Baba au Rhum or Rum Baba. This post probably won’t please everyone but allow me to rant just once in 2019 🙏🏻. The Rum Baba with Caribbean French rum at 2 🌟🌟 Tasting Room was sensational & accurate, but for such a simple dessert often associated with Italy & France, only at here, RECH by Alain Ducasse HK & also Four Seasons HK’s Blue Bar have ever nailed it for me. For Tiramisu, I have never had a good one in HK, but as soon as u arrive in Italy it seems like every shop does it well 🤤😍. Souffles world belongs to Mandarin Oriental’s both Pierre & Mandarin Grill personally. For Madeleines, the only correct texture & taste I have tried locally are also RECH by Ducasse, Arbor & ex Chez Shibata. Might have missed a few or not tried so apologies on that. And I have almost given up eating shaved Truffles outside of Europe - over there you could smell it from 100m away in a 3 story tall dining hall, in HK you almost need to turn on a vacuum mode in your nose to smell some truffles. The most surprising thing in 2018 was that the best White Truffles experience I had was at a Cantonese restaurant at 1* Duddell’s. 1 time I had a Mille-Feuille in HK & it was so soft & wet, I could bend the pastry backwards & took a video to prove it - the chef blamed me back & said he saw me taking photos for too long that’s why it could emulate the Arc de Triumph with its backwards yoga move. Man anyone who knows me would know I only take a few pics within 30 seconds unless it’s super dark, I guess they just have never had a good Mille-Feuille in Paris Jacques Genin or Macau Robuchon au Dome - that is just sitting there on the dessert trolley waiting for happy customers all day too 🦍..
