Abalone and Oyster Phoenix Rolls
Ingredients:
3 pcs Chicken drumstick
100 gm Korean dried oyster
8 pcs Braised abalone
1 whole Spinach (cooked)
200 gm Broccoli
Braised Oysters' Ingredients:
15 gm Ginger
15 gm Spring onion
Seasoning:
300 gm Chicken broth
1 tbs MAGGI® Oyster Sauce
1 tsp MAGGI® Chicken Stock
1/2 tsp Sugar
1/2 tsp Dark soy sauce
Additional Material
1 sheet Aluminum foil
Marinade:
1/2 tsp Salt
1/2 tsp MAGGI® Chicken Stock
Preparation method:
1. Place the marinated chicken drumsticks together with the oysters and spinach onto the aluminum foil and roll it tightly to form a chicken roll. Steam and set aside.
2. Blanch the broccoli. Then, lightly season and sauté the broccoli. Plate it and set it aside.
3. Bring the seasoning to a boil, add abalone in and cook through. Thicken it with cornstarch and arrange neatly on the broccoli.
4. Remove the chicken from the aluminum foil, dip it into tapioca our and deep fry until golden brown. Slice and place the chicken rolls on the platter. Ready to serve.

椒絲腐乳芥蘭炒鮮魷
芥蘭 1 斤
魷魚 1 隻
紅尖椒絲 ½ 條
腐乳 3 磚
紹興酒 1 湯匙
胡椒粉 ½ 茶匙
糖 1 茶匙
薑片 3 片
蒜蓉 1 湯匙
1. 魷魚去除軟骨墨囊,洗淨後切成兩片,?花後切件。加入紹興酒和胡椒粉醃5分鐘後汆水,撈起備用。
2. 中火熱鑊加油,爆香薑、蒜蓉、紅尖椒絲和腐乳,放入芥蘭炒至軟身。
3. 加入鮮魷炒勻,加入糖調味即可上碟。
Stir-fried Kai Lan and Squid with Fermented Bean Curd
0.6 kg Chinese Broccoli/ Kai Lan
1 Squid
½ Red pepper (cut into 1cm strip)
3 bricks Fermented bean curd
1 tbsp Shaoxing wine
½ tsp Pepper
1 tsp Sugar
3 slices Ginger
1 tbsp minced Garlic
1. Remove cartilage ink sac from squid, wash and cut into pieces. Make cross silts (X) cut on the squid (but not cut through). Add Shaoxing wine and pepper, marinate squid pieces for 5 minutes. Blanch marinated squid pieces in boiling water, drain and set aside.
2. Heat a wok over medium heat, add oil, sauté ginger, minced garlic, shredded red hot pepper and fermented bean curd, add Kai Lan and stir fry until soft.
3. Add blanched squid pieces and stir-fry, add sugar to taste and serve.
