Wantan Mee Kicap
Bahan² Mi Wantan Kicap:
Mi Wantan - ( dicelur & letakkan sedikit minyak untuk x melekat )
Sos Tiram
Kicap
Minyak Bijan
Cara²nya :
Satukan kesemua bahan ( Sos Tiram, Kicap, Minyak Bijan ) di dalam bekas. Kemudian, masukkan Mi Wantan yang telah dicelur ke dalam bekas yang berisi bahan² kicap tadi. Gaul rata sehingga semua sebati & kicap meresap elok ke dalam Mi Wantan tadi.
Bahan² sampingan :
Sawi / Pak Choy - dicelur seketika
Cendawan Shitake Kering - direndam dalam air panas sehingga lembut. Toskan lebihan air
Bahan² untuk inti Dumpling :
Isi Ayam / Isi Udang
Cendawan Shitake Kering - direndam dengan air panas, toskan lebihan air.
Daun Bawang
Lobak Merah - ( dipotong dadu kecil² )
Bawang Merah/Bawang Holland - ( dipotong dadu kecil² )
Lada Sulah
Sos Tiram
Garam
Kiub Ayam / Stok Ayam
Tepung
Cara²nya :
Kisar halus isi ayam/isi udang dengan cendawan shitake kering yang telah direndam tadi. ( Kalau nak senang, kisar sekali dengan isi ayam/isi udang tapi kalau x potong dadu kecil² ) bersama sedikit garam, sos tiram, lada sulah, kiub ayam/stok ayam.
Kemudian masukkan lobak merah, daun bawang serta bawang yang telah dipotong tadi serta sedikit tepung. Gaul rata untuk pastikan semuanya sekata.
P/S : Pastikan inti dumpling xpenuh sangat sebab kulit dumpling mudah terkoyak. Gunakan 1 sudu kecil je untuk letak inti tu. Lekatkan kulit dumpling tu gunakan air & tekan sedikit untuk padatkan dan kemaskan inti di dalam kulit dumpling tersebut. Kemudian, boleh kukus dalam 20 minit.
Bahan² untuk Sup Dumpling :
Kiub Ayam/Stok Ayam
Air
Kobis Cina panjang ( jika suka )
Dumpling - ( yang telah dikukus )
Daun Bawang
Bawang Goreng
Cara²nya :
Masukkan air, kiub ayam/stok ayam, kobis panjang ( jika suka ) dan dumpling yang telah dikukus tadi. Renehkan seketika sehingga mendidih dan boleh dihidangkan dengan taburan daun bawang serta bawang goreng.
Nota :
Untuk menambahkan kesedapan Wantan Mee Kicap, boleh sediakan kicap cili potong dengan Minyak Bawang Putih. Memang terangkat.

Soy Sauce with soy sauce
Friends noodles with soy sauce:
Wonton Noodles - (Blanched & put some oil to not stick)
Oyster sauce
Soy Sauce Soy Sauce Soy Sauce Soy Sauce Soy Sauce Soy
Sesame Oil
Turf:
Unite all ingredients (Oyster Sauce, soy sauce, Sesame Oil) in the container. Then put in the wonton noodles that have been put into the container that contains friends soy sauce just now. Flat Gaul until all mixed and soy sauce absorbed into the wonton noodles just now.
Side Friends:
Mustard / pak choy - blanched for a while
Dry Shiitake Mushroom - soaked in hot water to soft. Throw the extra water
Material for Dumpling core:
Chicken filling / shrimp filling
Dry Shitake Mushitake - soaked with hot water, toskan excess water.
Onion leaves
Carrot - (cut dice)
Red Onion / Holland onion - (chopped dice)
Sulah pepper
Oyster sauce
Salt
Chicken Cubes / chicken stock
Flour
Turf:
A Fine Blend of chicken / shrimp filling with dried fermented mushrooms that were soaked just now. (if you want to be easy, grind together with chicken filling / shrimp filling but if you don't cut the dice dice) with a little salt, oyster sauce, sulah pepper, chicken cubes / chicken stock.
Then put in the carrot, onion leaves and onions that were cut just now and some flour. Flat Gaul to make sure it's all uniform.
P / S: Make sure the core of dumpling xfull because dumpling skin is easily torn apart. Use 1 small sudu for the core. Stick the dumpling skin use water & press a little to solid and pack the core inside the dumpling skin. Then, can steamed in 20 minutes.
Material for Dumpling Soup:
Chicken Cubes / chicken stock
Water
Long Chinese cabbage (if like)
Dumpling - (steamed)
Onion leaves
Fried onions
Turf:
Insert Water, chicken cubes / chicken stock, long cabbage (if like) and dumplings that were steamed just now. Heat for a while until boiling and can be served with onion leaves and fried onions.
Note:
To add the deliciousness of wonton soy sauce noodles, you can prepare chili sauce with garlic oil. Definitely lifted.

