看過偶像Jolli @jolli316 寫六國酒店粵軒之黯然銷魂飯的blog,不禁悠然神往,在辦公室裏幾次想得出神,一待晚市有人接電話,便坐言起行馬上去訂位。
星期三晚去到差不多全場滿座,當中超過一半人都是點這個黯然銷魂飯套餐。這個套餐也蠻豐富,有得獎菜式金沙蝦頭拼陳皮椒絲大蝦、羊肚菌螺頭燉雞、一碗黯然銷魂飯再加甜點金腿玫瑰酥和大紅袍茶王糕,再附送一碗糖水。
這裏的餐牌很有趣,教大家吃飯的步驟,第一當然是相機食先,然後移開叉燒,刺破雞蛋讓蛋漿流在飯上,然後撈匀。拌勻期間,一陣陣叉燒的甜香和燒豬油的油香擁進鼻腔,非常誘惑。
叉燒用上本地新鮮梅頭,雖然現在流行用西班牙黑毛豬等矜貴食材,但我還是覺得本地梅頭有嚼勁有肉味才是最王道。
這裏的叉燒真的非常出色,稍微有點燶邊,肉質鬆軟卻依然有咬勁,加上其厚切關係,一大口咬下感覺零舍滿足。調味也非常出色,鹹甜適中,還帶點玫瑰露的清香,再配上半肥瘦的肥美油脂,真的每一口都感覺非常歡樂。
叉燒出色,米飯更加不得了。金黃的蛋漿包着飽滿的飯粒,晶瑩油亮,閃閃生輝,好像眨着眼睛呼喚吃我吧。連我太太平常不大喜歡米飯的人,都不禁大讚飯比叉燒更驚喜。
整個套餐中,黯然銷魂飯固然出色,其他菜式包括大蝦、羊肚菌湯和甜品都非常足料美味,加上環境舒適,坐得十分舒服,每人才三百多元實在是相當超值,大家記得抓緊時間去試,因為這套餐只供應至12月12日。

The name comes from the Cantonese, a Chinese dialect. If you run out of ideas on what to cook for lunch or dinner, just cook this Chinese omelette & half your meal is done - simple.

The difference between this Egg Foo Young recipe and the other recipe is this comes with a gravy recipe and the other didn't.
I’ve seen a lot of Egg Foo Young served with gravy but in Singapore, we usually just eat it dry. and it's equally tasty. Maybe I'm just biased because I looooooove fried eggs :)))

Ingredients:
Serves 4 pax
Omelette
------
6 pcs of eggs (use 4 eggs if your eggs are bigger)
1.5 teaspoon of light soy sauce
1 teaspoon of Chinese cooking wine (Shaoxing Huatiao wine)
A few dashes of white pepper
15g of carrot - julienne
50g of deshelled prawns (deveined too)
50g of char siew or char siu (bbq pork)
Some chopped spring onion
Gravy
------
1 cup of water
1 teaspoon of concentrated chicken stock (or chicken bullion cube/ chicken powder/ chicken stock. If you're using chicken stock, use 1 cup and omit water)
0.5 teaspoon of sugar
0.5 teaspoon of premium dark soy sauce
A pinch of salt (do add more to taste if you like)
A few dashes of white pepper
Some cornstarch solution (thicken sauce per your liking)
1 teaspoon of sesame oil (remember to off the fire before adding)
Pour the gravy over egg and enjoy your dish!
