Ingredients: (Serves 4)
Peaches: 1/4-1/2 peach per person
Haloumi: 4 rectangles 1/2 inch thick
4-5 handfuls arugula
1 shallot, finely sliced
juice of 1/2 lemon
zest of 1 lemon
1/2 a red chili. minced
handful of fresh mint
3-4 tbsp oilve oil
regular oil (for grilling)
sugar (1 pinch for the dressing, and some to sprinkle on peaches)
salt and pepper
