Ingredients:
• 2 lbs pork belly with skin
• 2 tsp Chinese spicy bake mix seasoning (swipe to see packet)
Ingredients to clean the pork belly:
• 1/2 tbsp vinegar
• 1 tsp salt
• 1/2 cup warm water
Steps:
1. Clean the pork skin and meat with the salt, vinegar and warm water mixture.
2. Rinse and pat the pork belly dry with paper towels.
3. Poke holes in the skin. Avoid poking the holes too deep into the fat/meat part of the pork belly. Wipe the skin again with a paper towel.
4. Place the pork belly on a plate. Meat side up and apply 1 tsp of the Chinese baking powder on the meat and the sides. Flip the pork belly over so the skin is on top. Apply 1 tsp on the skin. Refrigerate the pork belly uncovered for at least 4 hours.
5. Remove pork belly from the refrigerator and let it sit out at room temperature for about 30 minutes.
6. Preheat air fryer to 400F in the middle rack.
7. Place pork belly in a foil and securely wrap the foil to create an edge around the pork belly.
8. Place in the air fryer and cook for 40 minutes.
9. Remove the pork belly and move the rack to the highest level, closest to the heating element. Increase the temperature to 450 and cook for another 10 minutes or until desired crispiness.
10. Remove and cut into smaller pieces.

初生嬰兒需要多抱抱,令不少媽媽慘痛地患上「媽媽手」,手腕疼痛,不能彎曲及用力,痛到連毛巾都扭不到。「媽媽手」其實是橈骨莖突狹窄性腱鞘炎 ,是因為經常持久地外展拇指 , 導致手腕肌腱在不斷增厚而又狹窄的腱鞘內不斷地運動摩擦以致產生炎症。想知道你的手腕痛是否「媽媽手」,可以進行以下測試:
「媽媽手」測試
方法:指尖向前手掌打開,拇指貼近掌心,用餘下4隻手指包着拇指,將手腕向下拉。
感到拉扯感 → 正常
感到疼痛 → 你可能患上媽媽手了
如果患上「媽媽手」,必須讓手休息,減少拇指用力的機會,有時候抱嬰兒的動作可以反過來,以手背支撐,另一隻手加護,不要長時間以手掌朝天抱嬰兒 。平日用暖毛巾熱敷患處約10分鐘,做一些手部拉筋運動。 從中醫角度來看,患肌腱炎時不宜食用糯米、牛奶、南瓜、大豆等生痰及滯氣發物,因為容易阻塞經絡;亦要減少食用冷、酸、辣、油膩等食物。
紓緩「媽媽手」手指運動:
手腕背伸,五指張開、伸直朝天,維持10秒,重覆動作10次。

Wrist pain? A quick test for ‘Mommy Thumb’
Newborns need to be carried all the time. This is how mothers develop ‘mommy thumb’, or in medical terms, De Quervain's disease. The sufferers would experience wrist pain, and they could not bend their wrists or exert pressure on their hands. Some might not even be able to wring a towel.
De Quervain's disease is actually stenosing tenosynovitis of the styloid process of radius and due to regular thumb abduction. As the muscles and tendons on the wrists thicken, the friction become more intense, causing inflammation in the hands. In order to find out if the wrist pain you experience is due to De Quervain's disease, you can carry out the following test:
The ‘mommy thumb’ test
Method: stretch your palms and make sure your fingers point outwards. Stick your thumb close to the palm, and use the remaining fingers to wrap around the thumb, and bend your wrist downwards. It is normal if you feel something is stretching from within, but if you feel pain during the movement, you might have a mommy thumb.
If you do get a mommy thumb, make sure you give your hands enough rest and avoid exerting pressure on your thumb. You can carry the baby the other way round, by supporting the baby with the back of one hand, and hold him or her up with the other. However, avoid carrying the baby with the back of your hand for an extended period.
When we experience inflammation in the wrist (symptoms include redness, swelling, warm, and painful), apply cold compress with a towel for about 10 minutes. On regular days, apply warm compress on the same area for 10 minutes and do some hand and wrist stretches. From the perspective of Chinese Medicine, an individual who suffers from tendinitis should avoid taking glutinous rice, milk, pumpkin, and soybean as these ingredients induce phlegm and stagnate qi, and would impede the circulation of the meridians. Cut down on raw, cold, sour, spicy, and greasy foods as well.
Finger exercise to relieve ‘mommy thumb’
Point the fingers skyward and stretch the palm. Curl the thumb and little finger inward so they meet at the center of the palm (as if we are making a vow). Then stretch the thumb towards the little finger for 10 seconds. Repeat the process 10 times.

