today we went for Spanish Cuisine called "LA Paloma" it's a very Authentic Spanish Cuisine in Hong Kong & La Paloma in Spain means 'Pigeon'
the owner Chef here "Alex Fargas" is a very friendly nice person and you can see he's passion for his food & also there's staff are friendly as well. When we goes into the restaurant it is very spacious of 3400sq. ft
space and the decor. of the interior is colorful with relaxing atmosphere, they have bars, small balcony with greens.
We can spend few hours here feels like we are in Spain

早前提及,富衛1881公館 The Steak Room 行政總廚 Calvin Choi 加入前在洲際酒店 Spoon by Alain Ducasse 及米芝蓮一星餐廳 STEAK HOUSE Winebar + Grill 效力。以前洲際的 STEAK HOUSE 我沒拜訪過,以為從此沒有機會,今次在富衛1881公館重遇,有口福兼有福氣!
當年洲際扒房基本架勢如「刀陣」、「鹽陣」在此一概俱全 ,好多人為它而光顧的超大 chocolate fondant 亦重現。正如飲食界行內人私底下所言,要享受美食,並不是食裝修、食名氣,事實應該「食個廚」——「總廚」才是美食的靈魂。

3-Ingredient Churros
Difficulty: Very Easy
Time: 20min
Number of servings: 4
Ingredients:
200g (7oz.) Hot Cake Mix
100g (3.5oz.) soft Tofu
1 egg
Directions:
1. Put everything in a bowl and mix well.
2. Put the batter in a pastry bag fitted with a large (0.6inch) star tip, then pipe out onto the parchment papers.
3. Deep fry in oil at 180C (350F) until crisp golden brown.
4. While warm, dust with cinnamon sugar or sugar to finish.
You can bake in oven at 180C (350F) for 15 minutes.

Resepi Churros Bersama Sos Coklat
Bahan-bahan (Churros)
100 gm mentega
275 ml air
150 gm tepung gandum
2 biji telur
1/2 sk serbuk kayu manis
3/4 cwn gula kastor
1 sk esen vanila
Bahan-bahan (Sos Coklat)
1 cwn coklat gelap
1/2 cwn susu penuh krim
1 sb mentega
Cara memasak
1. CHURROS: Masak air seketika. Masukkan mentega dan tunggu hingga cair.
2. Masukkan esen vanila dan tepung. Gaul sehingga campuran menjadi doh.
3. Ketepikan dan biarkan ia sejuk seketika.
4. Masukkan telur satu demi satu dan gaulkan sehingga doh berkilat.
5. Masukkan doh tersebut ke dalam piping bag.
6. Paipkan doh ke dalam minyak yang panas dengan anggaran 2 inci panjang setiap satu dan gunting.
7. Goreng sehingga keperangan. Angkat dan toskan.
8. Pindahkan churros ke dalam bekas bertutup. Tuangkan gula dan serbuk kayu manis. Tutup bekas dengan penutup dan goncangkan sehingga churros disalut rata.
9. SOS COKLAT: Panaskan coklat, susu, dan mentega atas api sederhana sehingga cair sebati.
10. Sejukkan seketika. Sos siap untuk dihidangkan bersama churros.

Ingredients (Churros)
100 gm butter
275 ml water
150 gm wheat flour
2 nos eggs
1/2 tsp of cinnamon powder
3/4 cup of castor sugar
1 tsp of vanilla essence
Ingredients (Chocolate Sauce)
1 cup of dark chocolate
1/2 cup of full cream milk
1 tbsp of butter
Cooking methods
1. CHURROS: Bring water to a boil. Add in butter and cook until butter fully melted.
2. Add in vanilla essence and wheat flour. Mix until the mixture forming a dough.
3. Set aside and let it cool for a while.
4. Add in eggs one by one and beat until dough is shiny.
5. Place the dough inside a piping bag.
6. Pipe dough into hot oil with estimation of 2 inch long for each dough and snip off.
7. Deep fry until golden brown. Lift up and drain.
8. Transfer churros into a container. Pour in sugar and cinnamon powder. Close the lid and shake well until churros are fully coated.
9. CHOCOLATE SAUCE: Heat chocolate, milk, and butter over medium heat until fully melted and well-combined.
10. Let it cool and chocolate sauce is ready to be served with churros.

Hi, everyone. :) Today we'll show you how to make the most hottest dessert : Basque Burnt Cheesecake from La Viña, also called Tarta De Queso.
Basque Burnt cheesecake originates in a spanish food bar called La Viña which located in Basque Country of Spain, since 1906’, hence the name. It’s very simple, no biscuit of sponge base. It’s baked at a very high temperature to make it a beautiful caramelised exterior, but creamy, rich and flavorful inside.
This recipe comes from La Viña, but we make a little bit different in ingredients. This burnt Basque cheesecake is possibly the easiest cake you will ever make, hope you enjoy. Thank you for watching.

Basque Burnt Cheesecake from La Viña Recipe
☞ we use 7" (17.78cm) round baking mold
✎ Ingredients
cream cheese 450, room temp
sugar 135g
heavy cream 225g
large egg 3, room temp
cake flour 11g
vanilla extract 5g
lemon juice 10g
✎ Instructions
1. Cut the cream cheese into cubes to help it soften more quickly. Leave them at room temperature until soft.
2. Line with 2 layers of parchment, cut the parchment and make sure paper comes 1.5"~2" hanging off the sides of the pans.
3. Beat cream cheese in medium low speed until very soft, then add sugar and keep beating until smooth and sugar has dissolved.
4. Add eggs one at a time, beating each egg until mix well before adding the next one. Don't forget to scrape down sides of bowl to ensure nothing sticks to the sides.
5. In another bowl, sift flour and then pour some heavy cream, mix until smooth, then add the rest of heavy cream and mix well.
6. Pour the heavy cream and flour mixture into the cheese mixture, then add the vanilla and lemon juice, and continue to beat on low speed until batter is very smooth.
7. Sift the batter and pour the batter slowly into prepared pan.
8. Preheat the oven to 220°C, and bake for 35-45 minutes.
9. Let cool slightly, then remove the mold and let cool completely. You can enjoy at a little warm or room temperature, or chill in refrigerator overnight.
