中秋燒烤健康吃
燒烤是中秋節的熱門活動,吃著燒雞翼加杯冰凍啤酒,簡直人生一大享受!然而從中醫角度來看,燒烤能讓身體生熱、上火。秋天天氣乾燥,加上坐在火爐旁邊屬於「火邪」,燒烤過的食物亦會令其屬性偏熱,所以BBQ過後出現咽喉痛、聲沙、乾咳、痰中帶血絲、大便乾結等症狀,都是受熱邪影響。燒烤食物多以肉類為主,醃肉醬、沙嗲醬等都屬肥甘厚味食物,生冷啤酒亦會與體內聚濕生熱,影響脾胃功能,引起濕熱症狀。
那麼中醫不建議燒烤嗎?偶一為之還是可以的,以下分享幾個健康燒烤小貼士,將燒烤對健康的影響盡量減低。
1. 多走動
燒烤期間最忌坐著不動,長時間對著火爐感受「火邪」,記得起身多走動。
2. 天然調味料
忌用高鹽高脂的現成調味醬汁醃肉,不如多用香草如金不換、芫茜、百里香、黑椒、檸檬等調味,健康美味。
3. 蔬菜水果不可少
燒烤中肉類海鮮永遠是主角,勿忘準備不同顏色的蔬菜,例如番薯、粟米、三色椒、紅蘿蔔等,菠蘿有助消化肉食,亦屬平性水果,可以適量食用。
4. 自備清熱飲品
冰凍汽水和啤酒固然吸引,但生冷飲品易令身體聚濕,損傷脾胃功能,建議自備有清熱功效的茶療、紙包米水、茶飲,減低燒烤為身體帶來的負擔。
胖大海菊花茶
功效:清熱利咽,紓緩口乾、咽喉痛等燥熱症狀。
材料:胖大海2-3顆、杭菊花10朵、蜂蜜適量
做法:將胖大海拍碎,蜂蜜以外的材料洗淨放入保溫瓶,用熱開水沖洗一遍,再注入熱開水焗15分鐘,放涼一點後加入適量蜂蜜調味即可。此茶可反覆沖泡至味淡。

Stay healthy while enjoying the mid-autumn barbecue
Barbecue is a well-loved activity during the Mid-Autumn festival. Eating barbecued chicken wings and enjoying a can of chilled beer are one of life’s greatest enjoyments! Yet, from the perspective of Chinese Medicine, barbecue can cause heat in the body. Autumn’s weather is dry; sitting by the fire pit will attract the pathogenic factor of fire. Barbecued food is also hot in nature, hence symptoms like sore throat, coarse voice, dry cough, blood-streaked phlegm and dry stools might appear after a BBQ session.
Barbecued food is comprised of mostly meat; marinade and satay sauce are high in fat content and highly flavored; chilled beer will also accumulate heat in the body, affecting the functions of the spleen and stomach, and causing the body to be in the damp-heat condition. Does this mean Chinese medicine practitioners do not recommend barbecue sessions? Well, once in a blue moon is fine. Here are some tips to reduce barbecue’s negative impact on our health.

Hello friends! Today we're going to share with you how to make juicy oven-baked smoked BBQ ribs at home.
Copying and practicing a recipe from a famous restaurant is the most challenging thing, but it is very interesting and we learn new things from it. In this video, we copied the taste of the famous pepper ribs, but made some modifications, because some ingredients are not found in this city. Chili’s slow-cooked pork ribs has been a top seller on the menu since 1986 and is still the best seller today. So this is a must try.
To make smoked flavor BBQ ribs without a smoker, we slow cook in the oven, and make the Chili's BBQ sauce with smokey chipotle in adobo, or it can be made by liquid smoke instead. The flavor is found in the sauce, and the cooking secret is slow-braising which can keep the meat juicy and tender like the original. You can use the barbecue sauce suggested in the recipe below or use your favorite homemade or store-bought sauce. Hope you like it. Enjoy. :)

