First time collaborating to make a dish out of a food item and had quite a lot of fun making it haha ✨
What I love about 川見鱈蟹柳 (@cheerfoods.tw’s imitation crab) is that you can eat them straight out of the package or add them into your dish to make it more flavorful and yummy!
You can eat them straight up, add them into your ramen, your sushi like what @taipeifoodie did, or even add them onto your omelette! How fun right?

🍜Uchino Ramen - 熬制十个小时的猪骨汤上加上数种店家的酱汁调配而成,味道丰富而带层次感,是这里最好卖的款式之一。
🍜🌶️Kazan Ramen - 名为火山,确实辣得喷火,这里有两种辣度,喜欢吃辣的朋友可以挑战一下,我另外还加了一勺店家特制的辣椒粉,出众的辣度,我喜欢。
🍜Maze Ramen - 拌面的一种,日式拉面的做法,上面食材丰富,还有颗温泉蛋,拌着吃特惹味。吃完面可以要求店家加个饭团来拌饭吃,店家说不必加钱。
🍛Uchino Don - 日式Don饭我的最爱,吃这个最方便,食材都在饭的上面,拌着吃很满足。这个上面有蒲烧鳗,帆立贝,肉酱,叉烧丁,紫菜,玉米,还有蒜蓉和店家的秘密调味粉。我个人觉得加入店家的辣椒粉,味道更得到升华。
🥟饺子 Gyoza - 饺子大大一颗 ,一面煎至金黄,一口一颗好吃。果然是店里受欢迎的小菜之一。
🌮刈包系列 - 这个台湾小吃店里见得多 ,这里除了夹红烧肉,还有炸鸡排和黑胡椒酱的猪培根,听说来店里的小孩都喜欢这道小吃。
来这里吃拉面,如果喜欢吃辣,就一定不要错过他们的火山拉面还有他们的辣粉,有够刺激😍🎉👍

Ingredients:
75g starter (tripled, use at peak)
150g all purpose flour
60g water (room temperature)
15g caster sugar
6g vegetable oil (or any neutral oil)
Red bean paste
Natural food colour powders
Method:
1. Mix all ingredients
2. Knead dough till smooth and shiny
3. Colour and shape dough into desired sushi shapes
4. 190g White - main dough (30g each with 15g red bean paste as filling), prawn and fish veins
5. 50g Black - seaweed and sesame seeds
6. 10g Yellow - egg
7. 10g Red - tuna
8. 15g Orange - salmon and prawn
9. 8g Dark orange - salmon roe
10. 10g Brown - inari
11. Let dough proof for about 2 hours at 28C
12. Wrap the lid of the steamer with cloth
13. Bring water to a rolling boil
14. Steam buns at medium heat for 9 minutes
15. Turn off heat and let the buns sit inside the steamer for 5 minutes, lid closed
16. Remove buns from steamer
17. Enjoy

鰤鱼在日料里是个很高级的食材,油脂很丰富,鱼肉、鱼头、鱼骨都能开发出不同吃法,可谓全身上下都是宝。上周末我买了一整条大鰤鱼回来,差不多够20个人吃的那种。我今天就学一学庖丁,在线开鱼,做一桌全鱼宴,每个部位都会用到,吃光光一点都不浪费!
▋食材Ingredients
★鰤鱼生鱼片Sashimi
鰤鱼Japanese amberjack
山葵wasabi
刺身酱油sashimi soy sauce
★鰤鱼握寿司Sushi
鰤鱼生鱼片10片,10 slices Japanese amberjack sashimi
米饭150g,150g cooked rice
寿司醋1大勺,1 tbsp sushi vinegar
刺身酱油,sashimi soy sauce
山葵,sasabi
紫苏叶,perilla leaves
甜醋姜,sushi ginger
★海鲜丼Seafood don
鰤鱼刺身5厚片,5 thick slices Japanese amberjack sashimi
米饭一大碗,a bowl of rice
牛油果半个,1/2 avocado
鱼籽一大勺,1 tbsp cured fish roe
刺身酱油2大勺,2 tbsp sashimi soy sauce

