Palate:葡萄酒、櫻桃在前端,大量的油脂帶了許多的蠟質感,葡萄柚皮和成熟的桃子、李子和蜂蜜甜,清楚的果皮單寧感,許多草藥和帶著刺激的肉桂、荳蔻、八角等辛香料,再浮出一些甘草甜,淡淡的煙燻漂浮在尾端
Finish:中~長,藥草、荳蔻、八角,微甜的甘草、蜂蜜
Comment:歷經了這麼多年的訓練之後,人的喜好依舊難以更改,所以我還是不習慣紅酒桶過桶。比較奇妙的是從櫻桃風味轉變成尾端的藥草味,以及殘留在舌面上的蠟質,但清冽的香氣很舒服,尤其適合夏日,但今晚的氣溫持續往下掉……

Nose:穩重的奶油油脂下,浮出成熟多汁的桃子甜,少許煮熟的紅棗、逐漸清楚的蜜李,輕燒烤橡木桶緩慢增濃,一點點巧克力,時間拉長後,略帶鹹味的蜜餞、烏梅、炭烤、煙燻,還有一陣陣奇妙的菜脯,也太複雜了吧
Palate:非常豐腴的奶油油脂微帶點蠟質,淡淡的鹹味下,大量的甜桃隱藏著微微的桃核苦,輕蜂蜜後慢慢吐露出甜白酒氣息,胡椒、荳蔻種種辛香料刺激,年輕的木質單寧,少許燒烤橡木桶,烤土司、咖啡
Finish:長,一絲微妙的貴腐葡萄纏捲在口舌之間,久久不去,淡淡的咖啡、烤土司和麥芽甜
Comment:一開始的香氣很是清淡而不夠清晰,讓我有點失望,但隨著時間拉長,許多閒閒的蜜餞和橡木桶煙燻越來越盛,顯然需要時間甦醒。但入口的風味絕妙,貴腐酒的特殊香氣隱約、纏捲而無法讓人不注意,越是注意則越驚豔,不免一口接一口的追逐。簡單結論:超過20年的Teeling至今從未叫我失望!

This was officially the most decadent dinner of Christmas 2020 thus far - a night of luxurious excesses, and a surprise celebration. 🥰
The bestie ordered and cooked both the Australian & Japanese Wagyu 🥩from Pan's Fine Cuts for dinner (seriously good, I hear they carry excellent cuts, are located in Tiong Bahru & do deliveries too, do check them out if you’re a fan of cooking steaks at home!).
To accompany the steaks, we first cracked open🍷a Marcel Lapierre Beaujolais from WEA Wines, then did a side-by-side comparison ⚖️ between the Chateau Siran Margaux 1982 (Fine Wines SG) & 2014 (Enoteca Wine Shop). The 1982 was the less tannic of the two, so I definitely preferred that!
Dessert was the surprise birthday “cake”! Knowing my preference for savoury over sweet, the bestie somehow managed to score the Le Matin Christmas special - the Kombu Tart. 😍 The balance of kombu, toffee and cardamom is 🙌. (Sorry, it was a festive special, and is currently out of stock!)
I found that the tart went really well with the Black Tears Cuban Spiced Rum, which tasted distinctly like coffee liqueur, so so good. We also tried Yellow Spot Irish Whisky, The Maltman Scotch Whisky, Edradour Sherry Cask & the Yamazaki Limited Edition 2014. Thankfully, I poured my own portion of whisky, and was able to control how much I had, despite not being able to control the number of bottles we opened. 🤣
Definitely had way too much food & drink, but it was so worth it. Thanks for a great night babe (you know who you are), it ain’t bad turning a year older soon, as long as you’re in my life! 😘
