Korean Spicy Chicken Stew
Ingredients:
Drumsticks.....................500g
Chicken Thigh................350g
Carrots...........................1.5Pcs
Onion..............................1.5Pcs
Potatoes........................2Pcs
Korean Green Pepper.........Few
Red Pepper..........................Few
Spring Onion.......................Few
Sesame Seed.....................Few
Marinades:-
Korean Gochujang............3 Tbsp
Korean Soy Sauce.............3 Tbsp
Korean Chili Flakes...........2 Tbsp
Korean Muhak Soju..........2 Tbsp
Corn Syrup.........................1.5 Tbsp
Sesame Oil.........................1.5 Tbsp
Garlic (Minced)..................1 Tbsp
Dried Anchovies And Kelp Stock..........900 ml
Dried Anchovies And Kelp Stock:-
Dried Kale......................................................... 3 Pcs
Dried Anchovies
( Heads and Digestive Tissues Removed)......10 Pcs
Water .................................................................1L
Cooking:
1. Soak the Chicken in salty water ( 1L Water and 1 Tsp Salt) fro 20 mins. Drink and Dry.
2. At the mean time, prepare the Dried Anchovies And Kelp Stock, cook for 7 mins. Remove the anchovies and kelp for clear stock.
3. Pre-mix the Marinades and then mix with the Chicken.
4. Cook the Chicken in the Dried Anchovies Stock in medium low heat for 20 mins with cover on.
5. Add Carrot, Onion and Potatoes. Cook in medium low heat for another 20 mins with cover on.
6. Add Korean Green Pepper, Red Pepper and Spring onion. Cook for 2-3 mins.
7. Add Sesame Seed well before serving. Enjoy!
