蕃茄雞蛋牛肉上海麪

材料：
蕃茄（大）4個
急凍金錢腱半隻
上海粗麪2個
雞蛋6隻
蔥1條

處理：
1. 大火煲滾1鑊水，放上海麪，水再滾起時，冚蓋，熄火，浸30分鐘。
2. 牛腱，清水解凍。
3. 牛腱解凍大約3分鐘，打橫切薄片，再用清水解凍。
4. 上海麪已浸了30分鐘，檢查一下是否已軟身，擎乾水，清水沖洗乾淨，擎乾水。
5. 牛腱已完全解凍，清水沖洗乾淨，擎乾水，廚紙索乾。
6. 牛腱調味：
a. 生粉1湯匙
b. 油1湯匙
c. 胡椒粉半茶匙
d. 蠔油1湯匙
e. 糖半湯匙
撈勻。
7. 蕃茄，去椗，1開4。
雞蛋，打在碗內，打勻。
蔥，洗淨，切粒。

烹調：
1. 白鑊，大火，加入蕃茄爆香1分鐘，加入清水2湯碗（約800毫升）。
2. 加入調味料：
a. 雞粉1茶匙
b. 糖1茶匙
c. 茄汁100毫升
大火煮滾。
3. 加入上海麪。
4. 另一邊鑊，大火燒熱油2湯匙。
5. 倒入蛋漿，四面推至凝固，放上碟。
6. 麪已滾起，加入牛腱，再大火滾1分鐘。
7. 夾起麪，放入湯碗內。
8. 放好蕃茄及牛肉，加入滑蛋。
9. 注入蕃茄濃湯。
10. 放上蔥粒。
11. 完成，可享用。

Beef Shanghainese noodles with tomatoes and eggs

Ingredients:
Tomatoes (large) 4 Nos.
Frozen golden coin muscle half No.
Shanghainese noodles (thick) 2 Nos.
Eggs 6 Nos.
Green onion 1 No.

Preparation:
1. Heat up a wok of water at high flame. Put noodles. Wait for boiling up. Cover up the wok. Turn off fire. Soak for 30 minutes.
2. The beef, defrost in tap water.
3. The beef has been defrosted for 3 minutes, thinly slice it horizontally. Defrost in tap water again.
4. The noodles have been soaked for 30 minutes, check if it is soft. Drain. Rinse thoroughly. Drain.
5. The beef has been totally defrosted, rinse thoroughly. Drain. Dry with kitchen towel.
6. Season the beef:
a. Tapioca starch 1 tbsp
b. Oil 1 tbsp
c. Pepper 0.5 tsp
d. Oyster sauce 1 tbsp
e. Sugar 0.5 tbsp
Mix well.
7. Tomatoes, remove anchors, divide each into 4 shares.
Eggs, break in a bowl. Beat well.
Green onion, get it rinsed and diced.

Steps:
1. Plain wok, with high flame. Put tomatoes, fry for a minute at high flame. Add in 2 big bowls of water (about 800ml).
2. Add seasoning:
a. Chicken powder 1 tsp
b. Sugar 1 tsp
c. Tomato ketchup 100ml
Heat up at high flame.
3. Add in noodles.
4. On the other side, heat up oil 2 tbsp at high flame in wok.
5. Add in egg syrup, push to the centre of wok until it gets condensed. Put on plate.
6. Noodles have been boiled up, add in beef. Heat up at high flame for a minute.
7. Pick up noodles and put in a big bowl.
8. Put tomatoes and beef on plate in good order, add in scrambled eggs.
9. Pour in tomato thick soup.
10. Put green onion cubes on top.
11. Complete. Serve.

I didn’t meet my father until I was 6 years old. My parents had a comfortable, middle-class life in Shanghai, or as close as you could get under communism. But they always wanted to live overseas, and just before I was born, my dad came to Sydney to set things up. I don’t know why, but in the end, my mother and I didn’t join him until I was 6.

