認識粗糧 vs 精製食物
現代人飲食越趨精緻化,追求軟滑細緻的口感,回想今早那片鬆軟無比的白麵包、午餐吃了碗一滑入口的麵條,還有下午茶的冬甩和蛋糕,白麵包、白麵條、蛋糕餅乾等甜點都是高度精製食物,多吃長遠會造成健康負擔。日常飲食中適量添加粗糧會吃得更健康,粗糧包括全穀類食品,例如大麥、黑麥、燕麥、藜麥、蕎麥、小米、粟米、五穀米、全麥麵粉等,亦包括可以連皮一起吃的粗糧,例如番薯、芋頭、花生、紅豆、綠豆等,有助吸收更多膳食纖維。
2021年想向更健康邁進一步,不妨在飲食上做些小改變,例如在晚餐的白飯中加入少許紅米、糙米或五穀米,白麵包改吃全麥麵包,由拉麵轉吃蕎麥麵或全麥意粉,在飲食中適量加入小米、藜麥、碗豆、鷹嘴豆、紅豆、綠豆、蓮子等,都是輕鬆養生的好方法。 但注意粗糧不是吃得越多越好,過份食用也有損健康,尤其脾胃虛弱、消化能力不佳人士,一時間進食過多纖維反而未能消化,長者、小兒及脾胃虛弱者進食粗糧都要適可宜止。

Understanding coarse grains VS refined food
People these days enjoy delicacies that are soft and smooth – fluffy white bread in the morning, smooth noodles for lunch, and the donuts, buns, cakes and cookies during our afternoon tea. All these are what we called ‘refined food’.
Eating refined food for an extended period would adversely affect our health. Hence, it is best to include some coarse grains into our diet. Coarse grains include whole grains such as barley, rye, oats, quinoa, buckwheat, millet, corn, five-grain rice and whole-wheat flour. Coarse grains with edible skin are sweet potato, taro, peanut, red bean and mung bean. These kinds of food can help increase the dietary fiber in the body.
In order to lead a healthier life in 2021, consider making minor changes to our meals. For instance, add some red rice, brown rice or grain rice into our white rice; eat whole-wheat bread instead of white bread; opt for soba noodles or whole-wheat spaghetti instead of ramen. Add millet , quinoa, pea, chickpea, red bean, mung bean and lotus seeds into our food and beverages, as it can improve the quality of our diet.
Nevertheless, do note that we should not consume coarse grains excessively, especially for individuals who have a weak spleen and stomach, and those with indigestion.

スケボーちらし寿司
1人分
材料:
ごはん 250g
A酢 大さじ2
A砂糖 小さじ2
A塩 小さじ½
白ごま 適量
卵 1/2個
塩 適量
サラダ油 小さじ1/2
しめ鯖 適量
ガリ 適量
とびこ 適量
鯛 適量
ちくわ(2センチ角) 2本
きゅうり(5ミリ細切り) 1/2本
紅しょうが 適量
金箔 適量
作り方:
1.ボウルにAを入れ、砂糖が溶けるまでよく混ぜ合わせる。
2.ごはんに(1)をしゃもじに伝わせながら回し入れ、全体をしゃもじで切るように混ぜ、ごまを入れて混ぜる。
3.うちわであおいで水気を飛ばし、冷ます。
4.フライパンにサラダ油をひき、溶き卵に塩を加え、フライパンに流し入れる。卵の表面が固まってきたら、フライパンに蓋をして火を消し、1分置く。
5.(4)を千切りにする。
6.酢飯を弁当箱に敷き詰める。
7.(5)、がり、とびっこ、鯛、しめさばをのせる。
8.紅しょうがでYUTOの文字を作ってのせる。
9.ちくわにきゅうりを通して飾る。
10.金箔を散らしたら、完成!

INGREDIENTS
250g steamed rice
A
2 tablespoons vinegar
2 teaspoons sugar
1/2 teaspoon salt
Some white sesame seeds
1/2 egg
Some salt
1/2 teaspoon vegetable oil
Some vinegared mackerel (shimesaba)
Some ginger pickles (gari)
Some tobiko
Some red snapper
2 sticks chikuwa fish cake (diced)
1/2 cucumber (cut into 5mm pieces)
Some red ginger pickles (benishoga)
Some edible gold leaf flakes
PREPARATION
1. Mix all A ingredients in a bowl. Stir until sugar is dissolved.
2. Pour (1) over the rice. Stir with a rice scooper (shamoji).
3. Using a hand fan, cool the rice.
4. Put sushi rice (3) in a bento box.
5. Place egg threads (kinshitamago), ginger pickles, tobiko, red snapper sashimi, and vinegared mackerel on the rice.
6. Write “YUTO” with red ginger pickles on top.
7. Decorate with chikuwa and cucumber pieces.
8. Sprinkle with edible gold leaf flakes on top.
9. Enjoy!

