?粉絲蝦煲 重點?
1, 做蝦煲,最好就用大隻蝦, 急凍蝦
都ok,太細隻冇口感唔好食
2, 做蝦煲,落沙茶醬最好,加入菠蘿
粒,提升粉絲蝦煲靈魂,香氣四射
3, 清水浸粉絲,無需太耐,稍為軟身
就可以放落煲內索蝦汁
材料:
急凍大蝦 8隻
綠豆粉絲 300克
菠蘿粒 150克
薑 5片
蒜頭 5粒
調味料:
沙茶醬 1湯匙
生抽 1湯匙
雞汁 1湯匙
糖 1湯匙
鮑魚汁 1湯匙
生粉 1 湯匙
處理:
1. 剪去蝦的頭尖出的部分及腳,洗淨,擎乾水。
2. 洗淨粉絲,浸水至軟身,擎乾水。
3,菠蘿切粒、薑切片、蒜頭去皮,芫荽切碎。
烹調:
1. 放2湯匙油落鑊。
2. 爆香薑片及蒜頭。
3. 在蝦上放1湯匙生粉,攪勻,落鑊煎香,兜炒一下。
4. 收慢火,加入所有調味料及500毫升。
5. 開大火,加入粉絲,盡量放底部索汁,蝦放在上面。
6. 冚蓋2分鐘至收汁,將菠蘿落鑊,攪勻,熄火,放上芫荽碎,完成。
Ingredients:
Frozen prawn 8 pcs
Green bean 300g
vermicelli
Pineapple slices 150g
Ginger 5 slices
Garlic 5 mos
Seasoning:
Satay sauce 1 tbsp
Light soya sauce 1 tbsp
Chicken sauce 1 tbsp
Sugar 1 tbsp
Abalone sauce 1 tbsp
Tapioca starch 1 tbsp
Preparation:
1. Cut the sharp ends of shrimp head and its claws, rinse and hang dry.
2. Soak the rice vermicelli until it it soft, hang dry.
3,Dice the pineapple, slice ginger, peel off garlics, shred the coriander.
Steps:
1. Put 2 tbsp oil into pot.
2. Fry ginger slices and garlics.
3. Put 1 tbsp tapioca starch on top of shrimps, mix well, fry on pot, stir well.
4. Turn to low flame, put all seasonings and 500ml water.
5. Turn to high flame, put rice vermicelli, at the bottom of the shrimps to absorb the sauce.
6. Put the lid shut for 2 minutes until only little sauce left at the bottom. Put pineapples in the pot, stir well, turn off the fire, put the coriander on top, serve.

This is one of our must-order dishes whenever we dine at a Thai restaurant. After learning how to cook this from Roland, I'm not so sure if I will still order this dish at all because it's SO EASY to make and it's equally yummy with this recipe. You must must must must try this. This is a really simple recipe, I know I say that all the time but THIS IS REALLY SIMPLE. Really!!

Ingredients:
Serves 3 - 4 pax (if you're having this as a full meal)
Serves about 6 pax (if you're having this as one of the dishes)
300ml of water
0.5 teaspoon of chicken stock powder
1 teaspoon of sugar
2 tablespoons of fish sauce
3 tablespoons of oyster sauce
1 tablespoon of dark soya sauce
1 tablespoon of sesame oil
300g of prawns with shell on but deveined
150g of glass noodles (tang hoon)
40g of ginger - sliced
1 bulb of garlic - lightly smashed with skin off
4 stalks of Chinese parsley root - lightly smashed
0.5 tablespoon of grounded white pepper
0.5 tablespoon of grounded black pepper
1 stalk of spring onion and some Chinese parsley
