Sharing a favorite pizza dough recipe for you to explore with your littles this week!
It makes up a large batch of dough (all the work/clean up once!!) and you can freeze it - allow to rise again after defrosting - or our favorite thing to do is to split the dough into 3 portions.
1 for pizza, 1 for pull-apart monkey bread (butter and cinnamon sugar), 1 for garlic parmesan knots (butter, garlic, herbs, and cheese!)
Super yum, super fun, super fuss-free.

HOMEMADE PIZZA DOUGH
2 1/2 cup warm water
1 tsp sugar
2 tsp yeast
7 cup flour
1 1/2 tsp salt
6 tbsp olive oil
1. In a bowl, combine yeast, sugar, and warm water and set aside until it bubbles.
2. In a mixer w kneading hook or by hand, combine flour and salt together before adding the rest of the ingredients. Knead for 10 mins until dough springs back when touched.
3. Coat dough in olive oil, cover and set in a warm place to rise for 1 hour (or overnight)
4. Punch out air and knead again. Separate into portions and allow to rise again for another hour.
5. When ready to assemble, preheat oven to the highest temperature and bake until cheese is bubbly and crust is browned to your preference.

THIS IS ACTUALLY A PIZZA!!!
First recipe of the Page and something you can do with your kids! A braided pizza stuffed with smoked salmon.
Basic Pizza Dough
800g Strong Bread Flour (Preferably unbleached)
200g Whole Wheat Flour
16g dried yeast
100g Polenta (for dusting)
630g warm water
50g olive oil (pomace will do)
1 teaspoon sugar
1/2 teaspoon salt
add some Flax and chia seeds if you like
Mix dry ingredients and wet ingredients separately. Mix together and knead well until elastic (around 10 minutes by machine). Place in a well oiled bowl and cover with a damp dishcloth. Prove in a warm place for at least 3 hours or overnight.
Roll Dough and use a pastry cutter to cut our diagonal strips but keep attached to rolled dough. Leave 2-3 inches in the middle uncut. Place smoked salmon, baby spinach and cottage cheese or whatever you like in the middle. Braid or weave strips. Curve the pizza to look like a fish. Paint on eggwash and bake at 230C for 12 minutes.
Remove and brush on some cottage cheese, free range mayonnaise or greek yogurt. Stick on sliced radishes to look like scales. And Voila!!!
YES!! The kids did all that in class and even got to learn about salmon!

【免揉麵包】5-min Artisan Bread
食材 Ingredients
.中筋麵粉 All-purpose flour 455g
.溫水(稍微高過體溫即可)Warm water 360ml
.鹽Salt 6g
.乾酵母 Granulated yeast 7g
作法Steps
.將麵粉 鹽 乾酵母混合 Mix flour, salt and yeast properly
.水分兩次加入 Add water
.拌一拌 Mix until mixture is moist with no dry patches
→完全不用揉 超省力~ No need to knead
.蓋上濕布Cover with a wet fabric
.室溫發酵兩小時 Let dough rise at room temperature at least 2 hours
.放入冰箱低溫發酵 Refrigerate dough overnight or at least 3 hours
.三小時後 After 3 hours
.麵團即可使用 The dough is ready
.要吃時取出麵團When ready to bake
.揉成自己想吃的大小 Cut off chunks of dough
.第二次室溫發酵半小時 Let dough rise at room temperature at least 30 mins
Bake 220℃ 15 mins
→外表脆皮,裡面有孔隙很Q彈!
The bread has a lovely crackly crust and is dense and moist with a distinct light sourdough tang.
→冷藏的麵團可保存兩個禮拜,所以一次做完麵團後可以分批烤,新鮮又可以做很多變化

【免揉麵團PIZZA】Use the same dough to make pizza
食材 Ingredients
.蒜油 garlic-infused olive oil
.番茄泥 Tomato paste半罐 1/2 can
.牛番茄 Tomato 1個
.月桂葉Bay leaf 1片
.鹽Salt
.黑胡椒Black Pepper
煮番茄醬Tomato sauce(4人份)
.將牛番茄切丁 Dice the tomato
.倒進蒜油 Add garlic-infused olive oil
.番茄泥 Tomato paste、牛番茄 Tomato、月桂葉Bay leaf 、鹽Salt、黑胡椒Black Pepper 全部丟進鍋中煮五分鐘 Mix it properly
.收汁 Thicken sauce
→木匙劃過 完全沒有水分 Until the sauce is not watery
作法Steps
.拿出麵團Cut off chunks of dough
.擀成扁平狀Flatten
.抹上番茄醬 Spread tomato sauce
.撒上起司 Sprinkle Cheese
.烤十分鐘 220℃ Bake 10 mins
.撒上九層塔 Sprinkle with basil for garnish、小番茄 Fresh tomato