Teochew fish soup is widely available in Singapore. You can get it in most food courts and coffeeshops. If you can find a fish soup stall, most likely they will have the option of fish porridge too. Teochew fish porridge is simply rice soaked in a bowl of fish soup. If you don't like rice, you can replace it with thick or thin vermicelli or any other types of noodles.

Ingredients for soup stock - boil for 45 mins

2L of water (please add more soup if the water dries up slightly after you have added the rice)
0.5 kg of chicken feet - blanched
150g of ikan bilis - washed
2 tablespoons of dried shrimps - soaked till soft
1 dried sole fish - dry roasted
Marinade for the fish

500g of mackerel
1 teaspoon of salt
A few dashes of white pepper
2 teaspoons of cornflour
Other ingredients
---
Optional: 1 whole piece of dried cuttlefish - cut into stripes & shallow fry until crispy
Optional: 2 bulbs of garlic - chopped and shallow fry until light golden brown - both oil and garlic to be used to enhance the flavour of the dish
1.5 cups of cooked Jasmine rice
1 thumb size ginger - julienne
2 tablespoons of fish sauce

Bak chor mee or minced pork noodles is a popular lunch or dinner choice in Singapore. Although this bowl of noodles seems rather simple, it has wowed the palates of the World Street Food Congress judges in 2017. 14 dishes from Singapore were voted as part of the top 50 dishes from around the world and Bak Chor Mee is one of them. Woohooz! You can get both soup and dry version in Singapore. The dry version is simply noodles tossed with some sambal chilli as well as vinegar and other contiments. In this video, Roland cooked the soup version inspired by our favourite Bak Chor Mee stall in Singapore located at Blk 85 Fengshan Market (Bedok North).

For soup stock - boil & simmer for 2 hours

3 pieces of pork bones - blanched
300g of ikan bilis (dried anchovies) (toast at 180C for 30mins)
5L of water
3 pieces of dried sole fish (air-fried or toasted)
12g of rock sugar
2 teaspoons of salt
For wontons
-----
about 30 pieces of wonton skin
250g of minced streaky pork
2 tablespoons of low sodium light soy sauce
1 tablespoon of sesame oil
1/2 tablespoon of dried sole fish powder
A few dashes of grounded white pepper
For the minced meat (to be added to the soup)

500g of minced streaky pork
A few dashes of grounded white pepper
2 tablespoons of low sodium light soy sauce
1/3 cup of water
For crispy lard & lard oil

Ingredients
1 portion of thin egg noodles
Sauce for noodles:
1 teaspoon of chilli paste (optional)
1 teaspoon of light soy sauce
1/2 teaspoon of sesame seed oil
2 teaspoons of kechap manis (indonesian sweet soy sauce)
1/2 teaspoon of sugar
3 teaspoons of dark soy sauce (we added 4 teaspoons)
1 teaspoon of oyster sauce
1/2 teaspoon of pork lard oil
dashes of pepper to taste
