莧菜蒜頭湯清熱殺菌
有人覺得紅莧菜補血,從營養角度來看,紅莧菜的鐵質及鈣質含量比一般莧菜為高,有助製造血液及促進血液循環;紅莧菜含有豐富花青素,能抗氧化亦有助眼睛健康;而中醫角度認為莧菜性涼,有清熱明目、通利二便的功效,按「紅色入心」的理論,亦有補血功效。莧菜及蒜頭味道上非常匹配,除了炒,滾湯亦非常美味,有清熱明目功效,亦有助預防夏天常見的細菌性腸炎痢疾等疾病。
紅莧菜蒜頭肉片湯
功效:清熱明目、通利二便,預防細菌性腸炎痢疾等疾病。
材料:紅莧菜半斤、蒜頭5-6瓣、瘦肉200克、薑2片、鹽適量
醃料:生抽1茶匙、糖半茶匙、麻油少許、胡椒粉少許、粟粉少許
做法:
1. 全部材料洗淨,紅莧菜切走過老的莖皮;蒜頭去皮拍扁;瘦肉切片,加入醃料醃至少15分鐘。
2. 在深鍋裡加油燒熱,加入薑片及肉片炒香,加入約1500毫升水,武火煮至水滾,加入紅莧菜及蒜頭,改用文火煮10分鐘,最後下鹽調味即可。
注意:莧菜性涼,薑及蒜能減輕其涼性。

Red amaranth garlic soup can clear heat and kill germs
Some people think red amaranth can nourish the blood. From a nutritional perspective, red amaranth contains higher iron and calcium as compared to the other amanranth. Hence, it can improve blood production and circulation. Red amaranth is also high in anthocyanin, which has antioxidant properties and is good for the eyes.
From the Chinese Medicine’s perspective, amaranth is cool in nature. It can clear heat, brighten the vision, and promote bowel movements and urination. Since red is generally good for the heart, red amaranth can nourish the blood too.
The taste of amaranth and garlic goes very well together. Besides frying, we can use them to make soup. This red amaranth garlic soup can clear the heat, brighten the eyes, and help prevent bacterial gastroenteritis especially during summer.
Red amaranth and garlic soup with pork
Effects: Clears heat and improves vision, alleviates constipation. Prevent diseases such as bacterial enteritis and dysentery.
Ingredients: 1/2 catty red amaranth, 5-6 cloves of garlic, 200g lean pork, 2 slices of ginger, salt to taste
Marinade: 1 teaspoon light soy sauce, 1/2 teaspoon sugar, sesame oil, white pepper powder and corn starch to taste
Preparation:
1. Rinse all ingredients thoroughly. Cut red amaranth through the old stem bark. Peel the garlic and pat flat with the back of a knife. Slice the pork and add the marinade and marinate for at least 15 minutes.
2. Heat oil in a deep pot, add ginger slices and pork slices and sauté until fragrant. Add about 1500 ml of water and cook until the water boils. Add red amaranth and garlic, simmer for 10 minutes. Add salt to taste.
Note: Amaranth is cool in nature, ginger and garlic can reduce its coolness.

長期姿勢不正確、用力不當、少做運動,都容易出現周身骨痛的情況,除了因為筋骨勞損,中醫理論認為身體有濕都會有全身困重、疲憊、頸梗膊痛的症狀,尤其濕熱體質人士,多進食煎炸油膩重口味食物,又經常熬夜,有人形容感覺為「骨火重」,平日可適量飲用有舒筋活絡及祛濕功效的湯水紓緩症狀,粉葛、五指毛桃都是合適的食材,再配合有健脾祛濕功效的赤小豆、眉豆等,有助紓緩痛症。平日亦可多按肩井穴保健,有助舒筋活絡。
肩井穴
位置:在肩部肌肉最高之處,脊椎及大椎的中間點。
按法:以指頭按壓5至10分鐘。
功效:舒筋活絡,可紓緩上臂及前臂的痛症。注意孕婦不宜按壓此穴位。
食材小貼士:
五指毛桃性平,有健脾補肺、行氣利濕、舒筋活絡功效,尤其適合氣虛、脾虛人士服用。
粉葛五指毛桃赤小豆湯
功效:舒筋活絡,紓緩風濕痺痛、肩頸腰肌勞損等問題。
材料:粉葛1個、冬瓜連皮約400克、五指毛桃20克、土茯苓15克、赤小豆40克、眉豆20克、蜜棗2顆
做法:
1. 所有材料洗淨,粉葛去皮、冬瓜連皮切大塊備用。
2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮1.5小時,最後下鹽調味即可。

