巧克力布丁 香濃、綿密/ 免烤箱/ 可做蛋糕、塔內餡 french chocolate pudding/ cake、tart filling

今天分享一個巧克力布丁食譜,這個布丁也許和你平時吃的布丁有些許不同,它口感綿密,濃厚,是一個巧克力味非常濃郁的布丁。它的實用性很廣泛,除了當做可口的甜品,我也會使用它當巧克力塔的內餡,或者蛋糕的夾餡,都能使普通的蛋糕口感更上一層樓。
如果你是巧克力類甜品的愛好者,可以嘗試用它做內餡,一定不會讓你失望的哦。
材料:
可可粉 28g
玉米澱粉 38g
動物性鮮奶油 280g
蛋黃 4顆
牛奶 280g
黑糖 65g
鹽 1/4茶匙
黑巧克力豆 110g
香草精 1茶匙

heavy cream 280g
egg yolk 4
milk 280g
brown sugar 65g
salt 1/4 teaspoon

日日留係屋企,烘焙就最能夠打發時間😝 之前日本東京no.1 cheesecake @mr.cheesecake.tokyo 公開左食譜,作為cheesecake 迷當然要跟住黎整一次啦🧀

出乎意料地原來都幾易整,而且好好味,其實有點像basque burnt cheesecake,不過無咁膩,食落入口即融,口感更細膩!因為買唔到 tonka beans 所以省略左,不過加左雲尼拿條已經好香!

💮材料 ingredients:
cream cheese 忌廉芝士 200g
granulated sugar 砂糖 100g
sour cream 酸忌廉 180g
Greek yogurt 希臘乳酪 50g
whipping cream 淡忌廉 100g
white chocolate 白朱古力 50g
egg yolk 蛋黃 2隻
lemon juice 檸檬汁 9g (大概半個)
vanilla 1/2 piece 雲尼拿半條 (雲尼拿枝割皮取籽)
cornstarch 栗粉 20g

💮我的簡化食譜:
1. 將室溫的cream cheese和砂糖完全混合,攪拌時可隔著溫水 (cream cheese的溫度暖一點,混合物會更順滑)。
2. 將酸忌廉和乳酪混合。
3. 打2隻蛋黃,分3次加入酸忌廉乳酪混合物並拌勻,然後加入檸檬汁和栗粉。
4. 淡忌廉加入白朱古力和雲尼拿枝(雲尼拿籽+已割開取籽的枝皮),中火煮沸後熄火。
5. 把(1)creamcheese混合物加入已加熱的淡忌廉 (4) 拌勻,然後加入(3)的蛋黃酸忌廉乳酪混合物拌勻。
6. 焗爐預熱至180度,在22cm長型蛋糕模上鋪上牛油紙,倒入(5)的混合物。
7. 把蛋糕模放入注了3cm深度的熱水的烤盤(所以必須注意蛋糕模不可以有活底,不然水會從下面滲入!!)
8. 把放有熱水的烤盤連蛋糕放進已預熱的焗爐,180度焗25分鐘後,再轉為150度焗20分鐘。
9. 放涼後,放入雪櫃雪一晚。
10. 雪完後就可以食啦!如非即食,可以放冰格,吃前解凍半小時,食落層次更豐富~

➢Mold 14 x 8cm / H8cm 800ml
You can also use an 18 x 8cm / H6cm mold.
80g (0.35 cup) soy yogurt
110g (0.56 cup) brown sugar
80g (0.73 cup) pecan nuts
1 carrot (140g) 5oz
80g (0.35 cup)Vegetable oil
1/2 tsp cinnamon
1 tsp vanilla extract
160g (1.28 cup) flour
1 tsp baking powder
1/2 tsp baking soda
-Optional-
Cardamom and nutmeg
200g (0.9 cup) cream cheese
40g (0.33 cup) powdered sugar
180°C(356F)50 minutes
Cut the surface of the cake, after 20 minutes.
Wrap the cake in plastic wrap and let it sit overnight.

This cake is low in calories and fat. Of course, you can make it with zero-calorie sugar.
The point of this recipe is not to whip the meringue too much. The cake will crack.
