一早起來 York 就趕快把還在解凍的火雞泡在水裡💧 原因是一公斤的火雞需要13小時解凍,代表 4.5KG需要 兩天半的時間😅 我們完全低估了解凍的時間,搞到中午十二點才開始準備火雞🕛

How's Christmas everyone?🎄 For those who followed my IG & FB stories, you must've been bombarded with my turkey videos😛
York woke up early in the morning & started cooking turkey🦃 Did you know 1Kg of turkey requires 13 hours of defrosting?❄️ Meaning our 4.5KG turkey should've been placed in fridge 2.5 days ago😅 Luckily we could still put the stuffing in before the dinner at 6pm🕕

A Christmas party is never complete without roast turkey. We stuffed ours with aromatics and roasted it with herb butter spread under the skin, keeping it moist and full of flavour. Paired with the savoury yet sweet tasting stuffing made from Italian sausages, apples and sage.
Then with extra bits from the turkey, we made our own gravy, which is a good change from the usual packet ones!
Rather than eating out this Christmas, Why Not try roasting your own turkey for your family and friends!

【聖誕輕鬆煮: 簡易法式火雞料理 🇫🇷】
藝人黃芷晴 (Adrian) 為準備聖誕大餐,找來法國菜烹飪導師 Rene 以 city'super 英國有機火雞,炮製出充滿法式風味的簡易火雞料理。趕快收藏以下食譜,為聖誕派對作好準備!

#材料:
▫ 英國冰鮮有機火雞 1隻
.
#餡料:
▫ 免治豬肉 500克
▫ 方包 500克 (浸於牛奶內10分鐘)
▫ 牛奶 1-2杯
▫ 雞蛋 2隻
▫ 迷迭香、百里香、芫荽
▫ 蘑菇 250克 (切粒)
▫ 洋蔥 1個 (切粒)
▫ 蒜頭
▫ 紅椒粉
▫ 鹽及黑椒

#配菜:
▫ 薯仔
▫ 車厘茄
▫ 法國豆
▫ 迷迭香、百里香、芫荽
▫ 紅蔥頭
▫ 牛油
.
#火雞醬﹕
▫ 波特酒 1杯
▫ 鵝肝 100克
▫ 火雞肉汁 (入焗爐後備用)
.
#步驟﹕
1. 每2公斤的火雞須放置雪櫃24小時解凍
2. 將餡料材料放入攪拌器內打碎並釀入火雞
3. 於火雞表面塗上牛油,以鹽和黑椒調味
4. 將火雞及切片洋蔥等放進焗爐 (不需要預熱焗爐)
160°C 30分鐘 > 180°C 2小時 > 170°C 1小時
5. 烤焗後將火雞閒置30分鐘
6. 從托盤上取出肉汁,去除油分
7. 將肉汁轉至小鍋,加入波特酒,以小火加熱10分鐘
8. 加入鵝肝,以攪拌器攪勻

#配菜﹕
1. 馬鈴薯以橄欖油及牛油煎香
2. 車厘茄加入糖、橄欖油、鹽及胡椒調味
3. 法國豆煮10分鐘,置於冰水備用
4. 將配菜加入火雞擺盤
.

【Carefree Christmas Recipe: Easy steps for French-style Turkey 🇫🇷】
Chef Rene shows artist Adrian Wong a French-style Easy Turkey Recipe: check out the video for tips on how to prepare British Daylesford Organic Chilled Turkey the French way.

📌 Ingredients:
▫ UK Daylesford Chilled Organic Turkey 1pc
.
📌 For stuffing:
▫ Minced pork 500g
▫ Bread 500g (soak into milk for 10 mins)
▫ Milk 1-2 glasses
▫ Whole eggs 2pcs
▫ Fresh rosemary, thyme, parsley
▫ Mushrooms 250g (cut into small pieces)
▫ Onion 1 (cut into small pieces)
▫ Garlic
▫ Paprika
▫ Salt & pepper
.
📌 For garnish:
▫ Baby potatoes
▫ Cherry tomatoes
▫ French Beans
▫ Fresh rosemary, thyme, parsley
▫ Butter
.
📌 For the turkey sauce:
▫ Port 1 glass
▫ Foie gras 100g
▫ Juice from baked turkey
.
📌 Steps:
1. Put it in refrigerator for 24 hours for every 2kg of turkey to thaw
2. Blend all stuffing ingredients and stuff turkey.
3. Butter the turkey and season with salt and pepper.
4. Bake the turkey and slice onion, starting with cold oven:
160°C for 30 mins > 180°C for 2 hours > 170°C for 1 hour
5. Leave the turkey to rest, covered with foil for 30 mins.
6. Pour the fat off the juices from the roasting tin.
7. Add to the pan, then add port wine and boil for 10 mins in low heat.
8. Add foie gras and blend together.

📌 The Garnishes:
1. Pan-fry potatoes with olive oil and butter.
2. Tomatoes with sugar, olive oil and salt and pepper.
(bake in oven at 140°C for 10-15 mins).
3. French beans poached for 10 mins, then immersed in ice water.
4. Keep garnish for the presentation when turkey ready.

Christmases are always special. The gifting, the presents, the jollymaking, the celebrations... and the presents again. (presents are awesome kay!) :)
And oh yes, there's always the food and feasting on Christmas celebrations - which is why we have something to share that's not your usual turkey or ham... too predictable, so nahhhh.
So we present to you our christmas roast with an asian twist - Roast Lamb with Saffron Rice!
It's great for meat lovers, but the taste of the rice immersed with the oils of the roast while roasting is simply legendary, no kidding, one of the most flavourful rice dishes we've tasted hands down. Preparation does take a fair bit of time though, so be patient, rough it out for that Christmas feast, and you'll have a yummy & jolly good time feasting on this dish fit for a party!