Soup to soothe joints and improve blood circulation
Years of bad postures, incorrect use of bodily strength, and the lack of exercise can cause pain to our body. According to the Chinese Medicine theories, dampness, besides damaging the joints and bones, can cause the body to feel heavy and tired. It also causes us to experience discomfort on the neck and shoulders.
This is especially true for individuals with the damp heat body constitution when they consume oily and heavily flavored deep-fried food and stay up late regularly.
To soothe the joints, promote blood circulation, and dispel dampness from the body, we can drink soup that contains arrowroot and hairy fig. Consume ingredients like adzuki bean and black-eyed pea too, as they can strengthen the spleen and dispel dampness from the body, hence, relieving the pain.
Shoulder Well points
Location: At the highest point of the shoulder muscles, the midpoint of the spine and the vertebrae.
Method: Press with your fingers for 5 to 10 minutes.
Effects: Loosens tendons, relieves pain in the upper arm and forearm. Note that pregnant women should not press this point.
Tips on ingredient:
Hairy fig root is mild in nature; can strengthen the spleen and nourish the lungs; improve the circulation of qi and dispersion of dampness in the body, stimulate the circulation of the Meridians. It is especially suitable for individuals who experience qi deficiency and with a weak spleen.
Kudzu and hairy fig root soup with rice bean
Effects: Loosens tendons. Relieves symptoms of rheumatism pain, lower back soreness.
Ingredients: 1 kudzu, 400g winter melon(including skin), 20g hairy fig root, 15g smilax, 40g rice bean, 20g black-eyed pea, 2 candided dates
Preparation:
1. Rinse all ingredients thoroughly. Peel the kudzu. Cut winter melon (with the skin) into large chunks.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hours. Add salt to taste.

炒米粉1個

5. 蔥,切段。
6. 蝦仁,解凍後,清水沖洗乾淨,廚紙索乾。
7. 蝦仁,用大地魚粉半茶匙調味,撈勻。
8. 預備咖哩醬汁:
a. 清水100毫升
b. 咖哩醬1茶匙,攪勻。
c. 糖1湯匙,攪勻。
烹調:
1. 大火在鑊中煲滾1鑊水。
2. 加入鹽半茶匙。
3. 放米粉煮1分鐘,至軟身,擎乾水,夾起放碗中,加入咖哩醬汁,撈勻,冚蓋,焗2分鐘。
4. 大火在鑊中燒熱油2湯匙。
5. 打勻雞蛋,倒入鑊中,煎成蛋餅,撥向鑊邊。
6. 放乾蔥頭、三色椒及叉燒落鑊。
7. 在鑊中切碎雞蛋,炒勻,撥向鑊邊。
8. 放蝦仁在鑊中心煎透。如油不夠,可加入少量,炒勻。
9. 夾起米粉,放鑊中,加入少許咖哩醬汁,炒勻。
10. 咖哩醬汁要逐少、逐少加入,才不會令米炒
粉過分軟身。
11. 在鑊邊加入生抽1湯匙,有焦香的味道。
12. 加入銀芽及蔥段。
13. 加入少量鑊尾油,炒勻。
14. 上碟,可享用。
Singaporean fried rice noodles
Ingredients:
Fried rice vermicelli 1 No.
Frozen shrimps 12 Nos.
Char siu 150g
Eggs 2 Nos.
Bean sprouts 30g
Tri~colour bell peppers little
Shallots 2 Nos.
Green onion little
Preparation:
1. Frozen shrimps, defrost with tap water.
2. The bell peppers, remove seeds. Rinse and slice.
3. Shallots, get them peeled. Rinse and chop.
4. Char siu, thinly slice.
5. Green onion, cut in lengths.
6. Shrimps, rinse after defrost. Dry with kitchen towel.
7. Shrimps, season with dried flounder powder 0.5 tsp, mix well.
8. Prepare curry sauce:
a. Water 100ml
b. Curry paste 1 tsp, mix well.
c. Sugar 1 tbsp, mix well.
Steps:
1. Heat up a wok of water at high flame.
2. Put 0.5 tsp salt in water.
3. Put rice vermicelli, cook for a minute until it turns soft. Hang dry, put it in a bowl. Mix with the curry sauce well. Cover it up for 2 minutes.
4. Heat up oil 2 tbsp at high flame in wok.
5. Beat 2 eggs well. Pour into the wok, make it as a pancake. Put it to side of wok.
6. Put shallots, bell peppers and char siu in wok.
7. Cut the egg pancake in small pieces. Fry well. Put it to side of wok.
8. Put shrimps in the middle of wok. If oil is not enough, just add a little. Fry well.
9. Pick up rice vermicelli, put in wok, add little curry sauce. Fry well.
10. Curry sauce, put into wok, little by little, this will not make the vermicelli to be too soft.
11. Put light soya sauce 1 tbsp alongside the wok to enhance the taste.
12. Put bean sprouts and green onion.
13. Add little oil, fry well.
14. Put on plate. Serve.

