在室溫下是固體狀的,就是飽和脂肪,它多被看作為「壞脂肪」,
因為它會令血液中的壞膽固醇上升,引致各類型心血管疾病 ,例如血管硬化、中風、心臟病等。
飽和脂肪主要來自動物,例如豬牛羊肉、豬鴨鵝肉、牛油、忌廉、芝士、鮮牛奶等,
還有各種肉類加工食品,也是混合了很多飽和脂肪去增添食品風味。

不飽和脂肪在室溫下是液態的,
我們常聽到人體必須脂肪酸-Omega 3 & 6,都是屬於不飽和脂肪類別。
「必須」是指身體不能自行透過一些生物化學作用去製造,
為了生存和維持健康,我們「必須」從食物之中吸取必須脂肪酸。
(所以我們一定要吃脂肪!不然會沒命的喔!)
不飽和脂肪主要來自植物,但不是所有植物都有較高比例的不飽和脂肪含量。
所以,以下分享一些我常選的油脂(不飽和脂肪含量比例較高):
🔹煮食油,我常用橄欖油、芥花籽油、牛油果油,它們自帶的香味不太重,不大會影響到一起煮的食物味道。
🔹堅果和種子都超美味的,一不注意就會食太多,要小心喔!
建議選原味 / 少鹽、乾烘的。
如果家裡有烤箱,超級建議自己買生的回來再烤,香味更濃,又可避免商家在烤的過程中不知道加了什麼添加物。
核桃的話,我用200度、每面各烤2-3分鐘,如果你覺得還有點「生」味,可以再多烤個1-2分鐘,但要常注意看喔,堅果很容易烤焦。

🔹 無論是植物還是動物性脂肪,都會同時含有飽和 & 不飽和脂肪,不是說植物就單單只含不飽和脂肪、動物就只有飽和脂肪。我們就盡可能選一些不飽和脂肪含量比例較高的食物來吃啦!

🔹 這篇先說日常我們可以選擇食什麼脂肪類食物,下一篇再詳細一點解釋飽和&不飽和脂肪。🔹

Fats are very important! Fats do NOT make us fat, the key is that we need to choose the right / healthy fat to eat.
Saturated fats are often regarded as bad fats since they increase the bad cholesterol level in blood, which significantly raises the risk of cardiovascular diseases! They mainly come from animal & dairy products & processed food.
For unsaturated fats, actually essential fatty acid Omega 3 & 6 are unsaturated fats that we must consume daily in order to survive and stay fit! (“Essential” means our body cannot manufacture them on our own through biochemical process and we need to obtain them from food) They are mainly found in plants sources like plant oil, nuts and seeds.
When we eat fats, choose those containing higher proportion of unsaturated fats!

【平補脾胃】煲湯又怎少得淮山?

