Lai Yee's Kitchen - Salted Duck Eggs
Years ago when I was in NYC, my Godsister Michelle had this jar of eggs with water inside. I was curious and found out she did her own salted eggs at home. So I have learnt this from her.
Super easy to prepare, just takes time to wait. Got to be patient. You need at least 3 weeks to a month before they are ready to be boiled and consume.
Ingredients :
. Salt 1.5 cups or more (u can roughly taste it yourself. It can be more)
. 1.5 litres of water or according to your jar's size
. Fresh duck eggs or chicken eggs
. 5 bay leaves
. 3 cinnamon sticks
. 4 star anise
- Boil the water and make sure the salt is all melted. Let it cool down totally before you put it in the jar with the eggs. I have added spices which my Godsis did not. Why not try out. Kan!
Glass jar is the best container to store. MUST be air tight. Dont open the lid during the process. Once they are ready, you can leave them in the jar still or leave them in the fridge. It is up to you.