ชอบวิชวลการสร้างสัตว์ประหลาดใต้น้ำ ว้าวจริงจัง ถึงจะไม่เห็นหนังอ้างอิงแต่เราคิดว่าคงได้อิทธิพลมาจาก เอช. พี. เลิฟคราฟท์ ชัดเจน ฟีลเหมือนตอนดู Godzilla (2014) ที่นั่งลุ้นอยู่นานว่าเมื่อไรจะได้เห็นสัตว์ประหลาดเต็ม ๆ พอเห็นปุ๊บรู้สึกคุ้มค่าที่รอเลย ดีนะหนังยาวแค่ชั่วโมงครึ่ง ถ้ายาวกว่านี้อาจรอไม่ไหว ฮ่าๆ

นาน ๆ จะเห็นหนังเอาตัวรอดที่ไม่พูดถึงด้านมืดมนุษย์ ปกติหนังแนวนี้จะต้องมีตัวละครร้าย ๆ แย่งกันเอาตัวรอด ขุดสันดานดิบมาใช้กันสุดฤทธิ์ แต่ใน Underwater มันแบบทุกคนมีความรู้สึกผิด, เสียสละ, และพยายามช่วยกันตลอด พล็อตสั้น ๆ แค่ต้องเอาตัวรอดใต้ทะเลลึก ที่แม้บางส่วนของหนังจะเชย (จังหวะตุ้งแช่/บทที่ดูราบเรียบ) แต่ส่วนอื่นก็มาชดเชยให้น่าสนใจได้อยู่ (งานวิชวลสัตว์ประหลาด/พูดถึงความดีงามของมนุษย์ในหนังเอาตัวรอด) แล้วมันเป็นหนังที่เลือกจะไม่ใส่ปมให้ตัวละคร และยังดำเนินเรื่องแบบตัวละครไม่มีพัฒนาการเปลี่ยนแปลงเหมือนหลายเรื่องที่ต้องเพิ่มเส้นเรื่องดราม่าเข้ามาเสมอ ผลลัพธ์ที่ได้สำหรับ Underwater จึงเป็นการโฟกัสที่การเอาตัวรอดทีละสเต็ป โดยมีคุณธรรมในตัวมนุษย์เป็นแกนกลางของเรื่อง

禾輋街市，呀好買餸
雞翼牛脷魚麪鍋

材料：
魚陣營陣陣魚麪3個
至營百搭鮮魚湯1條
惠里豚牛奶泰國雞翼6隻
香港地牛脷2包
辣椒仔1隻
芫荽1棵

處理：
1. 雞翼，清水解凍，用廚紙索乾，加入調味料：
a. 胡椒粉少許
b. 蠔油1湯匙
c. 老抽1茶匙
撈勻，醃5分鐘。
2. 牛脷，拆開包裝保鮮紙，用廚紙索乾水分。
3. 辣椒仔，切粒。
芫荽，切碎。

烹調：
1. 大火在鑊中燒熱少量油。
2. 放牛脷在鑊內煎香，每面各煎大約10秒。
3. 加入少量黑椒鹽。
4. 夾牛脷上碟。
5. 在鑊中加入少量油。
6. 放雞翼煎香，兩面都略煎至金黃色，加入清水100毫升，冚蓋，炆至收汁就可以了。
7. 在湯鍋上剪開魚湯，加入清水500毫升，大火煮滾。
8. 魚麪預先放室溫解凍15分鐘。
9. 魚麪，放入魚湯煮滾。
10. 雞翼已炆至收汁，放上碟。
11. 魚麪已煮好，放好牛脷及雞翼在上面。
12. 放上辣椒粒及芫荽碎在麪上。
13. 完成，可享用。

Ox tongue fish noodles claypot with chicken wings

Ingredients:
Fish noodles 3 Nos.
Fish soup cube 1 No.
Chicken wings 6 Nos.
Ox tongue 2 packs
Chili 1 No.
Coriander 1 No.

Preparation:
1. Chicken wings, defrost with tap water. Dry with kitchen towels. Add seasoning:
a. Pepper little
b. Oyster sauce 1 tbsp
c. Dark soya sauce 1 tsp
Mix well. Season for 5 minutes.
2. Ox tongue, remove cling wrap. Dry with kitchen towels.
3. Chili, dice in cubes.
Coriander, chop well.

