燉蛋比較流質,焦糖脆面做得未夠厚,蛋味幾濃🐣,雪燕量多,但冇特別嘅味道,算係有少少失望,有改善嘅空間。

去香港大家都必吃的煲仔飯,
疫情在家自己動手做起來吧!
鍋巴的形成其實不會太困難,
藉由土鍋本身的熱度來說,是非常容易形成的,
選擇臘肉或是香腸的時候,可以根據自己的喜好挑選肥瘦,
我通常都會挑選恰到好處的,想要鹹香一些,
臘肉多一些,想要香氣濃一些,臘腸就多一些~
|食材:
臘腸 4條
臘肉 1/2條
青江菜 2-3株
雞蛋 1顆
蔥花 適量
|醬汁調味品:
植物油 1匙
芝麻油 3匙
白米 250g 根據家裡人的份量決定,250g約3-4人份
醬油 2 茶匙
醬油膏 1 茶匙 如果沒有醬油膏,可以使用0.5的白砂糖替代
|作法:
1.先將土鍋內鍋抹上一層植物油,並將清洗好的白米瀝乾水份放入鍋內,加入1:1的水,浸泡1小時
2.浸泡的同時可以處理食材,將臘肉切成薄片狀(0.2-0.3公分)、臘腸斜切成片
3.一小時後,直接開大火將土鍋煮滾,沸騰後轉微小火再悶煮3分鐘
4.三分鐘後,在鍋邊淋上芝麻油,這是鍋巴形成的關鍵
5.加入臘肉與臘腸與青江菜、雞蛋,蓋上蓋子關火悶10-15分鐘
6.這時候來準備醬汁,醬油2茶匙、醬油膏一茶匙、芝麻油1茶匙、冷開水2茶匙,攪拌均勻
7.15分鐘後開鍋將醬汁淋入煲仔飯中,灑上蔥花,攪拌均勻即可出鍋。
