西洋菜瑤柱伴鮮魷
材料:
家樂牌純鮮雞湯1升
西洋菜1斤
瑤柱10粒
蒜頭6粒
魷魚仔1斤
處理:
1. 西洋菜,用粗鹽2~3湯匙,放入清水浸15分鐘。
2. 瑤柱,清水沖洗乾淨,用雞湯浸1小時以上。
3. 蒜頭,去皮。
4. 魷魚仔處理:
a. 取出魷魚鬚。
b. 取走軟骨及內臟。
c. 魷魚,貼住眼睛切去不要。
5. 魷魚仔,撕去表皮,清水沖洗乾淨。
6. 西洋菜已浸好,倒去水分,清水沖2~3次,擎乾水。
烹調:
1. 在鑊中加入清雞湯。
2. 加入瑤柱及蒜頭,大火煲滾。
3. 雞湯滾起後,撈起蒜頭及瑤柱。
4. 加入西洋菜,冚蓋。
5. 滾起後,攪動一下西洋菜。
6. 西洋菜已煮至軟身,夾起放碗中,擺好。
7. 放好瑤柱及蒜頭在西洋菜上。
8. 大火再滾起雞湯,放魷魚灼至大滾,撈起,熄火。
9. 雞湯沿碗邊加入。
10. 魷魚筒整塊齊排好,圍住瑤柱及蒜頭。
11. 完成,可享用。

Knorr clear chicken broth 1L
Watercress 1 catty
Dried scallops 10 Nos.
Garlics 6 Nos.
Baby squids 1 catty
Preparation:
1. Watercress, soak in tap water with cooking salt 2~3 tbsp, for 15 minutes.
2. Dried scallops, rinse with tap water. Soak in clear chicken broth for an hour or more.
3. Garlics, get it peeled.
4. Baby squids:
a. Take out its tentacles.
b. Take out its backbone and intestines.
c. Squids, cut away their eyes.
5. Baby squids, tear away its skin. Rinse with tap water.
6. Watercress has been soaked well. Pour away water. Rinse 2~3 times, hang dry.
Steps:
1. Pour clear chicken broth into wok.
2. Put scallops and garlics. Heat up at high flame.
3. Clear chicken broth has been boiled up, pick up garlics and dried scallops.
4. Put watercress. Cover up the wok.
5. Stir the watercress after boils up.
6. Watercress has been cooked well. Pick up and put in a big bowl. Put in good shape.
7. Put dried scallops and garlics on top of waterctess.
8. Heat up the clear chicken broth at high flame again in wok. Add baby squid and boils up. Pick it up and turn off fire.
9. Pour the clear chicken broth alongside the bowl.
10. Squids are to be put surrounding the dried scallops and garlics.
11. Complete. Serve.

舞茸海蝦金菇豆腐鍋:
材料:
家樂牌純鮮雞湯1盒
舞茸菇(乾身)40克
金菇1札
大蝦8隻
豆腐1磚
薑6片
處理:
1. 舞茸菇,清水浸30分鐘或以上。
2. 大蝦,逐隻清水沖洗乾淨,擎乾水。
3. 金菇,除去膠袋,切去尾部,開住水喉,沖洗乾淨,揸乾水,放碗中。
4. 舞茸已浸好,揸住舞茸,開住水喉,沖洗乾淨,擎乾水。
烹調:
1. 薑片及豆腐,放入鐵鍋中,加入純鮮雞湯,大火煮滾。
2. 煮滾後 ,加入舞茸菇、金菇及大蝦,雞湯加至滿鍋,冚蓋,大火煮滾。
3. 完成,可享用。

Ingredients:
Knorr clear chicken broth 1 box
Maitake mushrooms (dried) 40g
Enoki mushrooms 1 pack
Prawns 8 Nos.
Tofu 1 cube
Ginger 6 slices
Preparation:
1. Maitake mushrooms, soak with tap water for 30 minutes or more.
2. Prawns, rinse one by one with tap water. Hang dry.
3. Enoki mushroom, remove the plastic bag, cut its ends, rinse under running tap. Rinse thoroughly, squeeze it then put in a bowl.
4. Maitake mushroom has already been soaked well. Hold it and rinse under running tap. Hang dry.
Steps:
1. Ginger slices and tofu, put in a skillet bowl, fill in clear chicken broth. Boil it up at high flame.
2. Put maitake mushrooms, enoki mushrooms and prawns after boils up. Fill chicken broth to full volume of the bowl. Cover it up and wait for boiling up.
3. Complete. Serve.

胡椒排骨芥菜湯
材料:
排骨1斤
芥菜膽1斤
白胡椒粒2湯匙
薑2片
白果2湯匙
腐竹2塊
處理:
1. 排骨,用粗鹽醃4小時或以上。
2. 排骨,大火煲1煲滾水,出水2分鐘,擎乾水,清水沖洗乾淨,放入煲。
3. 白果,去殼,放碗中,加入滾水,放入微波爐,焗40秒,倒去滾水,清水浸,就可以容易去皮,放入煲。
4. 腐竹,清水洗淨,放入煲。
5. 薑,洗淨,拍鬆,放入煲。
6. 白胡椒,磨碎,放入煲。
烹調:
1. 加入清水4升落煲,大火煲滾。
2. 大火滾起後,轉中慢火,煲1小時。
3. 芥菜,切開一塊塊,逐塊清水洗淨。
4. 湯已滾起,轉中慢火,煲45分鐘。
5. 湯已滾了45分鐘,放芥菜,轉大火煲15分鐘。
6. 滾了15分鐘,完成,可享用。

Ingredients:
Porb ribs 1 catty
Mustard 1 catty
White peppercorns 2 tbsp
Ginger 2 slices
Ginkgo 2 tbsp
Bean curd 2 sheets
Preparation:
1. Pork ribs, season with cooking salt for 4 hours or more
2. Pork ribs, heat up a pot of water at high flame, soak for 2 minutes. Hang dry. Rinse thoroughly. Hang dry. Rinse with tap water. Put into pot.
3. Ginkgo, get it peeled. Put in a bowl. Pour boiled~up water in the bowl. Microwave for 40 seconds, pour away water. Soak with tap water, this will help to remove its skin. Put into pot.
4. Bean curd, rinse with tap water. Put into pot.
5. Ginger, ger it rinsed. Beat well. Put into pot.
6. White peppercorns, get it grinded. Put into pot.
Steps:
1. Heat up water 4L in pot at high flame.
2. Turn to medium~low flame after boils up. Cook for 1 hour.
3. Mustard, cut into slices. Rinse with tap water one by one.
4. Soup has been boiled up. Turn to medium~low flame. Cook for 45 minutes.
5. Soup has been cooked for 45 minutes, put mustard, cook at high flame for 15 minutes.
6. Soup has been cooked for 15 minutes. Complete. Serve.
