認識粗糧 vs 精製食物
現代人飲食越趨精緻化,追求軟滑細緻的口感,回想今早那片鬆軟無比的白麵包、午餐吃了碗一滑入口的麵條,還有下午茶的冬甩和蛋糕,白麵包、白麵條、蛋糕餅乾等甜點都是高度精製食物,多吃長遠會造成健康負擔。日常飲食中適量添加粗糧會吃得更健康,粗糧包括全穀類食品,例如大麥、黑麥、燕麥、藜麥、蕎麥、小米、粟米、五穀米、全麥麵粉等,亦包括可以連皮一起吃的粗糧,例如番薯、芋頭、花生、紅豆、綠豆等,有助吸收更多膳食纖維。
2021年想向更健康邁進一步,不妨在飲食上做些小改變,例如在晚餐的白飯中加入少許紅米、糙米或五穀米,白麵包改吃全麥麵包,由拉麵轉吃蕎麥麵或全麥意粉,在飲食中適量加入小米、藜麥、碗豆、鷹嘴豆、紅豆、綠豆、蓮子等,都是輕鬆養生的好方法。 但注意粗糧不是吃得越多越好,過份食用也有損健康,尤其脾胃虛弱、消化能力不佳人士,一時間進食過多纖維反而未能消化,長者、小兒及脾胃虛弱者進食粗糧都要適可宜止。

Understanding coarse grains VS refined food
People these days enjoy delicacies that are soft and smooth – fluffy white bread in the morning, smooth noodles for lunch, and the donuts, buns, cakes and cookies during our afternoon tea. All these are what we called ‘refined food’.
Eating refined food for an extended period would adversely affect our health. Hence, it is best to include some coarse grains into our diet. Coarse grains include whole grains such as barley, rye, oats, quinoa, buckwheat, millet, corn, five-grain rice and whole-wheat flour. Coarse grains with edible skin are sweet potato, taro, peanut, red bean and mung bean. These kinds of food can help increase the dietary fiber in the body.
In order to lead a healthier life in 2021, consider making minor changes to our meals. For instance, add some red rice, brown rice or grain rice into our white rice; eat whole-wheat bread instead of white bread; opt for soba noodles or whole-wheat spaghetti instead of ramen. Add millet , quinoa, pea, chickpea, red bean, mung bean and lotus seeds into our food and beverages, as it can improve the quality of our diet.
Nevertheless, do note that we should not consume coarse grains excessively, especially for individuals who have a weak spleen and stomach, and those with indigestion.

🔴THINGS TO BE AVOIDED DURING RAMADHAN
1. Don't sleep during the day and pray all night. By doing this you are converting the day into night and the night into day, which is not the purpose of fasting.
2. Avoid being lazy and inactive during the day.
3. Don't waste time playing games during the day. Rather, please Allah by increasing in your worship of him.
4. Avoid having Iftar parties. Ramadan wasn't meant to be a food extravaganza.
5. Dont ask your wife to spend Ramadhan in the Kitchen. Eat something light and quick - she isn't Biryani woman.
6. Spend the last 10 days worshipping Allah rather than trying to prepare for Eid! A day that is better than a thousand months is in these last 10 days. You can't afford to miss this.
7. Dont stay awake the full night. Your body has a right over you, and when it wants rest, then rest.
8. Avoid excessive socialising after Taraweeh
9. Avoid shopping a lot in Ramadhan.
10. Dont eat the whole night.
11. Dont loiter around at night other than worshipping Allah.
12. Eid doesnt require loads of preparation. Dont fall into this trap! Keep it simple, and it will be blessed.

♥ Common mistakes in Ramadhan:
1. Drinking
Milkshakes made with syrups etc on a daily basis
- Why: It contains high amounts of sugar, additives and colourants
- Solution: If you have to, drink it twice a week maximum
2. Drinking large amounts of water at iftaar time
- Why: Filling the stomach with water is more strenuous to it than with food.
- Solution: have a few sips at iftaar then a glass after every two hours.
3. Exercising directly after iftaar.
- Why: the body's blood flow is concentrated around the stomach at that time.
- Solution: Exercise after two hours of eating to ease digestion.
4. Chewing and swallowing food fast.
- Why: chewing food slowly can speed up digestion and help maintain your weight
5. Having dessert directly after iftaar
- Why: they make you drowsy and sleepy
- Solution: leave at least a two hour gap between iftaar and dessert to stay fresh and awake for ishaa and taraweeh prayers
6. Consuming foods with high amounts of sodium
- Why: Sodium triggers thirst through out the fasting hours of the day
- Solution: instead, eat foods that are high in potassium, they retain water and supress your thirst.
# Bananas are high in potassium. A banana at Suhoor time can control your thirst level through out the day.
# Best sources of potassium for Suhoor time:
- bananas
- milk
- dates
- avocados
- dried peaches
- pistachios
- pumpkin
- peas
- dark chocolate
# Worst choices for Suhoor:
- biryani
- kebab
- pizza
- fast food in general
- cheese
- haleem
# Best choices for Suhoor:
- potato
- rice
- dates
- whole grain bread
- banana
# Drinking lots of water at suhoor is important, but not as much as drinking it through out your non-fasting hours.