【Ingredients】Makes about 12
1 Egg (60g)
70g Cane sugar(or Granulated sugar)
20g Milk
70g Cake flour
3g Baking powder
70g Unsalted butter
For madeleine pans
Unsalted butter
Bread flour
【Directions】
①Brush the madeleine pans with butter and sprinkle bread flour.
Shake off excess and chill in the fridge.
②Melt butter in a hot water bath and keep warm.
③In a bowl, combine egg and sugar, and whisk together.
④Add the milk and mix.
⑤Add the sifted flour and baking powder and stir.
⑥Add the melted butter and mix.
⑦Cover the bowl with plastic wrap and refrigerate.
Rest the batter for at least one hour.
⑧Preheat the oven to 392 °F/200℃.
⑨Mix lightly until smooth,put the batter into the madeleine pans.
⑩Bake at 356 °F/180℃ for 14minutes.
(do not over bake).
It's done!
After they're cooled, they are still fluffy and moist the next day.
The cake is good when it's freshly baked, but it's even better with the stable taste on the next day.
This madeleine has a "belly button".
It is very fun.
Use Madeleine pan as I think they conduct heat better than silicone molds, but I’ve seen some people make beautiful Madeleines with silicon molds, so it’s up to you.

牛乳 20g
薄力粉 70g
ベーキングパウダー 3g
無塩バター 70g
マドレーヌの型用:
無塩バター
強力粉
【作り方】
①マドレーヌ型にバターを塗り、強力粉をふりかけ
余分な粉を振るい落とし、冷蔵庫で冷やしておく。
②バターを湯煎にかけ溶かし、そのまま温めておく。
③ボウルに卵と砂糖を入れ、泡立て器で混ぜる。
④牛乳を加えて混ぜる。
⑤ふるいにかけた薄力粉とベーキングパウダーを加えて混ぜる。
⑥溶かしたバターを加えて混ぜる。
⑦ボウルをラップで覆い、冷蔵庫で冷やす。
最低でも1時間は寝かせる。
***生地を寝かせることでより美味しく焼き上がります。
⑧オーブンを200℃に予熱する。
⑨冷蔵庫から出した生地は滑らかになるまで軽く混ぜて、絞り袋に入れてからマドレーヌ型に絞り入れる。
生地は型の8分目くらいまで入れる。
***使用する型や、大きさにより変わるので調整してください。
***絞り袋の代わりにビニール袋など使っても。
⑩180℃に設定したオーブンで14分焼いて出来上がり!
***パサつくので焼きすぎないよう気を付けます
焼き立てよりも一晩置いた方が味が落ち着き、しっとりふんわりと
美味しく感じます♪

【Ingredients】 7in(18cm)×3in(8cm)loaf pan
For Carrot Cake
2 Eggs
80g Rice Bran Oil(or Oil of your choice)
1 tsp Lemon juice
50g Cane sugar(or Granulated sugar)
120g Carrot, grated
★100g Cake flour
★50g Almond flour
★4g Baking powder
45g Rum raisins
50g Walnuts, roasted
For Topping
15g sliced almonds
【Directions】
①Pour hot water onto the raisins to soften. Drain off the hot water.
Cut the walnuts into small pieces.
Carefully wash the carrot (Don’t peel the skin)
Grate the carrot coarsely.
②Put eggs in a large bowl and mix well.
③Add the vegetable oil (little by little)and mix well with a whisk for 2 mins until combined.
④Add lemon juice and cane sugar.
After adding all, mix well.
⑤Add the carrot and mix well with a spatula.
⑥ Add all of the dry ingredients(★) and fold until the powderiness disappears.Fold it 15-20 times.
⑦Add raisins and walnuts,mix.
Put it into the prepared pan.
⑧Line up the sliced almonds on top.
⑨Bake at 180℃ / 356°F for 35-40 minutes.
⑩Remove the cake from the pan while it's warm and wrap it with plastic wrap.
When cooled thoroughly,slice and serve.

