咖哩蔬菜素:
材料:
蕃薯1個
茄瓜1條
秋葵5支
甜椒半個
福花4兩
調味料:
素咖哩醬
椰漿
處理:
1. 秋葵切去椗,洗乾淨。
2. 福花切細舊,洗乾淨。
3. 甜椒,去芯,切開6件。
4. 茄瓜洗淨,切一舊舊。
5. 中火煲滾水,加入少許鹽及少許油,灼一灼蔬菜,灼2分鐘,擎乾水。
烹調:
1. 放500毫升水落鑊,中火燒熱。
2. 蕃薯去皮,切細舊,烚5分鐘。
3. 放茄瓜,先煮2分鐘。
4. 加入素咖哩,攪勻,冚蓋,煮2分鐘。
5. 加入椰漿、甜椒、福花及秋葵,攪勻,上碟。
Vegetables in curry:
Ingredients:
Sweet potato 1 No.
Eggplant 1 log
Okra 5 Nos.
Bell pepper 1/2 No.
Cauliflower 4 taels
Seasoning:
Vegetarian curry
Coconut milk 100ml
Preparation:
1. Cut stem of okra, rinse.
2. Cauliflower, cut into small pieces, rinse.
3. Remove stem of bell pepper, cut into 6 small pieces.
4. Rinse eggplant, cut into small pieces.
5. Boil up a pot of water at medium flame, add little salt and little oil. Soak all the vegetables for 2 minutes, hang dry.
Steps:
1. Heat up 500ml water at medium flame in wok.
2. Peel the sweet potato, cut into small pieces, soak for 5 minutes.
3. Put eggplant. Soak for 2 minutes first.
4. Mix well with vegetarian curry. Cover up the pot. Cook for 2 minutes.
5. Add coconut milk, bell pepper, cauliflower and okra. Mix well. Serve.

1,煮咖哩,開始唔好落得太多水,覺得太傑
,先再加水,容易控制味道
2,將蔬菜,用油鹽滾水灼一灼,可以去除污
糟,去除草青味,又令蔬菜爽口有光澤