Hi, everyone :) Today we'll going to show you how to make Taiwanese-Style Iced fruit tea with secret ingredient “old school pineapple jam” !
Taiwanese-style iced fruit tea is famous and classic, it’s also my top one drink. It tastes a little sour and sweet, you can also eat plenty of fruits, just like passion fruit, kiwi, orange, apple and kumquat. This recipe has a secret ingredient ⇢ Old School Pineapple Jam. I have to say, this is the bomb to make this drink to the next level.
If you love fruit tea, you must try this recipe. You will fall in love with it right away. It’s
refreshing, fruity, and full of wonderful aroma. And it’s pretty easy to make. Hope you enjoy. :)

Classic Taiwanese-Style Iced fruit tea w/ Old School Pineapple Jam
❋ Can make 500ml
Ingredients
pineapple 400g
sugar 180g
maltose 1-2 tbsp
half a lemon
passion fruit 1
calamansi 2
dried plum 1
1/4 an apple
1/4 an orange
half a kiwi
ceylon black tea bag 1
1. Cut the pineapple in half through the center, and then cut into 3 for each half. Remove the core.
2. Slice the pineapple into 4mm pieces, not to thick.
3. Place 400g pineapple slices into a saucepan and add sugar, squeeze half a lemon juice. Cook over medium until the sugar is dissolved.
4. Bring the pineapple mixture to a boil, skim off the scum and reduce the heat to a low. Cook for 40-50 minutes. Be sure to stir the mixture frequently.
5. After 40 min later, the pineapple jam turns golden brown, then add maltose and stir until dissolved. Remove from heat. Cover with a lid and let jam to steam in the pot for another 10 minutes.
6. Spoon the hot jam into a sterilized canning jar. Let cool and set aside.
7. Cut apple and kiwi into slices, and cut orange into segments. Cut passion fruit and calamansi in half.
8. Add 70g pineapple jam into tea pot, and then add dried plum, scoop out the passion fruit edible seeds and juicy. Squeeze the cut calamansi but don't throw away the peel, put them in. And then add apple slices, kiwi slices and orange.
9. Meanwhile, pour 250ml hot water into a shaker, place a tea bag into hot water for 3 minutes, then discard tea bag. Fill the shake with ice, secure the lid, hold the shaker with both hands and shake vigorously over your shoulder until the outside of shaker frosts up.
10. Pour iced tea into tea pot, and mix all ingredients well. It's down, enjoy.

This is a very simple recipe that you can put together in a rush. Better yet, it is very healthy and vegan. Use a variety of mushrooms like oyster mushroom, enoki (golden mushroom), shiitake, straw mushrooms or any other edible kinds that you can find in your region. It must be exciting to try out this dish in the fall after a mushroom harvest!

Ingredients
1 tablespoon minced garlic
3 tablespoon vegetable oil
1/4 cup tomato sauce
1/4 cup soy sauce
2 teaspoon sugar
1/4 teaspoon chili flakes
1 2/3 pounds (750g) fresh pho noodles
7 ounces (200g) various mushrooms, roots removed and separated or sliced2 shallots, thinly sliced
Salt and pepper
2 scallions, chopped
2 tablespoon roasted sesame seeds
1 tomato, sliced
Instructions
1. Heat a wok on medium, add 2 tablespoons vegetable oil and fry the sliced shallots till golden brown. Remove the fried shallots with a slotted spoon and transfer to a small bowl to use for garnish.
2. Into the remaining oil in the wok, add half the minced garlic and sauté till fragrant. Then add the tomato sauce, soy sauce and sugar. Stir well and simmer for 30 seconds till smooth. Add chili flakes if desired. Turn off the heat. Transfer one third of the sauce to a condiment bowl to serve as dipping.
3. Separate the noodles with your fingers and toss with the remaining sauce in the wok.
4. In a pan, add 1 tablespoon vegetable oil and sauté the rest of the minced garlic till fragrant. Add the mushrooms and quickly stir-fry for 1 to 2 minutes. Depending on the kinds of mushrooms you use, you might add the ones that take longer to cook first (like king oyster or beech mushrooms) and then the others like enoki (golden mushrooms) or straw mushrooms. Season with salt and pepper and take off heat.
5. Divide the noodles into serving plates. Top with the sautéed mushrooms and garnish with chopped scallions, roasted sesame seeds and fried shallots.
6. Serve with the tomato slices and the dipping sauce as the side.
