小時候,我覺得最幸福的一件事之一,就是在冬季吃一碗彰化市的老呂牛肉麵!
老呂是外省人,留著西裝頭,總是在瀏海夾著一根細細的髮夾,揮汗幫我們煮著麵。
當時一碗才$50, 湯頭清甜,沒有過多的辛香料,湯汁是發亮的琥珀色,啊~ 喝一口湯,就能榨出我體內無限的幸福感。
多年後,我離鄉、甚至遠嫁到澳洲,這10幾年來,我國內外吃不下50家的牛肉麵,就為了找尋我兒時記憶中彰化老呂牛肉麵的味道!
甚至曾經一口氣吃了三家,但喝一口湯就請店家打包,因為不是「老呂」的味道😭
這十幾年間,我嘗試過多種食譜,直到我發現,原來,只要兩顆八角,和一點調味,就可以煮出我記憶中,最香又清甜的味道,老呂的味道。
太多的辛香料,反而會壓過牛肉的美好!
希望我的這碗麵,也喚起你記憶中的溫暖與幸福感。❤️
《食材》
✔️牛膝肉Osso bucco (帶骨)1.5 kg -盡量找筋多的
(你可以用牛肋條、牛腩肉、牛腱。我在澳洲買不到,所以用牛膝Osso bucco,或是你也可以用Gravy beef, 但記得找筋多的)
✔️白蘿蔔、紅蘿蔔
✔️蔥兩根
✔️蒜6顆
✔️薑片6片
✔️辣椒一條(中間切一道)
✔️辣豆瓣醬 2 大匙
✔️醬油 100 CC
✔️八角 2顆
✔️米酒 約80 cc
✔️糖約半大匙
✔️白胡椒 少許
《作法》
1. 牛肉高湯2000 cc:牛肉+水約3000cc + 蔥白一根 + 40 cc米酒,滾了以後轉中小火煮25分鐘。不要蓋鍋蓋,高湯才會清澈。
2. 鍋子燒熱加兩湯匙油,把洋蔥先炒至透明,再放入薑片、蒜、蔥一根、八角、辣椒(中間要劃一刀)爆香。加入豆瓣醬、醬油、糖、米酒40 cc,炒個3分鐘後,加入牛肉一起拌炒。
3. 倒入牛肉高湯2500cc 左右,蓋上鍋蓋,滾了以後轉中小火煮15分鐘。

5. 加入紅、白蘿蔔中小火再煮60分鐘,蓋上鍋蓋。
《Ingredients》
✔️Osso bucco 1.5 kg
Beef finger, Brisket or Beef shin are actually better cut. But I couldn’t find any of them, so, I use Osso bucco.
✔️white and red radish
✔️Spring onion X 2
✔️Garlic x 6 cloves
✔️Sliced ginger x 6
✔️Red chill x 1
✔️Chill red bean paste 2 TBSP
✔️Soy sauce 100 ml
✔️Star Anise x 2
✔️Rice cooking wine 2 TBSP
✔️Sugar 0.5 TBPS
✔️White pepper

《驚喜菜式!冰雕內的沙律🥗❄️》
一坐下餐桌上已擺放了一盤脆脆和千島醬,口感雖脆,但脆片本身沒講調味,味道只屬一般(圖9)。

沙律上有帶甜味的爆爆珠,可惜欠缺醬汁🥗,味道過寡,餐湯味道有點像中式蘿蔔湯🥕(圖8)。

📍(圖4)香烤寶雲酥羊架配紅酒汁($238)
Provencale Racks of Lamb with Red Wine Sauce
主菜選擇了羊架和肉眼,羊架5成熟🐐,中間切開顏色粉嫰,肉質柔軟細膩,外層鋪上香草🌿和黃芥末,味道出眾。旁邊伴上黑松露薯蓉和雜蔬🥕🌽,薯蓉軟滑🥔,整體菜式的完整度高。

📍(圖1、7)澳洲牛肉眼扒配黑松露燒汁($248)
Grilled AUS Beef Ribeye with Black Truffle Gravy
肉眼扒分量十足🥩,雖然切開呈粉紅色,但肉質較硬,黑椒汁味道有點過濃。點了4成熟,但感覺有點過火🔥。因爲肉質偏硬,相信生一點會較好吃。旁邊有薯蓉和蔬菜粒伴碟。

