A tale of two ramens! Trying tonkotsu ramen at Ichiran, a popular Japanese ramen chain, and vegan / vegetarian ramen at T's Tantan in Ueno Station.
RESTAURANTS IN TOKYO WITH VEGGIE OPTIONS: https://www.cakeswithfaces.co.uk/blog-2/vegetarian-restaurants-in-japan/
T's Tantan is a vegan restaurant with branches in Tokyo Station, Ueno and Jiyugaoka. I went to the Ueno branch for golden sesame ramen - the best vegetarian ramen I've had! They also have vegan katsu sandwiches. Phil went to Ichiran, a chain of ramen bars designed for solo eating - you order from a vending machine, sit on your own and don't have to talk to anyone. The ramen's customisable: choose the strength of the broth, how you want the noodles cooked and add the toppings you like. There are branches all around Tokyo and the rest of Japan. If you've eaten at either of these, let me know what you thought in the comments!
