2cm厚さにカットする。
⑧クッキングシートを敷いた天板に並べる。
⑨170℃に温めたオーブンで17分焼いて出来上がり。
*厚さ2cmにカットしましたが、1.5cmにするとまた少し食感が変わります。もう少しさくさくになります。
*抹茶は製菓材料店などの抹茶が風味も色も飛びにくいのでおススメです。
