What’s one thing that comes to your mind when you think of Aaron? “His sweet smile” says Papa.
You always smile so cheekily! It’s like you have something up your sleeves. You would take a piece of tissue to clean the table. After 3 wipes, run to the bin and come back to proudly tell us “Throw”! We will tell you “Cannot waste! Yeye beat!” The playful you will beat your hand to show us how yeye would lightly slap your hand if he’s home.
Aaron is 18 months old! That’s 1 and a half years of you, my dearest sonshine. You still prefer to call me Mimi which is music to my ears! You can baby-call me “mimi” for as long as you like because I know that I will miss that baby you very soon. You are still speaking mostly 1 syllabus words and some new favorite words include, mei mei, kor kor, there, nice, car, bus, throw, bang, yes, no, piggy, bubbles, egg, bread and please! Bao bao is still ba ba now. You take instructions well, better on things that interest you - like making coffee with papa and we tell you “Want to cycle?” You will run to your shoe rack, take your helmet! You love car rides and the vehicles on the road. You will look out of the windows and very excitedly exclaim “Mimi mimi!”! I don’t even have to turn to know that you are pointing at the vehicle in front of us. You will only stop calling mimi after I have acknowledged you by saying “Oh yes, is that the bus, Aaron!” You will do a slow nod, with eyes closed and say mmm!
You are still unadventurous with food, extremely particular with appearance of food. You refused red bean pancake because it’s reddish black. Your favorite food are snacks and eggs - any way we prepare, you love it! Snack reward system hasn’t worked on you - to you, no means no.
You have 8 upper teeth and 8 lower teeth, which is 3 more lower teeth from last month! You are growing way too fast, my love. It’s such a dilemma, loving to see you meet milestones yet wanting you to grow up slow. Sigh… nonetheless, I’m enjoying all the time I have with you before we start you at preschool in January 2022, when you’re 2 years old. Happy 18 months old, Aaron boy. I love you so so much! My Minimalist workspace today.
Sometimes you have writing and podcast editing to do, and all you need is a small folding table, the 2021 iPad Pro with the M1 chip, an Apple Pencil, and the AirPods Max playing some Spatial Audio music from Apple Music’s Dolby Atomos tracks.
Oh. And some peace and quiet in the bedroom whilst the rest of the family occupies the living room for their WFH and HBL.
Some thoughts on the 2021 iPad Pro: it is wicked fast. That new M1 chip chews through any task I throw at it. Including video editing. The Liquid Retina XDR display is the best screen I’ve ever used on a tablet or a laptop.
The Center Stage feature of the iPad Pro’s new 12MP Ultrawide front-facing camera is also very neat for video conferencing as it digitally zooms in on your face and follows you as you move around. It’s like having your own cameraman.
My only gripe is that the camera is located to the side of the iPad Pro when you use it in landscape mode, and you may look like you are looking away, and not at members of your meeting, when you look at screen.
And the Thunderbolt 3 port on this iPad Pro means file transfers are going to be so fast. Slap a Caldigit TS3 Plus Thunderbolt dock on it and you have a desktop mode iPad Pro. All the ports you’ll need.
For folks who use a lot of Pencil work, like design, art and AR/VR, the iPad Pro with M1 chip is probably the best computing device for their needs.
I am wondering if I can even use it for a travel video editing tool in lieu of a MacBook Pro when work travel resumes. Hmmmm.

Hello friends! Today we're going to share with you how to make a classic Italian sweet buns: Maritozzi Con La Panna, sweet buns with whipped cream.
Maritozzi are gorgeous and delicious Italian cream buns. It's a kind of soft and light brioche style bun which is sliced in half, then filled with whipped cream! You can easy to get one in Rome's pastry shops or coffee shops. Usually people enjoy it with coffee for breakfast. Or even for afternoon tea.
Maritozzi buns are originally found in the Lazio region in Rome and date back to the Middle Ages. They're made with yeast, flour, egg, sugar, butter, honey, salt, and orange zest. There is a tradition that a boyfriend or future husband gives his lover these sweet cream buns as a sign of his love, or hides a ring inside the bun. So romantic. If you love cream buns, you need to try it. Enjoy :)

How to make Maritozzi Con La Panna
Maritozzi Con La Panna Recipe
☞ Yield: Serve 5
✎ Ingredients
bread flour 167g
unsalted butter 25g
granulated sugar 27g
medium egg 2
instant yeast 2.2g
salt 2.3g
honey 7g
an half orange zest
milk 45g
✎ Instructions
1. In a large bowl, add milk (room temp), a teaspoon of the total quantity of sugar and instant yeast and 15g of the total quantity of flour together, mix well to create a smooth paste. Cover with plastic wrap and let rest for 30 minutes in a warm spot.
2. Then add egg mixture, the remaining of sugar, honey and orange zest into the bowl, mix to combine.
3. Add the remaining of flour and salt, combine the ingredients, incorporating the flour bit by bit.
4. Transfer the dough to the work surface, the dough will be sticky but try not to add too much flour, a little is fine, just knead until it becomes a ball, it should come together nicely. You can use a scraper to collect the dough.
5. Add the softened butter, press the dough out in a way on the work surface to help blending the ingredients together, then scrape the dough back into the center, and continue to press the dough again until fully incorporated.
6. Next, use the slap and fold method to knead the dough, just pick up the dough and slap it down, then fold it over, and repeat again, until the dough is smooth and soft. You can also use a mixer for this procedure.
7. Place the dough ball in a bowl and cover with a plastic wrap in a warm place for about 2 hours or until doubled in size.
8. Turn the dough onto a work surface. Divide the dough into pieces of 55g for each. Degas them gently, rolling each bun into a small round shape. Place them one by one onto a baking sheet with baking paper. Cover with a tea towel or plastic wrap loosely, let them rise for 30 minutes in a warm spot.
9. When ready to bake, preheat the oven to 200ºC, brush the maritozzo with an egg wash and bake for about 12~14 mins, or until golden on top.
10. Once baked, let the buns cool completely.
11. Cut the bread in half without cutting through. Open slightly and fill with fresh whipped cream, and dust with icing sugar.
12. Enjoy.
