荷花由頭吃到尾
入秋後就是蓮藕的盛產季節,荷花植物的根莖是大家常吃到的蓮藕,清甜爽脆;花托是呈倒圓錐形的蓮蓬,當荷花凋謝後,花托就變成蓮蓬,蓮蓬裡載著十多顆蓮子,鬆化可口;還有可食用的蓮梗,以及常被用作降脂減肥功效的荷葉,每部份的食材都具不同功效及口感。
蓮花 — 性平,具散瘀止血,祛濕消風的功效。一般用來泡茶。
蓮子 — 性平,能養心安神、健脾止瀉及補腎固精。
蓮藕 — 性寒,有清熱解渴、止血化痰、養胃滋陰的功效。
蓮梗 — 又名荷梗,性平,有解暑清熱、理氣化濕、通氣寬胸、和胃安胎作用。
荷葉 — 又名蓮葉,性平,具解暑熱、清頭目、止血及降脂減肥功效,多數曬乾使用。
Make full use of lotus
Lotus root is a popular seasonal food during fall. Lotus root is basically the root stock of the lotus plant. When the lotus flower withers, the receptacle becomes the seedpod that carries lotus seeds. Another edible portion is the lotus stem and the lotus leaves that helps to lower fat for weight loss. Every part of this plant has different effects and taste.
Lotus flower- mild in nature, can disperse bruise and stop bleeding, dispel dampness and wind. Usually used to make tea.
Lotus seeds- mild in nature, can calm the mind and heart, strengthen the spleen and relieve diarrhea, replenish the kidneys.
Lotus root- cold in nature, can clear heat and relieve thirst, stop bleeding and relieve phlegm, nourish the stomach and yin.
Lotus stem- mild in nature, can relieve summer heat, regulate qi and dispel dampness, improve qi circulation, calm the stomach and stabilize pregnancy.
Lotus leaves- mild in nature, can relieve summer heat, stop bleeding, lower lipids and aid in weight loss. Usually used in dried form.

近年不少花店都有香料和可食用的花草盆栽售賣,大可買幾盆回家栽種,又或是從種子開始種起,美化家居之餘,亦因自己種的可確保不添加農藥,能夠用來簡單自製清香花草茶!
自製花草茶小貼士:
-適合在家中種植的香草和花卉:香茅/薄荷/迷迭香/甜菊/洋甘菊/茉莉/玫瑰/紫蘇
-茉莉、玫瑰、洋甘菊等花卉可以在摘下來後以水浸泡5-10分鐘,再以清水沖洗瀝乾,再把花瓣放到烘乾機使其乾燥即成。
-甜菊本身帶甜味,可用以代替糖分
-不建議將買回來的單枝花卉烘成乾花飲用,因為不確定農藥的成分多少
-添加少許新鮮香茅、薄荷葉及迷迭香可為花茶增添香氣
-香草類無不需太多水分,排水和通風要多加注意
Home-grown floral tea
In recent years a lot of florists have started selling herbs and edible plants. Try buying some home to plant or even start with seeds. It's a great addition to your home decoration and you can ensure your flowers don't have pesticides when you make your floral tea!
Small tips for home grown floral tea:
- flowers and herbs suitable for home: lemongrass, mint, rosemary, stevia, chamomile, jasmine, rose, basil
- for jasmine, rose and chamomile, you can soak it for 5-10 and rinse with water. Then dry the petals in an oven.
- stevia is sweet and can be used to replace sugar
- we don't recommend buying one flower to use as you don't know how much pesticide is on it
- add in small amounts of lemongrass, mint or rosemary can increase the aroma of your tea
- herbs don't need a lot of water, so pay attention to your water and air circulation when planting

Benefits of Chia Seeds
1) Chia seeds are naturally low in carbs and high in fibre! 2 tbsps. provide you with the 11g of fibre, which is almost half of the daily recommendation.
2) Because of all the fibre, chia seeds can absorb up to 10 times their weight in water, becoming pudding-like and expand in the stomach when eaten, which keeps you feeling fuller for longer.
3) Hence, it’s often recommended to those who want to lose weight, curb hunger and reduce food portion.
4) The high fibre content will also provide you with sustained energy throughout the day.
5) Consuming chia seeds prior to workout can also boost workout performance for up to 90 minutes. Instead of consuming those sugar-laden energy drinks, eat chia seeds instead.
6) Chia seeds are also ranked amongst the top plant based source of protein, omega-3 fatty acid and calcium.

Simple mix in about 1 tbsp. of chia seeds to 2 cups of liquid of your choice. Let it sit for about 15 minutes or overnight for the chia seeds to expand. If you want to, you can either sweeten with a little bit of honey or maple syrup, add lemon slices or ice cubes and enjoy them chilled!

Ochazuke (or Chazuke) is a simple dish made by pouring green tea, Dashi broth, or hot water over cooked rice with toppings. It is a quick dish that we make home with ingredients available. There is no specific recipe for it :)
However, I am constantly receiving many requests for Ochazuke recipe, so I will show you my ideas, so that you can get an idea how to make your own Ochazuke! ENJOY!!!

Ochazuke Ideas (Japanese Green Tea Over Cooked Rice)

Time: N/A
Number of servings: 1
Ingredients:
#1 Shiso Kombu Chazuke (for vegetarians)
1 bowl of rice
shredded shiso leaves
Fujikko Shio Kombu Salted Kelp
toasted white sesame seeds
Dashi broth, green tea, hot water, or etc
#2 Ume Chazuke (for vegetarians)
1 bowl of rice
shredded Nori seaweed sheet
chopped green onions
Umeboshi (pickled plum)
toasted white sesame seeds
Dashi broth, green tea, hot water, or etc
#3 Sake (Salmon) Chazuke
1 bowl of rice
Salmon flakes
chopped green onions
julienne strips of ginger
thinly sliced Myoga (Japanese ginger)
toasted white sesame seeds
Dashi broth, green tea, hot water, or etc
#4 Tai (Red Sea Bream) Chazuke
1 bowl of rice
4 slices red sea bream Sashimi
1 tbsp. soy sauce
1 tbsp. ground white sesame seeds
chopped green onions
Wasabi
Dashi broth, green tea, hot water, or etc
Directions:
1. From #1~#3, place the toppings on top of a bowl of rice, then pour over some green tea to eat.
2. #4, marinate the red sea bream Sashimi in soy sauce for about 30 minutes. Remove from the marinade then coat with ground white sesame seeds. Place the fish on top of a bowl of rice, sprinkle with some toppings, then pour over some Kombu Dashi to eat.