玉子烧3片,3 pieces of tamagoyaki

★椒盐烤鰤鱼下巴Salt and Pepper Grilled Fish Chin
鰤鱼下巴两个约400g,400g Japanese amberjack fish chin
花椒粉1/2小勺,1/2 tsp ground Szechuan pepper

葱段随意,Leek
清酒2大勺,2 tbsp sake
白萝卜,daikon radish
柠檬,lemon
★酥炸鱼骨Deep fried Fish bones
鰤鱼骨400g,400g fish bone
花椒粉1小勺,1 tsp ground Szechuan pepper
盐1小勺,1 tsp salt
白胡椒粉1/2小勺,1/2 tsp white pepper powder
面粉75g,75g flour
清酒2大勺,2 tbsp sake

★奶汤鱼头炖萝卜Stewed radish with fish head soup
鱼头半个约350g,half fish head(about 350g)

小葱一根,1 spring onion
盐1-2小勺,1-2 tsp salt

●海老:お好み量
●かまぼこ:お好み量

●桜でんぶ:お好み量
『ちらし寿司の素』
●人参:1本
●干し椎茸:5個
●干し椎茸の戻し汁:約300ml
●醤油:大さじ2
●みりん:大さじ2
●めんつゆ(4倍濃縮):大さじ1/2(あごだし、かつおだし系)
●三温糖:大さじ2(普通の砂糖でもOK)
『酢れんこん』
●れんこん
●酢:150ml
●水:100ml
●ほんだし(和風出汁):4g
●鷹の爪(唐辛子)お好み量
●三温糖:大さじ3(普通の砂糖でもOK)
●乾燥昆布
●塩:小さじ1

ひな祭りという事で今回は絶品ちらし寿司を作りました。
今回の味の決め手、干し椎茸の出汁の旨味がとにかく凄いんですが
その出汁で作った酢飯の混ぜご飯は本当に世界一美味しいんです。
いつもの簡単なレシピに比べると、ひとつひとつ少しの手間がかかってますが
その分、色んな食材が合わさった時の相乗効果は半端なく食べた時の感動は超ヤバイです…。
今回はひな祭りという事で作らせて頂きましたが
味はもちろん最高なんですが見た目もとても華やかなので
大切な人の誕生日や、おもてなし、ホームパーティーなんかで出したら
きっと喜んで頂けると思いますよ♪
時間は少しかかりますが作ってみると意外と簡単なので
お寿司屋さんにも負けない本当に美味しいちらし寿司を
是非、ご家庭で作ってみて下さい。
[Ingredients]
● Rice: 3 cups
● Sushi vinegar: about 90ml (add more as you go)
● Snow peas
● 4 eggs
● Sugar: 1 teaspoon
● Salt: 1/2 teaspoon
● Prawns: as much as you like
● Kamaboko (Fish cake): as much as you like
● Salmon roe: As much as you like
● Sakura-denbu: As much as you like
[Chirashi Sushi Ingredients]
● Carrot: 1
● Dried shiitake mushrooms: 5
● Dried shiitake mushroom broth: 300ml
● Soy sauce: 2 tablespoons
● Mirin: 2 tablespoons
● Noodle soup (4 times concentrated) (agou-dashi, katsuo-dashi): 1/2 tablespoons
● Brown sugar (regular sugar is also fine): 2 tablespoons
[Vinegared lotus root]
● Lotus root
● Vinegar: 150ml
● Water: 100ml
● Japanese soup stock: 4g
● Takanotsume (red pepper) to taste
● Brown sugar (regular sugar is also fine): 3 tablespoons
● Dried kelp
● Salt: 1 teaspoon

As it was the Girls' Festival, I made an excellent Chirashi-sushi this time.
The key to the flavor of this dish, the dried shiitake mushroom broth,
is simply amazing, and the rice mixture made with the broth is truly
the best in the world.
Compared to the usual simple recipes, each one requires a little more
time and effort, but the synergistic effect of combining various
ingredients is unbelievable.
This time, I made it for the Girl's Festival, and of course it tastes
great, but it also looks gorgeous.
I'm sure you'll be very happy if you serve it for your loved one's
birthday, for entertaining, or for a home party ♪
It takes a little time to make, but it is surprisingly easy to make.
