Anh thích Ốc Hút
When my friend Nickie Tran txts me đi ăn I never say no. It’s a trifecta win, đi chơi with Nickie, eating ngon mon ăn Vietnamese and learning about what I’m stuffing in my Mỹ mouth. We’re off to Bà Hoa market in search of Ốc Hút (screw snails). We slowly make our way to the rear of the market when Nickie spots what he wants me to eat, a dish called Ốc Đinh. It’s a regional variation of the dish Ốc Len that I’ve had before. The Chef is from central Vietnam and it reflects in her style of cooking. This variation of Oc Dinh can only be found here at the Bà Hoa (Chợ Miền Trung) market. Nickie speaks with the lady and then a bowl of Ốc Đinh is placed in front of me. Nickie reaches down, grabs a snail and says “Hút” as he slowly walks away leaving me to literally suck down my meal.
The Ốc Đinh broth is super fragrant with notes of coconut milk, lime leaves and Lemon grass. The snails are bathing in the broth while surrounded by floating fresh greens and tiny chunks of coconut. Visually it’s full of colors like burnt oranges, greens, whites and hues of golden browns from the glistening spiral shells. I bring a snail up to my mouth, pucker my lips and declare “Anh thích Ốc Hút “ ! The snail shoots from its shell in to my mouth as my throat is blasted with the broth. The Ốc Đinh broth is flavorful and refreshing where I remember the Ốc Len being slightly sweeter with a lot less texture and body. The snails have the mouth feel of a mushroom with a mix of flavors that come off as earthy, meaty and umami funky. It’s an interesting contrast the players well off the broth for sure. I nibble on a coconut shard as I realize how all the flavors come together at once like a tiny explosion when you inhale the snail from its shell.

酸菜魚:
材料:
鯇魚片一條
酸菜魚湯包
處理:
1. 鯇魚片,切雙飛。
2. 鯇魚片,粗鹽乸1分鐘,去除腥味。
3. 清水沖洗乾淨。
4. 用醃魚包及紹興酒1湯匙,醃5分鐘。
烹調:
1. 中火在鑊中燒熱少量油。
2. 爆香鹹酸菜包。
3. 加入1升水。
4. 滾起後,加入調味料包。
5. 再加入辣椒包。
6. 湯滾起,加入鯇魚片。
7. 至再滾起,試一試味。
8. 如覺得味道太濃,可加入滾水,至再滾起。
9. 放上碟,加入芫荽,完成。
Pickled fish in Taiwanese style:
Ingredients:
Grass carp fillet 1 No.
Pickled fish seasoning 1 No.
Preparation:
1. Grass carp, get it sliced.
2. Sliced grass carp, season with cooking salt and season for a minute to remove unpleasant smells.
3. Rinse thoroughly.
4. Season with the seasoning pack and Shaoxing wine 1 tbsp, season for 5 minutes.
Steps:
1. Heat up little oil at medium flame in wok.
2. Fry the bag of pickles.
3. Add 1L of water.
4. Put seasoning pack after boils up.
5. Add chili pack afterwards.
6. Put fish slices after the soup has been boiled up.
7. Taste it when the soup boils up again.
8. You can add boiled~up water into wok if you feel the soup is too salty.
9. Put on plate. Put coriander on top. Serve.

1st Layer - EDIBLE SAND
Use either graham crackers, wholewheat or digestive biscuits. Simple place the biscuits into a ziplock bag and crush it using a rolling pin or pastel until you get a sand like texture.
2nd layer - MOIST SOIL
3-ingredient Chocolate Mousse (serves 2)
1) 1 packet (300g) Silken Tofu
2) ¼ cup unsweetened Cocoa Powder
3) 2 - 3 tbsps. Maple Syrup or Honey
Blend all the ingredients until smooth. Pour into a bowl and chill in the fridge for 1 – 2 hours or until slightly firm.
3rd layer - DIRT
Chia Chocolate Muffins (makes 6)
1) ¾ cup Oat Flour
2) ¼ cup unsweetened Cocoa Powder
3) 2 tbsps. Nut Butter
4) 1 part of Chia Mixture: 1 tbsp. Chia Seeds + 3 tbsps. Water
5) ½ cup any Milk
6) 2 tbsps. Maple Syrup or Honey
7) 1 tbsp. Coconut Oil
8) ¼ tsp. Baking Soda
Steps
1) Pre-heat oven to 180°C / 350°F
2) In a large bowl, mix in all the dry ingredients, oat flour, cacao powder and baking soda.
3) In another bowl, mix in all the wet ingredients, milk, chia mixture, coconut oil, maple syrup, and nut butter. Stir until well combined.
4) To make the batter, pour the wet mixture into the dry mixture. Stir until you have a thick and consistent batter.
5) Scoop the batter evenly into 6 muffin tins. Bake for about 15 minutes, until the muffins are cooked through.
6) Allow them to cool down to room temperature and just use your hands to break up the chocolate muffins in chunky crumbles.
4th layer - TOPPINGS
1) Crushed Pistachios
2) Chocolate Covered Nuts and Raisins
3) Edible Chocolate Stones
4) Edible Flowers
STEPS
1) Take about ¼ to 1/3 cup of the crushed biscuits to make the "sand" layer. Spread it out evenly.
2) Next it’s the moist soil. Scoop the chocolate mousse and gently layer it on top of the sand.
3) Let’s put some “dirt” on, which will be the chocolate muffin crumble. Use about 1 - 2 muffins.
4) Now that you have all three layers, let’s decorate it! Sprinkle some crushed pistachio to mimic the “grass”. Then arrange the edible rocks and also chocolate covered nuts and raisins. And for the final touch, place your flowers right in the middle.
And there you have it, a healthy edible chocolate terrarium you can make and gift your family and friends. It’s simple, it’s stunning, it’s healthier and hey, YOU made it!