Thai Steak by Jimmy's Table
One of my favorite ways to marinade and grill a steak! It’s got that delicious sweet and savory caramelized taste. It also has lots of powerful flavors from not only the fish sauce, but also the garlic, basil, cilantro, chilies, lime and deep fried shallots/garlic. Enjoy!
Ingredients (食材):
Marinade ingredients:
1 cup sugar (糖) melted to caramel (焦糖)
1 cup of hot water (熱水)
1/2 cup sugar (糖)
3-6 tablespoons fish sauce (魚露)
3 tablespoons of minced garlic (大蒜)
1-2 Spicy Red Chilis (小辣椒) - sliced and used if you want it spicy
2 Limes (青檸檬) - halved and squeezed for juice, seeds removed
1 tablespoon of garlic powder (大蒜粉)
1 tablespoon of ground black pepper (黑胡椒)
Main ingredient:
Beef Short Ribs (牛小排) (Above marinade can be used to make 5-8 steaks. Also you can substitute beef with pork neck! 上面的醬料可以用來醃5-8塊牛排
Cooking oil
Sauce ingredients:
1/2 cup of cilantro (香菜) - chopped, leaves only
1/2 cup of Thai basil (九层塔) - chopped, leaves only
2 Large “non-spicy” red chili - (大紅辣椒-非辣), cut diagonally
1-3 Spicy Red Chilis (小辣椒) - sliced and used if you want it spicy
1 tablespoon of minced garlic (大蒜)
Finishing Ingredients:
1/4 cup deep fried shallots (炸小葱头)
1/4 cup deep fried garlic (炸大蒜)
Step 1
Make caramel by adding 1 cup of sugar into a pot. Heat up the sugar until it melts, but keep an eye out on it. You can always lower the heat so it doesn’t overcook or burn. When the caramel fully melts and starts to brown and bubble up, turn off the heat. Carefully and slowly, add and stir in 1 cup of “hot” water. This part can be quite explosive so be careful not to burn yourself.

Once caramel sauce has been prepared, add and whisk in 1/2 cup sugar to sweeten. Add in 3 tablespoons of fish sauce to give it extra flavor and 3 tablespoons of minced garlic. Cut in 1-2 spicy red chilies. Squeeze in 2 limes and taste to see if the sauce is ok. I added 2 more tablespoons of fish sauce as it wasn’t salty and flavorful enough. Add in 1 tablespoon of garlic powder and 1 tablespoon of fresh ground black pepper.

Step 3
Marinate the beef short ribs with the caramel fish sauce and store in the fridge for at least half an hour to an hour. Best result is to marinade a few hours or overnight sealed in a ziplock bag.

Step 4
Use the remaining caramel fish sauce marinade to make the sauce to pour onto the finished steak. Add in 1/2 cup of chopped cilantro, 1/2 cup of chopped Thai basil, 2 sliced large red chilies, 1-3 sliced small spicy chilies and 1 tablespoon of minced garlic. Stir all ingredients to make the finishing sauce.

Step 5
Remove the steaks from the fridge and try to remove small pieces of garlic or red chilies so that they don’t burn when you are pan frying the steaks. Pat the steaks dry so they are also not too wet from the sauce. Also remember to let the steaks rest outside, so they get to near room temperature. A cold steak on a hot pan will only result in an undercooked and raw steak inside.

Add in 1-2 tablespoons oil into a frying pan and heat up until it is very hot. You should see a little white smoke rising from the pan.

Add in the steak to sear on one side until brown, then flip the steak. Add in some of the marinating sauce onto the steak to add to the flavor and help create a brown crust (caramelization) to the steak.

When both sides have a nice brown crust to the steak, check to see if the steak is ready by pressing the meat to check its tenderness. You can use your hand, as a guidance to tell how well the steak is cooked.

當牛排兩面都煎至完美的棕黃色後,輕壓牛排軟硬度來確認牛排熟度。可用大拇指手掌的位置軟硬來對應牛排的生熟度。
Step 9
When ready, remove the steak from pan and place onto a plate to rest the steak. A steak needs to rest for 10 minutes so that the juices get reabsorbed back into the meat. If immediately cut into the steak, the juices will steam and evaporate away leaving the steak tougher.

Step 10
I like to plate this dish by using a nice wood cutting board. Slice the steak diagonally on the board and be sure to cut across the meat grain, so it is more tender when eating it. Spoon on the caramel fish sauce with cilantro, basil and chilies. Sprinkle on deep fried minced garlic and and deep fried shallots, and you are ready to eat!

我喜歡直接用木頭盤子當作擺盤,將牛排直接斜切在木板上,並沿著肉的紋理切,吃起來的肉質會更軟嫩。接著再淋上前面製作好的九層塔香菜牛排醬汁,最後撒上一些炸大蒜碎及紅蔥頭就完成摟!