For Topping
スライスアーモンド 15g
【作り方】
①レーズンはお湯をかけて柔らかくし、お湯を切っておく。
胡桃はフライパンやトースターでローストして細かく切る。
人参は皮付きのまま良く洗って粗くすりおろす。
②ボウルに卵を割り入れ良く混ぜる
③米油を少しずつ加えて2分ほどよく混ぜる。
④レモン汁ときび砂糖を加えてよく混ぜる。
⑤人参を加えてゴムベラで混ぜる。
⑥粉類(★)をすべてふるって加え、粉っぽさが無くなるまで15-20回混ぜる。
⑦最後にレーズンと胡桃を加えて混ぜる。
パウンド型に流し入れる。
⑧上にスライスアーモンドを乗せる。
⑨180℃に温めたオーブンで35-40分焼く。
⑩粗熱が取れて手で触れるくらいになったら、ラップをするか、ビニール袋に入れて冷ます。
完全に冷めたらスライスしてどうぞ^^
***京にんじん(金時にんじん)を使いました、紅色で栄養価も高く甘みも強いのでおススメです。
***今回はお子さんも食べられるといいと思い、スパイスは敢えて入れていません。

バナナもいいけど苺もいいです♡
生クリームには大好きなクリームチーズを加えて仕上にココアを振ったらちょっとティラミス風になりました。
フライパンの生地ですがふかふかで、いい感じです~。

【Ingredients】20cm frying pan
1Egg 60g
10g Suger
25g Cake flour
2g Baking powder
5g Unsalted butter
1tsp Soy milk(or Milk) 豆
100g Heavy Whipping cream
50g Cream cheese
15g Granulated sugar
Strawberries
For Sprinkle
Cocoa powder
【Directions】
①Lightly beat egg.Warm it with hot water while mixing until it gets to body temperature.
***When the egg is warmed up to body temperature, it will foam up faster.
***Make sure the mixture won’t get too warm as too much heat will cook the Eggs.
②Take it out of the hot water.Add sugar and mix well.
③Warm soy milk and butter together.
④Whip it with hand mixer on high speed. If it becomes heavy, whip on low speed to change big bubbles into small bubbles.
⑤Whip well until it falls smoothly and its trace remains for a moments.
⑥Sift cake flour, baking powder and mix with spatula.
⑦Add soy milk and butter and mix.
⑧Heat a frying pan over medium heat, then place the pan on a damp cloth briefly to reduce the heat.
Pour the batter into the pan.
⑨Cover and heat for 10-14 minutes on low.
Please note: the suggested time is just a guideline and it’s based on the stove and frying pan that I'm using.
⑩Remove the cake from the pan and wrap it with plastic wrap while it's warm.Let it cool.
⑪Make Cheese cream
Place the bowl with whip cream inside a bowl with ice water and beat the cream.
⑫Put the cream cheese in a bowl. Mix it until smooth. Add granulated sugar.
⑬Add the whipped cream to the cream cheese , and fold it until combined.
⑭Spread the cheese cream over the sponge and put on strawberry in the middle secure.
⑮Wrap it with Plastic wrap.Cool it in the fridge for 30min.
⑯Sprinkle cocoa powder.

***共立ての場合人肌よりやや低いくらいにに卵を温めたほうが立ちやすくふっくらとした生地になります。
温めすぎるとキメの粗い生地になるので温めすぎ注意です。
②お湯から外したらすぐに砂糖を加える。
③小さな容器に豆乳とバターを入れて湯せんにかけておく。
④高速で立て始め、生地がだんだん重くなってきたら、最後低速で30秒ほど回して泡を一定にする。
⑤生地がもったりと落ちるくらいになればOk。
***生地に爪楊枝を刺すと沈まずに立ちます。
⑥ここに薄力粉、ベーキングパウダーをふるって加え、ゴムベラで混ぜる。
⑦豆乳、バターをぐむベラで受けながら加えて混ぜる。
***油脂が入ってからはあまり混ぜすぎないこと。
⑧フライパンを中火で熱し、全体に油をひいてペーパーなどでかるくふき取っておく。濡れ布巾などの上で一旦冷やしてから極弱火で再度温め、生地を流す
***クレープを焼くとき同様、こうすることで均等に綺麗に焼き上がります。
⑨ふたをして極弱火で約10-14分ほど焼く。
***焼き時間はご家庭の調理器具やガス台によって変わりますので時間はあくまでも目安として、調整をお願いします。
⑩表面が乾いて焼き上がったら取り出して、ラップでくるんでそのまま冷ます。
***ラップなしで冷ますと乾燥してくるむときに生地が割れることがあります。
●チーズクリームを作る
⑪生クリームは緩くたてる。
⑫クリームチーズはお砂糖を加えて柔らかくしておく。
⑬生クリームとチーズをよく混ぜ合わせる。
●仕上げる
⑭スポンジ生地の上にチーズクリームを厚く塗り、真ん中に苺をしっかりと押し込む。
⑮ラップできっちりと包んだら冷蔵庫で30分から1時間落ち着くまで冷やす。
⑯お好みで上にココアをふり、出来上がり^^
