Yung Kee Restaurant’s (鏞記) double boiled winter melon soup (in melon bowl ) retains the charm of the good old times. Using pure frog broth as soup base, it is clear and fragrant, genuinely thirst quenching and relieves summer heat.
Ronald Kam, the owner of Yung Kee told me that in the old days, it was very common to use frog broth as a base for this dish. Back then, most people were farmers, hence field frogs were easily found and readily available. It was cheap too. As time went by, as fields diminished, so did field frogs. People turned to using chicken or pork broth instead, so did Yung Kee. For this special edition, Ronald ordered fresh field frogs to make broth. I was never a big fan of double boiled winter melon soup. I found it tacky – the subtle taste of winter melon often overpowered by the flavour of meat and ham. Yung Kee’s version in pure frog broth proved how ignorant I was. The soup was a breath of fresh air. I finally understood the origin beauty of this dish!
鏞記還原了舊時代冬瓜盅有氣質的味道——用純田雞湯做湯底,得出清澄芳馨的效果,喝罷真正消暑生津。
鏞記老闆禮哥說,在舊時代,田雞湯做冬瓜盅湯底很普及,一來務農社會,田雞是個唾手可得的食材,二來廉價。但隨著時代變遷,田雞隨著田地一併漸漸消失,純田雞湯底去做冬瓜盅反而難,便開始用上湯來做此菜。鏞記也一樣,平常他們賣的冬瓜盅,是上湯兑二湯來做湯底,此次的特別版,禮哥特地訂新鮮田雞來做湯底。我從來都不特別喜歡吃冬瓜盅,總覺得上湯味裡頭的肉味、火腿味的濃帶三分俗氣,有點偏差的冬瓜盅的原意,這個純田雞湯底的冬瓜盅,如此清麗馨美,我真是孤陋寡聞,吃到了這個「消失中」的版本,才理解冬瓜盅絕妙的美!

【擺脫水腫人生】有甚麼食物容易令你水腫?

慎防跌入水腫陷阱
不少人聞水腫而色變,有人更因為怕水腫而少喝水,其實如果飲水不夠,未能把體內積聚的鹽份排出,反而令水腫問題更嚴重。導致水腫的原因眾多,原來日常飲食中更有不少水腫陷阱,你又知道多少呢?
1. 食太鹹會水腫,多吃甜也容易水腫
很多人都知道吃得太鹹會容易出現水腫,因為鹽含有鈉質,鈉質會將水分留在體內而造成水腫。而從中醫角度來看,多吃甜食會損傷脾胃功能,水液因為「脾失健運」導致滯留體內形成水腫。
2. 遠離生冷食物
生冷食物是指未煮過或溫度低於室溫的食物,中醫理論認為生冷食物會耗損陽氣,妨礙脾胃運化,令水濕滯留體內形成水腫。
3. 小心高鈉湯底
湯粉麵是不少人的主食選擇,不少看似清澈的清湯湯底,其實暗藏不少鹽份和味精,鈉質含量甚高,所以想吃得健康就記著少喝湯。
4. 小心醬汁、加工、罐頭食物
加工食物如香腸、火腿、魚肉燒賣、丸類食物,現成醬汁如沙茶醬、咖喱醬等,在製作過程中加入不少鹽份和味精,罐頭食物亦一樣,鈉質含量高之餘更含有不少添加劑,多吃亦會增加水腫的可能。而從中醫角度來看,重口味食物會加重脾胃負擔,令水濕停滯於體內造成水腫。
5. 慎選涼果蜜餞
涼果和蜜餞味道酸酸甜甜的,吃下去很開胃,有不少都是由水果製造的,應該健康吧?然而涼果的製作過程中會加入大量鹽醃製,鈉含量極高,為了令味道豐富又會加入不少糖份,想遠離水腫還是少碰為妙。

Don't fall into edema traps
Some people drink less water to prevent edema. This however leads to lack of water in the body, and the body cannot properly discharge accumulated sodium, which worsens edema. There are many causes of edema, and there are many edema traps in a daily diet. How much do you know?
1. Overly salty diet or eating too much sweets
Many people know that eating too salty will easily cause edema as the salt contains sodium, and sodium leaves fluid in the body that leads to edema. From the point of view of Chinese medicine, eating too much sweet foods will damage the spleen and stomach function. When the spleen is not functioning accordingly, the fluid naturally retains in the body and causes edema.
2. Cold/raw food
Cold/raw food refers to uncooked food or food below room temperature. Chinese medicine believes that cold/raw cold food will consume yang qi then hinder the transportation of spleen and stomach. The fluid naturally retains in the body and causes edema.
3. Soups that are high in sodium
Noodles with soup is a common meal choice. The soup base actually contains a lot of salt and MSG, an the sodium content is very high, so if you want to eat healthy, remember to drink less soup.
4. Sauces, processed, canned food
Processed foods such as sausages, ham, fish meat siu mai, and meatball, ready-made sauces such as shacha sauce, curry paste, etc., have a lot of salt and MSG in the production process. Canned foods are the same- high in sodium content and contain many additives. Eating too much will lead to edema. From the point of view of Chinese medicine, thick sauced food will increase the burden on the spleen and stomach, causing fluid to stagnate in the body and cause edema.
5. Preserved fruit
Preserved fruit tastes sour and sweet, and it is very appetizing to eat. Many of them are made of fruits. Sounds healthy? However, a large amount of salt is used during production. The sodium content is very high. In order to enrich the taste, a lot of sugar is also added. It is better to stay away from the preserved fruit to prevent edema.

Somen is perfect refreshing food for hot and humid summer season :)
Sōmen (素麺) is very thin Japanese noodles made of wheat flour. The noodles are usually served cold in summer with a dashi flavored tasty dipping sauce called Mentsuyu (めんつゆ).
Kids requested me to make Edamame and Corn Nagashi Somen (Flowing Somen). Edamame and corn were pretty easy to catch and eat 😉 Kids enjoyed it very much 👍

Dilute with water as instructed on its package.
((Somen Noodles))
Boil water in a large pot. Add dried Somen noodles in boiling water and gently stir noodles with chopsticks. Cook Somen noodles according to your package (mine was 2 min). Drain the noodles in a strainer and rinse the noodles with hands under running water.
NOTE: You can put about 100g (usually 2 bundles) of Somen noodles in the machine or the noodles won't flow.
((Somen Dipping Sauce from scratch))
* 300ml Dashi broth (using packaged dashi powder saves time)
* 4 tbsp. Mirin (sweet Sake)
* 4 tbsp. soy sauce
In a pot, bring Dashi broth, Mirin, and soy sauce to a boil. You can also microwave until it comes to a boil. Cool in the fridge until ready to serve.

Many of the best ingredients are in this dish, perfect for your Chinese New Year dinner. The original would have at least 20 or even 30 ingredients and takes 2 to 3 days to prepare even. We have came out with our own simplified version that you can make in just under 3 hours.
The soup base of our dish is made using Heinz chicken broth with Jinhua Ham and chicken essence for the herbal note. Steamed together with chicken, dried scallops (important to use the large ones), sea cucumber, baby abalone and other ingredients make for a complete dish with meat, seafood and vegetables all in one pot.
