I love Coco Curry! The food is delicious, it's cheap, and you can customise your curry with different spice levels and toppings. And it's the real deal - it really is spicy if you go above level 3. And they have vegetarian curry at select branches! It's difficult to find vegetarian Japanese curry in Japan, because it usually contains meat stock. However, if you order from the vegetarian menu at Coco Curry, it contains no animal-derived ingredients. Remember it's not at all branches, and you might have to ask for the special menu. There are some dishes on the regular menu that look vegetarian but have the regular meat sauce.
The branch I went to in the video is the Osaka Nishi-ku Kitahorie 1 chome shop, which is near Amemura. There's a list of branches in Tokyo serving veggie options in my blog post (which has lots of other recommendations too!) https://www.cakeswithfaces.co.uk/blog-2/vegetarian-restaurants-in-japan/
