[圖說研究#3 商業及自製洗劑去除蘋果表皮及蘋果中農藥的效果]

身為一個時常自己開伙的煮婦🍳🍲，
我在做菜時最討厭的步驟就是：洗菜🚿🥬！！！
每次一葉一葉的洗，
總感覺洗到天荒地老還洗不完~

去年隊友提供了這篇paper，
說泡小蘇打水就可以達到不錯的去除農藥成效，
但是因為這篇paper用的研究方法有點困難，
所以一直被我丟在一旁沒有仔細研究。

前幾天我心血來潮上網搜尋了一下，
發現幾乎所有的網路文章都說小蘇打可以去除農藥是迷思，
立刻質問了隊友一下，
"網路上很多專家都說用小蘇打可以洗掉農藥是迷思耶！
為什麼你要我用小蘇打洗！！！"
（瞬間變成無腦大嬸🤪）
隊友無奈地說："paper都給妳了，為什麼妳不看？"
所以我終於好好看完了，並將研究整理與麵粉們分享~
（研究中偵測農藥的方式真的太複雜所以不在這邊解釋，
有興趣的人可以去找原始paper來看喔！）

⭐研究目的：
了解市售洗劑以及幾種家庭常見的清洗水果方式對於去除內吸性及非內吸性農藥的效果

⭐研究材料：

☠️農藥
內吸性農藥：Thiabendazole
選擇原因：常在作物採收後被用來當浸劑或噴劑
非內吸性農藥：Phosmet
選擇原因：可以控制多種害蟲

🧪商業洗劑：CLOROX
有效成分：次氯酸鈉

🍎蘋果：有機蘋果 Organic GALA Apple

⭐實驗方法：
在蘋果皮上滴上農藥，並放置30分鐘以及24小時

🧪商業洗劑洗法：
將蘋果放入200mL洗劑中，浸泡2或8分鐘，再用150mL去離子水清洗10秒
🧪小蘇打粉洗法：
同商業洗劑，但多一個浸泡12分鐘的組別
💧自來水洗法：
模仿一般人家中清洗的模式，用1.8公升自來水以每秒15毫升的速率沖洗2分鐘

所有清洗後的蘋果都在室溫風乾10分鐘💨
之後測量殘留的農藥量。

⭐結果：

表面殘餘農藥的部分，使用小蘇打水浸泡12分鐘的組別洗得最乾淨；
滲透到蘋果內部的農藥，使用小蘇打水浸泡8分鐘可讓殘留的農藥外移，也可以達到不錯的洗淨效果。

⭐結論：
使用濃度為10毫克/毫升（10公克/公升）的小蘇打水浸泡蘋果12分鐘後，再用自來水沖洗10秒，可達到不錯的去除農藥效果（針對Thiabendazole以及Phosmet這兩種農藥）。

⚠️⚠️⚠️並不是說小蘇打對所有農藥都一定會有同樣效果！⚠️⚠️⚠️
⚠️⚠️⚠️也不是說所有方法中用小蘇打洗就一定最好！⚠️⚠️⚠️

因為是單一研究，
而且研究中只使用兩種農藥，不能代表所有農藥的狀況，
但我認為還是可以提供大家作參考，
至少稍微替小蘇打洗刷一點點冤屈😆

看完研究覺得比較可惜的是，
研究設計中沒有使用自來水沖洗長一點的時間（只有2分鐘），
反觀小蘇打組的時間點最完善，有2、8跟12分鐘。
我自己蠻好奇如果用自來水沖洗得久一點，
或是也像小蘇打及洗劑一樣，泡一下再洗效果會不會更好？

因為這個領域的paper對我來說其實比較陌生，