How to make Oven-Baked Smoked BBQ Ribs
✎ Ingredients
pork ribs 950g
☞ for dry marinades
coarse salt 70g
black pepper 15g
ground white pepper 4g
cayenne pepper 2g
granulated sugar 3.5g
garlic powder 1.5g
onion powder 1.5g
☞ for BBQ sauce
chipotle peppers in adobo 7g
regular soy sauce 32g
tomato paste 70g
ketchup 20g
chicken broth 30g
apple cider vinegar 35g
dark beer 45g
fresh orange juice 87g
minced garlic 10g
chili powder 1.5g
onion powder 5g
salt 3g
black pepper 2.5g
light brown sugar 130g
1. Combine together coarse salt, black pepper, ground white pepper, cayenne pepper, granulated sugar, garlic powder and onion powder, mix well.
2. Line a baking tray with foil or parchment paper.
3. Place the ribs on the baking tray, pat dry the ribs with paper towels on both sides.
4. Using a sharp knife to take off excess fat. Just keep a little fat.
5. Remove the silver skins or whitish dense skin on the bone side of the ribs.
6. Then turn the meatier side facing up, generously season with 1 tablespoon of dry marinades.
7. Cover with another foil, shiny side out.
8. Preheat the oven to 135C, bake for 2.5~3 hours.
9. While the ribs bake, make the barbecue sauce. Add all the sauce ingredients together, using an immersion blender to blend the ingredients until smooth. Pour into a saucepan and cook over medium-low heat for 15-20 minutes, stirring often until thicker.
10. Once baked, remove foil and transfer to a new baking tray and brush ribs with the barbecue sauce on both sides. Let the bone side facing up.
11. Preheat the oven to 220C, bake for 5 minutes, then turn the meatier side facing up and brush a little bit of sauce and bake for 10 minutes or until ribs have been caramelized.
12. Transfer the ribs to a plate or a cutting board, brush with sauce again if needed and serve.

ベーコンとチキンのミートローフ
6人分
材料:
鶏むね肉 5枚
A:塩 大さじ1
A:ガーリックパウダー 大さじ1
A:パプリカパウダー 大さじ1
A:オニオンパウダー 大さじ1
A:チリパウダー 小さじ1
A:コショウ 小さじ1
A:カイエンペッパー 小さじ1/2
ベーコン(スライス) 20枚
バーベキューソース 290g
チェダーチーズ(スライス) 10枚
ピーマン(スライス) 2個分
赤ピーマン(スライス) 2個分
紫玉ねぎ(スライス) 1/2個分
作り方:
1.オーブンは180℃に余熱しておく。
2.鶏むね肉は横半分に切ってから厚みを半分に切り、ボウルに移す。
3.別のボウルに(A)の調味料を加えてよく混ぜ、(2)にまぶして馴染ませる。
4.パウンド型(23cm×13cm)にベーコンを敷き詰める。
5.(3)を4切れ並べ入れてバーベキューソースをかけ、チェダーチーズを並べ入れる。
6.(3)を4切れ並べ入れてバーベキューソースをかけ、ピーマン、紫玉ねぎを並べ入れてバーベキューソースをかける。
7.赤ピーマンを並べ入れてチェダーチーズを並べ入れ、(3)を並べ入れてベーコンで覆う。
8.表面をアルミホイルで覆って、180℃のオーブンで1時間焼き、アルミホイルを外してさらに30分焼く。
9.焼けたら型から外し、表面に刷毛でバーベキューソースを塗って、180℃のオーブンで5分焼いたら、完成!

Bacon BBQ Chicken Loaf
Servings: 6
INGREDIENTS
5 chicken breasts
1 tablespoon salt
1 tablespoon garlic powder
1 tablespoon smoked paprika
1 tablespoon onion powder
1 teaspoon chili powder
1 teaspoon pepper
½ teaspoon cayenne pepper
20 bacon slices
1 cup barbecue sauce, divided
10 slices cheddar cheese
2 green bell peppers, sliced
½ red onion, sliced
2 red bell peppers, sliced
PREPARATION
Preheat the oven to 350°F (180°C).
Cut each chicken breast in half crosswise, then cut the larger half again horizontally, creating 3 cutlets. Transfer to a large bowl.
In a small bowl, combine the salt, garlic powder, smoked paprika, onion powder, chili powder, black pepper, and cayenne pepper. Stir to combine.
Pour the spice mix over the chicken cutlets and toss to coat completely in the seasoning. Set the chicken aside.
Arrange the bacon slices in a 9 x 5-inch loaf pan, making sure the bottom and sides are fully covered, and that the strips hang over the sides.
Layer in 4 seasoned chicken cutlets, 2 tablespoons of barbecue sauce, 5 slices of cheddar cheese, 4 more chicken cutlets, another 2 tablespoons of barbecue sauce, the green pepper, onion, 2 tablespoons of barbecue sauce, the red pepper, 5 remaining cheese slices, and the remaining chicken. Then, wrap the overhanging strips of bacon over the top of the loaf.
Cover the loaf with foil and bake for 1 hour. Then remove the foil, drain any excess fat, and bake for another 30 minutes uncovered, making sure the chicken is cooked through and the bacon is brown and crispy.
Remove the bacon loaf from the oven and turn on the broiler. Invert the loaf onto a wire rack set atop a baking sheet and baste the loaf with the remaining ½ cup barbecue sauce.
Broil for 5 minutes, until the glaze dries slightly.
Slice and serve with rolls or other barbecue party food. Enjoy!