きょうはコッペパンを焼きました。
外で食べる予定でサンドイッチにしました。
動画には出ていませんが、餡バターもサンドしました。
どれも良き♡
しかーーーーし、あいにくの雨模様。
ってことでお昼のランチで家の中で食べました。
野菜サンドは玉ねぎドレシングがいいアクセントになって絶品!
新玉ねぎならではじゃっ。
しゃきしゃきレタスやトマトのアイコもさいこー。
今どきの野菜って深い。

【Ingredients】6 Bread rolls
★160g Bread flour
★40g Cake flour
★12g Sugar
★3g Salt
★6g Non-Fat Dry Milk Powder
●135g Milk
●3g Dry yeast
15g Unsalted butter(room temperature)
*The best milk temperature for the dough: About 30℃ for spring and autumn. About 10℃ for summer, and about 40-45℃ for winter.
-Egg Sandwich-
Boiled egg
Apple(diced)
Japanese mayonnaise
salt pepper
Shiso leaves
-Vienna sausage Sandwich-
Vienna sausage(soy sauce seasoned)
whole-grain mustard
lettuce
Japanese mayonnaise
-Vegetables Sandwich-
Broccoli sprouts
Cherry tomato
cucumber(salad dressing)
Red radish
-Prosciutto Sandwich-
Prosciutto
Cream cheese
Purple cabbage
*Salted butter
【Directions】
①Combine milk and dry yeast.
②Combine the dry ingredients (★)and mix together with a whisk.
③Add ①and mix.
④Put it on the table and knead. (10mins)
⑤Add butter and knead more. (5mins)
⑥Make it round, then leave it at a warm place until it gets twice as bigger. (primary fermentation)
⑦Degas the dough from ⑥, divide it into 6 pieces and make them round.
⑧Cover them with a wet cloth and leave them for 15 mins. (bench time)
⑨Roll the dough out with a rolling pin about 10 wide x 15 cm long. Roll the long sides of the dough in towards the center and fold in.
⑩Fold the dough in half, seal closed and flip it over. Place on a baking sheet lined with parchment paper and leave it at a warm place until they get twice as bigger. (secondary fermentation)
⑪Bake it in the preheated oven (190°C) for about 14 mins.
When the tops are browned they're good to go!
⑫ Place it on a wire rack to cool.
*Baking time will vary according to your oven so please adjust accordingly.
*Be careful not to let the dough dry out when you are letting it rise or rest.
*If you don't seal the seams securely closed, they'll come apart during the 2nd rising.

ゆで卵

ウィンナー(オリーブオイルで焼いて醤油味付け)
粒マスタード

-Vegetables Sandwich-
ブロッコリースプラウト
プチトマト
ラディッシュ
-Prosciutto Sandwich-
生ハム
クリームチーズ
紫キャベツ
*有塩バター
【作り方】
①牛乳とドライイーストを混ぜる。
②ボウルに材料(★)を入れて泡立て器で混ぜる。
③①を粉の中央に加えて混ぜる。
④テーブルの上に置きこねる。 (約10分)
⑤バターを加えてさらにこねる。 (約5分)
生地にツヤが出たらok。
⑥丸めて、2倍になるまで暖かいところに置く。(一次発酵)
⑦生地のガスを抜き、6つに分けて丸める。
⑧濡れた布巾などを被せて、15分間置く。 (ベンチタイム)
⑨生地をガス抜き麺棒で幅10×長さ15 cmの大きさにする。
中央に向かって折り、折り返す。
⑩生地を二つ折りにして、しっかりと綴じる。(ここでしっかり綴じないと二次発酵後に外れてきてしまいます)綴じ目下にして、天板に並べ、2倍になるまで暖かいところに置いておく。 (二次発酵)
⑪190℃に温めたオーブンで14分焼く。
こんがり焼き色がつけばok!
⑫ワイヤーラックの上に置いて冷ます。
*焼く時間はオーブンによって異なりますので、それに応じて調整してください。
*発酵中やベンチタイム、成形時は生地が乾燥しないよう気を付けて下さい。(乾燥するとパンが膨らみません、手早くやること、濡れ布巾などを被せるのも乾燥を防いでくれます)

Instead of using boneless pork chops, I used thinly sliced pork! In this way, you don't have to pound the meat to tenderize ;D

Difficulty: Easy
Time: 25min
Number of servings: 2
Ingredients:
((Tonkatsu))
8 thinly sliced pork
salt and ground black pepper
* flour
* beaten egg
* Panko (bread crumbs)
vegetable oil for deep frying
((Katsu Sando))
2 Tonkatsu
4 slices of bread
butter
whole-grain mustard
shredded cabbage
Tonkatsu sauce
Directions:
((Tonkatsu))
1. Layer 4 slices of pork to make 1 Tonkatsu and season both sides with salt and pepper.
2. Flour the pork lightly, dip in beaten egg, then coat with Panko. Use one hand for coating flour and Panko, and use the other to dip in egg to keep one of your hands dry.
3. Deep fry them in oil at 170C (340F) until thoroughly cooked golden brown. (Turn the pork over to cook evenly.) Remove the Tonkatsu from the oil and drain.
((Katsu Sando))
1. Brush one side of 4 slices of bread with butter. Brush one side of 2 slices of bread with whole-grain mustard. (You can toast the bread if you like.)
2. Sandwich the Tonkatsu with shredded cabbage and tonkatsu sauce.
3. Cut into 2-3 pieces. You can cut off the crusts if you prefer. Mostly the crusts are off when sold at stores in Japan.