健脾袪濕淮山湯
說起常見煲湯材料,又怎少了淮山?不論是乾品或新鮮的,都是健脾養胃的好食材,由於其屬性平和,補而不滯,男女老幼適宜,成為了不少家庭的長備湯料。夏日天氣炎熱,養心養陽氣為保健重點,今天教大家一個加入淮山的養心好湯水,不但可健脾胃,也可寧神養心,晚上睡得更好!
湯水新鮮材料 vs 乾品對對碰:(二至三人份)
新鮮淮山1根=淮山乾品20克
新鮮蓮子 160克=蓮子乾品80克
新鮮百合1個=百合乾品15克
淮山蘋果梨茨實湯
材料:新鮮淮山1根、蘋果1個、梨2個、茨實20克、眉豆20克、無花果3枚
做法:
1. 所有材料洗淨。新鮮淮山去皮切段,蘋果、梨可自行選擇留皮與否,切大件備用。
2. 鍋內加入約2500毫升水,放入全部材料,以武火煮至水滾,調文火煮約1小時,最後下鹽調味即可。
功效:健脾益氣袪濕。紓解壓力大引起的身體困倦等症狀。
Chinese yam soup to strengthen spleen and dispel dampness
When talking about common soup ingredients, Chinese yam is definitely on the list. Whether it is dried or fresh, it is a good ingredient for the spleen and stomach. Because of its mild nature, it can nourish your body but not create stagnation. It is suitable for men, women, children and elderly, and has become a classic soup ingredient for many families. Summer is hot, nourishing the heart to raise yang qi is the main point of health care. Let’s learn more about how to make a soup with Chinese yam, not only to strengthen the spleen and stomach, but also to calm the mind and nourish the heart to improve sleep quality!
Fresh ingredients vs dried ingredients (2-3 servings)
1 fresh Chinese yam = 20g dried Chinese yam
160g fresh lotus seeds = 80g dried lotus seeds
1 fresh lily bulb= 15g dried lily bulb
Chinese yam soup with apple, pear and fox nuts
Ingredients: 1 fresh Chinese yam, 1 apple, 2 pears, 20g fox nuts, 20g purple haricot, 3 figs
Preparation:
1. Rinse all ingredients thoroughly. Peel Chinese yam and cut into pieces. Cut apple and pears into pieces (You can decide peel those or not).
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1 hour. Add salt to taste.
Effects: Strengthens spleen, nourishes qi and dispels dampness. It can relieve fatigue caused by pressure.

木瓜花生雞腳袪濕湯
材料:
煲湯排骨1磅
青木瓜1個
花生1兩
茨實1兩
雞腳8隻
鮮淮山1支
眉豆1兩
蜜棗3粒
處理:
1. 花生、茨實及眉豆,清水浸半小時。
2. 大火煲滾1鑊水,放排骨及雞腳出水3分鐘。
3. 鮮淮山,清水洗乾淨。
4. 鮮淮山,用膠袋揸住,去皮。
5. 青木瓜,洗淨表皮,1開2,去核。
6. 蜜棗,清水浸5分鐘。
7. 鮮淮山,切大舊。
8. 木瓜,打直1開4 。
9. 花生、眉豆、茨實及蜜棗,清水沖洗乾淨,擎乾水。
10. 排骨及雞腳已出水3分鐘,倒去水分,清水洗淨。
11. 放排骨入煲。
12. 雞腳,用菜刀或廚剪除去趾甲,放入煲。
13. 同時加入其他材料。
14. 加入水2.5升。
烹調:
1. 大火煲滾。
2. 滾起後,轉中慢火,煲1小時30分鐘,熄火,再焗30分鐘。
3. 煲好,完成,可享用。
Papaya chicken feet soup
Ingredients:
Pork bones 1 lb
Papaya (green) 1 No.
Peanuts 1 tael
Moskowitz 1 tael
Chicken feet 8 Nos.
Fresh yam 1 log
Black~eyed peas 1 tael
Candied dates 3 Nos.
Preparation:
1. Peanuts, moskowitz and black~eyed peas, soak in tap water for 30 minutes.
2. Heat up a wok of water at high flame. Put pork and chicken feet, soak for 3 minutes.
3. Fresh yam, rinse with tap water.
4. Fresh yam, hold with plastics, get it peeled.
5. The papaya, get it rinsed. Divide it into 2 shares. Remove the seeds.
6. Candied dates, soak in tap water for 5 minutes.
7. Fresh yam, cut in big pieces.
8. Papaya, divide it into 4 shares vertically.
9. Peanuts, black~eyed peas, moscowitz and candied dates, get them rinsed, hang dry.
10. Pork and chicken feet have been soaked for 3 minutes, pour away water. Rinse thoroughly.
11. Put pork rib into pot.
12. Chicken feet, cut the nails with chopper or kitchen scissors, put into pot.
13. Put all the other ingredients into pot.
14. Add water 2.5L.
Steps:
1. Heat up at high flame.
2. Turn to medium~low flame after boils up. Boil for 1.5 hours. Turn off fire. Leave it for 30 minutes.
3. Finish. Complete. Serve.