Steps:
1. Heat up little oil at high flame in wok.
2. Put ox tongue, fry well. Fry for 10 seconds on each side.
3. Add in little black pepper salt.
4. Put ox tongue on plate.
5. Add in little oil in wok.
6. Put chicken wings, fry well. Fry both sides of wings until they turn into colour of golden yellow. Add in water 100ml. Cover up the wok. Braise until the sauce becomes thick.
7. Unsealed the fish soup on top of pot. Add in water 500ml. Heat up at high flame.
8. Defrost the fish noodles in room temperature for 15 minutes.
9. Fish noodles, cook well in the fish soup.
10. Chicken wings, the sauce has been turned thick. Put on plate.
11. Fish noodles has been cooked well, put ox tongue and chicken wings on top.
12. Put chili and coriander cubes on top of noodles.
13. Complete. Serve.

Fish Noodles with Ox Tongues & Wings

冬瓜淡菜瑤柱湯

材料：
冬瓜1斤半
淡菜20隻
瑤柱4粒
薑4片
鹹蛋1隻
皮蛋1隻

處理：
1. 淡菜，清水浸20分鐘至軟身。
2. 瑤柱，清水沖洗乾淨，清水浸軟。
3. 冬瓜，洗淨表皮，放砧板上，用菜刀，小心切去表皮，保留表皮。
4. 冬瓜肉，1開4，除去籽，切細舊。
5. 皮蛋，連包裝袋，用菜刀輕拍蛋殼，取出皮蛋，清水洗乾淨。
6. 鹹蛋，加入少量清水在包裝袋內，用小刀刮去灰，清水洗乾淨，打在碗內。
7. 薑，去皮，切幾片。
8. 皮蛋，1開8。
9. 淡菜已浸好，取出中間異物。

烹調：
1. 大火在鑊中燒燒油半湯匙。
2. 爆香薑片。
3. 加入淡菜，炒一下。
4. 加入清水1升。
5. 加入冬瓜粒及冬瓜皮。
6. 加入瑤柱及瑤柱水，大火滾起。
7. 加入鹹蛋黃，大火滾起後，轉中慢火煲20分鐘。
8. 湯已滾好，夾起冬瓜皮及薑片。
9. 加入皮蛋及鹹蛋白，滾起。
10. 完成，倒入大碗內，可享用。

Mussels soup with winter melon and dried scallops

Ingredients:
Winter melon 1.5 catty
Mussels 20 Nos.
Dried scallops 4 Nos.
Ginger 4 slices
Salted egg 1 No.
Century egg 1 No.

Preparation:
1. Mussels, soak in tap water for 20 minutes until it turns soft.
2. Dried scallops, rinse with tap water. Soak in tap water until they turn soft.
3. Winter melon, rinse its skin, put it on chopping board, cut its skin with chopper carefully and retain its skin.
4. Flesh of winter melon, divide it into 4 shares. Remove its seeds. Cut into small pieces.
5. Century egg, beat its shell in plastics with chopper. Take out the egg. Rinse with tap water.
6. Salted egg, add in little water into the plastics. Scratch the ash with a small knife. Rinse with tap water. Break it into a bowl.
7. Ginger, peel and slice.
8. Century egg, divide it into 8 shares.
9. Mussels have been soaked well, take out sea plant inside.

Steps:
1. Heat up oil 0.5 tbsp at high flame in wok.
2. Fry ginger well.
3. Put mussels, fry for a while.
4. Add in water 1L.
5. Add in winter melon cubes and skin.
6. Add in dried scallops with its syrup. Heat up at high flame.
7. Add in salted egg yolk. Heat up at high flame. Turn to medium~low flame after boils up. Boil for 20 minutes.
8. Soup has been cooked well, pick up the skin of winter melon and ginger slices.
9. Add in century egg and salted egg white. Boil it up.
10. Complete. Pour into a big bowl. Serve.