又到週末不如一起做這個,年糕質感煙韌Q彈,加上巧克力做出來甜品真的難以抗拒。

份量(六件)
.
材料1 - 濕材料
.
牛油60克
黃糖24克
白糖24克
雞蛋半隻
雲尼拿精華 (Vanila Extract)1/4茶匙
.
材料2 - 乾材料
中筋麵粉 (All purpose flour)60克
可可粉12克
粟粉1/4茶匙
泡打粉1/8茶匙
鹽1/8茶匙
巧克力粒(小)一湯匙
.
材料3 - 年糕
糯米粉40克
糖一茶匙
水約40毫升
鹽1/8茶匙
.
材料4 - 裝飾面料
巧克力粒(小)兩湯匙
海鹽1/4茶匙
.
做法
.
準備
.
牛油放置在室溫大約一小時左右,直至可以用匙羹輕易按下。
焗爐預熱至170度。
.
1. 製作曲奇麵團
.
牛油放在拌碗內,先用刮刀將牛油、白糖及黃糖拌勻,打蛋器調較至中高速打發牛油,直至變成蓬鬆的狀態,顏色變淺,約需數分鐘。

[Tips: 在打發當中會濺起牛油,所以不時用刮刀刮碗邊,以助牛油放回拌碗內,令材料均勻地打發。]
.
加入雞蛋和雲呢拿精華略為拌勻。
.
麵粉、粟粉、泡打粉、可可粉和鹽過篩後混合,分批加入濕材料內,拌勻直至看不到粉粒。

加上兩湯匙的巧克力粒,拌勻。
.
用匙羹將約30克的粉團做成球狀,放到已鋪好牛油紙的焗盆內。
.
放入雪櫃裏30分鐘,備用。
[Tips: 每個曲奇麵團距離約5-7cm左右,不然曲奇烤焗時膨脹後會連在一起]

2. 製作年糕
.
在一個拌碗內,加入糯米粉、糖、鹽拌勻,先加水30毫升拌勻,看看能否成為麵團,如太乾燥再加水10毫升。

麵團隔水蒸10分鐘。在桌上鋪上矽膠墊或保鮮紙,戴上膠手套以免粘手,並在墊底的保鮮紙上塗上食用油,將麵團放在矽膠墊上。
.
揉麵團數分鐘。
.
平均分開麵團,每份約10克,用保鮮紙封好避免變乾燥,年糕便做好,備用。

3. 整合曲奇及放入焗爐
.
從雪櫃裏取出麵團,用手按壓每個麵團,然後放入年糕,再封好麵團,像包湯圓一樣。
.
放入已預熱的焗爐以170度焗8分鐘,取出。
.
在曲奇麵上,加上兩湯匙的巧克力,然後灑上海鹽。
[Tips: 在曲奇面上放上餡料可以令造型更漂亮,而加上海鹽能提升曲奇的甜味,令味道更富層次感。]

將曲奇麵團再放入焗爐內,焗8分鐘便完成。

Cocoa powder 12g

Rice cake ingredients
Glutinous rice powder 40g
White sugar 1 tsp
Water 40ml
Salt 1/8 tsp

Chocolate chips 2 tbsp
Sea Salt 1/4 tsp

Preparation
.
Bring the butter to room temperature until it is soften.
Pre-heat the oven to 170 degree celsius.

Make cookie dough
.
Mix the butter with brown and white sugar using the electric beater in medium speed until it becomes fluffy and its colour becomes lighter. This creaming process takes about a few minutes.

Add egg and vanilla extract. Mix well.
.
Sift the flour, corn starch, baking powder, cocoa powder and salt. Pour to the wet ingredients in several times. Mix it until it is well blended.

Add 1 tablespoon of chocolate chips. Mix well.

Scoop 30g of the cookie dough. Put it on the baking tray lined with the baking sheet.

Put the tray into the fridge for 30 minutes.
(Put the cookie dough with distance about 5-7cm)

2. Make rice cake
.
Mix glutinous rice cake flour, sugar and salt well. Then add 30ml water, if it is too dry then add 10ml of water on top.

Steam the dough for 10 minutes. Wear the gloves and prepare for the silicon mat or plastic wrap. Put the dough on the silicon mat.

Knead the dough for a few minutes.

Divide the dough evenly, with around 10g each. Use the plastic wrap to cover it up and prevent the rice cake from getting dry.

Assemble and bake
.
Use the palm to press the cookie dough, put the rice cake inside. Fold the edge to seal the dough. Lightly roll it into a ball shape.

Bake the cookies in 170 degree celsius for 9 minutes.

Put the chocolate chips on the top of of the cookie dough
Sparkle with sea salt.

Put the cookie to the oven again and bake for another 8 minutes.
