上星期買左包香茅返黎,淨係用左2枝,仲淨左8枝在雪櫃,唔想雪到乾浪費左,可以做乜好呢?
一於來杯 #檸檬香茅薑茶 啦,可以 #舒緩風寒感冒,亦有 #驅寒袪濕 功效,加上蜂蜜,更為滋潤, #排毒美肌 。
材料:
香茅8枝
檸檬1個
薑粉適量 (因為屋企無生薑,改用了薑粉)
蜂蜜適量 (按個人喜愛)
做法:
1.香茅洗淨後剝走外2層,香茅身切段,香茅頭中間切開一刀
2.檸檬洗淨切半榨汁備用,檸檬亦留著備用
3.水滾後放入香茅用中火煲20分鐘
4.熄火後放入檸檬燜焗10分鐘
5.隔渣後加入薑粉拌勻
6.放涼後倒入檸檬汁拌勻(半個至1個檸檬汁份量)
7.再加入蜂蜜拌勻就可飲用了

不同的薑不同功效
說起薑,你可能只會想到薑就一定是溫熱,其實這不過只適用在我們最常用來驅寒的生薑,原來薑在不同的「歲數」也會有不一樣的功效和屬性,味道也不同!其實除了一般大大舊的肉薑外,還有小黃薑,也是生薑的一種,但顏色較深而且薑味較濃,不少老一輩都喜歡以小黃薑煲薑茶。
嫩薑﹣即是我們平常會吃到的子薑,皮的顏色仍然偏白,帶紫紅的皮,辣味較輕,而且多汁,有開胃醒肺的功效,主要作為行水及消水腫,屬性微溫,因此多在夏日時吃醃製的子薑來醒胃。
生薑﹣是我們最常用到的薑,也被稱為粉薑,是比嫩薑較老的薑。主要功效是暖胃止嘔、發汗散寒,舒緩風寒感冒、脾胃虛寒、及暖宮。至於薑皮則可利水消腫。
老薑﹣待薑老化後才採掘的就是老薑,由於薑肉纖維化,相對較多渣,皮呈灰土色,但薑愈老的辣味就愈濃,屬性為熱,驅寒的功效特別強,最可令身體提升體溫和代謝。
薑母﹣當老薑繼續生長不採掘的話,明年就會有新子薑在旁長出,這時候的薑就是薑母。薑母屬性溫,同樣有驅風散寒的作用,對調經止痛及活血化瘀特別有用,所以台灣人傾向以薑母入饌調經。
Healing effects of different types of ginger
You probably just think of warmth when it comes to ginger. But actually, ginger of different ‘ages’ have different taste, effects and nature. Aside from the usual ginger you see, there is also small turmeric which is a type of raw ginger. They are darker in color and have a stronger flavor, a lot of people like to make ginger tea with that.
Tender ginger- this ginger’s skin is still quite white. Those with hint of purplish red skin will be spicier and juicier. Has healing effect of stimulating appetite, helps to promote fluid circulation and reduce water retention. They are slightly warm in nature and usually pickled in the summer time as an appetitive.
Raw ginger- this is the most common type of ginger and it’s slightly more aged than tender ginger. It can warm the stomach and relieve vomiting, promote perspiration and dispel cold. Helps to relieve cold-wind flu, weak and asthenic spleen and stomach, and warm the uterus. The ginger skin can promote diuresis and relieve water retention.
Aged ginger- this ginger is harvested after its been aged. The meat has more fiber and the skin is darker brown in color. The older the ginger the spicier it is and it is hot in nature. It has a stronger effect to dispel cold and helps to increase body temperature and metabolism.
Ginger mother- if you let aged ginger continue to grow without harvesting, new ginger root will grow on the side of it and this is now a ginger mother. Ginger mother is warm in nature, can also dispel wind and cold. It is especially suitable for relieving menstrual pain and promotes blood circulation to relieve bruising. It is commonly used in Taiwan as a way to regulate menstruation.

蔥蒜屬五辛類,在中醫角度而言,是屬辛溫,有助發汗的食物。假如你是因風寒而引起外感,吃一點蔥蒜可以有利陽氣生發,祛風散寒,可以有助舒緩因風寒引致的初發感冒。但要注意,正因這類辛辣食物辛溫,吃多了有可能會令身體積熱,而你本身又是體質偏熱,屬陰虛火旺的人,就不適合了。不同的五辛有不一樣的功效,但主要都可發汗。
大蒜﹣性溫。有行氣、暖脾胃及開胃健脾的功效。能舒緩初起的風寒感冒、食滯等症狀。可生食或煮粥。
洋蔥﹣性溫。有發散風寒,行氣化痰的功效。蒸洋蔥水這偏方較能舒緩風寒感冒的症狀如怕冷無汗、鼻塞流清涕,相反發燒、咽痛、有黃痰者未必適合。
蔥﹣性溫。有發汗解表,通陽氣散陰寒的作用,能舒緩初起的風寒感冒、鼻敏感、頭痛、胃寒等症狀。蔥白3條(只要白色部分連根洗淨),淡豆豉10克,500毫升水,水滾後煮10分鐘。
Consume these and sweat a bit
Onion and garlic are part of the five strong vegetables group. From a Chinese medicine perspective, they are acrid-warm in nature and helps to promote sweating. If you have a cold due to wind-chill, having some garlic or onion can help to stimulate yang qi, expel wind and cold, and relieve the beginning symptoms of a flu. It is important to note, due to the acrid-nature of these food, you may accumulate heat if they are over consumed. If you have a warmer-nature to start, and have yin deficient and excessive heat, then onion and garlic are not suitable for you. The five strong vegetables each have different effects but they can all promote sweating.
Garlic- warm in nature. Promotes qi circulation, warms the spleen and stomach, improves appetite and strengthens spleen. Relieves beginning symptoms of wind-chill flu and food stasis. Can be eaten raw or with congee.
Onion- warm in nature. Dispels wind and cold, promotes qi circulation and decrease phlegm. Steamed onion water can relieve symptoms of wind-chill flu such as aversion to cold without sweat, stuffy nose with clear mucus. It is not suitable for those experiencing fever, sore throat and yellow phlegm.
Spring onion- warm in nature. Induces sweating, activate yang qi to dispel yin chill. Relieves beginning symptoms of wind-chill flu, nasal allergies, headaches, and cold stomach.
3 Stem of spring onion (just the white portions with roots, rinse clean), 10 light fermented soy beans, 500g water, cook on high heat until boiling then simmer for 10 minutes.

食用禁忌 :
一歲以下小朋友,避免食蜜糖。由於幼兒的消化系統仍未發育完全,有可能引起腸胃不適等狀況
4) 香茅 3 枝
驅風、㪚寒、通絡、舒緩風寒感冒症狀、
材料:
1)香茅用刀背拍,切段,拿取香茅尾段
2)薑用刀背拍一拍更出味
3)青檸碌一碌,切片
4)水大滾,將香茅和薑放入鍋,焗大約15分鐘
然後熄火焗約 20 分鐘
5)略略放涼會,可以按自己口味加入青檸汁、加少許蜜糖 ,完成
(由於只取蜜糖滋潤功效、味道,所以少熱也不怕)