這日的甜品是士多啤梨慕絲蛋糕🍰(圖5),跟餐➕$1便可享用,口感幼滑,以朱古力味作為主導🍫,味道不錯

📍(圖2)芒果黑松露鮮蝦沙律($88)
Mango & Shrimp Salad with Black Truffle
這個沙律十分有趣,首先賣相特別,把沙律藏於一個冰雕中❄️,很有特色。蝦🦐、芒果🥭和沙律菜的組合味道清新,再伴上大量沙律醬和黑松露醬,十分好吃😋。
📍(圖6)心太軟配雪糕($68)
Chocolate Lava Cake
心太軟比其他餐廳的都要大,但係切開的一刻就知道會失望👉🏻👈🏻。心太軟外層過厚,外面焗得不夠脆,但同時中間流心程度不足,另外朱古力味道不濃郁🍫。雖然旁邊有球朱古力搭救,但整體感覺失望😞。

📍(圖3)即製梳乎厘班戟配雪糕($108)
Soufflé Pancake
老實說,梳乎厘的賣相有點差😅,但味道還是可以的。梳乎厘不死實,有蛋味🐣,旁邊配有雪糕和雲呢拿醬,味道不差,但並不突出,這個價錢會有更好的選擇。

Christian's 簡易百搭Gravy
Christian’s Super Versatile Gravy (recipe in English and Chinese)
上次教大家整超脆豬手,有位朋友留言問可唔可以教點整襯豬手嘅Gravy。今日就同大家分享一個又易做又可以襯唔同菜式嘅肉汁啦!
材料:
400ml 紅酒或者波特酒
500ml牛湯或者雞湯
3瓣蒜頭
半個洋蔥切碎
1條蘿蔔切碎
1湯匙麵粉
1湯匙室溫牛油
做法:
將紅酒、牛湯、蒜頭、洋蔥同埋蘿蔔放落個煲度用中火煲15至20分鐘到差唔多淨返2碗水就可以攞出嚟。
跟住用個隔渣器,壓返D煲林左嘅湯渣嘅汁出嚟落個肉汁度。淨返D湯渣千其唔好擺返落個肉汁度,等個gravy 口感smooth D。
將gravy擺番落個煲度用慢火煮一煮熱。用手將D牛油同麵粉搓埋一齊,跟住加落gravy度攪渾。當個gravy 慢慢變杰身嘅時候,你可以試一試味。如果仲係試到麵粉味,就繼續用慢火煲到無麵粉味為止就搞掂喇!
呢個gravy除左用嚟襯豬手之外,其實襯牛鷄魚都得㗎!你亦都可以用呢個肉汁做基礎,演變出唔同口味嘅汁。例如可以加煎香左嘅蘑菇、黑椒、意大利香醋、喼汁、粗粒芥末或者松露醬去變出你鍾意嘅口味!咁就唔使食到悶喇!
400ml Red wine (or port wine)
500ml beef stock (or chicken stock)
3 cloves Garlic
1/2 Onion, chopped
1 Carrots, chopped
1 tablespoon flour
1 tablespoon butter, at room temperature
Put the wine, beef stock, garlic, onions and carrots in a pot and boil at medium heat for 15-20 minutes or until it reduced by 60%. This concentrates the flavours of the wine and beef.
Use a fine mesh stainer and squash the cooked vegetables to incorporate the sweetness of the onions and carrots as well as the earthiness of the garlic into the gravy. Don’t add the residual vegetables as that would make the gravy a bit too chunky.
Put the strained liquid back into the pan and gently heat on low heat.
Knead the butter and flour together and stir into to the gravy. As it heats, it should thicken up. This is a very traditional French technique to thicken sauces. When the sauce is thick, taste it. If it tastes like flour, keep gently cooking until it doesn’t have the taste of flour anymore.
This is a basic gravy that can be used for Beef, Pork, Chicken even Fish. It is also can be considered a sauce base. You can add other flavours such as sautéed mushrooms, black pepper, balsamic vinegar, Worcestershire sauce, grainy mustard, fresh herbs or yummy truffle paste to make it your own!
